Grilled BBQ Pork Potato Packets

These BBQ Pork Potato Foil Packets are perfect for the campfire or on a grill! Seasoned potatoes topped with pulled pork, cheese and bacon!

I’m a huge fan of foil packet meals like these BBQ Pork Potato Foil Packets. Especially this time of year when it is crazy hot and the last thing I want to do is turn on the stove or oven and heat up my house! So, I come up with a lot of fun summer meal recipes to make on the grill. CAN I MAKE THESE IN THE OVEN?

Absolutely! Just preheat your oven to 400f degrees. Place the packets on a baking tray and cook for about 20 minutes until the potatoes are fork tender.

INGREDIENTS NEEDED: (FULL RECIPE AT THE BOTTOM OF THE POST)

  • baby gold potatoes
  • pepper
  • salted butter
  • shredded pork bbq
  • cheddar cheese
  • crumbled, cooked bacon
  • green onions
  • heavy duty aluminum foil

HOW TO MAKE GRILLED BBQ POTATO FOIL PACKS:

Preheat the grill to 400f degrees. Slice Boomer Gold potatoes in half.

Spray a large sheet of aluminum foil with nonstick cooking spray. Place 1 cup of sliced potatoes on top of aluminum foil. Season potatoes with 1 teaspoon garlic salt and pepper (to taste.) Dot one tablespoon butter on top of potatoes.

Next, dollop about 1/2 cup of shredded pork BBQ on top of potatoes. Finally, top with 1/4 cup shredded cheddar cheese and about 1/4 cup bacon pieces.

Wrap the packet up by folding in the sides. Continue with the last 3 packets.

Place on the preheated grill and cook for about 20 minutes (until potatoes are fork tender.)

Carefully open the package and dig in! Top with sliced green onions (if desired.)

Ingredients

  • 1.5 pounds baby gold potatoes
  • 4 teaspoons garlic salt
  • pepper, to taste
  • 4 Tablespoons salted butter, sliced into cubes
  • 1 pound (16 ounce) container shredded pork BBQ
  • 2 cups shredded cheddar cheese
  • 1 cup cooked and crumbled bacon
  • ½ cup sliced green onion

Instructions

  • Preheat the grill to 400f degrees. Slice potatoes in half (if they are on the large size, you may want to slice into quarters.)
  • Spray a large sheet of aluminum foil with nonstick cooking spray. Place 1 cup of sliced potatoes on top of aluminum foil.
  • Season potatoes with 1 teaspoon garlic salt and pepper (to taste)
  • Dot one tablespoon butter on top of potatoes.
  • Next, dollop about 1/2 cup of shredded pork BBQ on top of potatoes.
  • Finally, top with 1/4 cup shredded cheddar cheese and 1/4 cup bacon pieces.
