Preheat the grill to 400f degrees. Slice potatoes in half (if they are on the large size, you may want to slice into quarters.)
Spray a large sheet of aluminum foil with nonstick cooking spray. Place 1 cup of sliced potatoes on top of aluminum foil.
Season potatoes with 1 teaspoon garlic salt and pepper (to taste)
Dot one tablespoon butter on top of potatoes.
Next, dollop about 1/2 cup of shredded pork BBQ on top of potatoes.
Finally, top with 1/4 cup shredded cheddar cheese and 1/4 cup bacon pieces.
Wrap the packet up by folding in the sides. Continue with the last 3 packets.
Place on the preheated grill and cook for about 20 minutes (until potatoes are fork tender.)
Carefully open the package and dig in! Top with sliced green onions (if desired.)
Notes
To make in the oven: Preheat oven to 400F degrees. Place the packets on a baking tray and cook for about 20 minutes until the potatoes are fork tender.
