Introducing a new recipe to the air fryer collection! Air Fryer Lemon Herb Potatoes are a delicious and healthy side dish that comes together in a snap. It’s the perfect way to enjoy potatoes without using the oven but still getting the crispy skin. The light pop of flavors from the garlic and herbs and the refreshing tang of lemon juice really make this a tasty side dish that will quickly become a busy weeknight favorite the whole family will love!

How do you wash potatoes?

Washing potatoes is easy and can help remove dirt, pesticides, and other debris. Start by removing any large debris or dirt by hand and then proceed to scrub the potatoes with a vegetable brush under cold running water. Do not use soap of any kind. Be sure to clean the potatoes thoroughly before cooking or eating them. Keep in mind that some potatoes have tougher skins than others so adjust your brushing pressure accordingly. Once the potatoes are clean, rinse them thoroughly and pat dry with a paper towel.

Can I use other potato varieties?

Sure, I think this recipe would work if you wanted to use red potatoes or fingerlings. You may need to adjust the cooking times if you use different types of potatoes.

What kind of Air Fryer did you use?

I used this Cosori 5.8 quart Air Fryer (paid affiliate link), although, I don’t think they make it in white any longer.

Do I have to use the lemon juice?

These are lemon herb potatoes but if you don’t want to add the lemon juice then you certainly don’t have to.

Why aren’t my potatoes done cooking?

Keep in mind that the required cooking time may vary depending on Air Fryer size, make, and model so you may need to adjust the limit to accommodate. Potatoes will be fork tender when done.

Can I make these in the oven?

Could I use different seasoning?

Instead of the thyme you could maybe use a lemon pepper seasoning or just stick with the salt and pepper. You don’t want a super strong seasoning since you are using fresh garlic and lemon in this and you want those flavors to also shine through.

How to store leftover Air Fryer Potatoes?

Store leftovers in an airtight container in the refrigerator for up to 3-5 days.

INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)

  • gold baby potatoes – you could use red potatoes or regular baby potatoes. I suppose you could even cut up a russet potato into big chunks. I have tested this recipe with baby gold potatoes though. Using a different potato may require adjusting the cooking time.
  • olive oil – you can use canola or vegetable oil as well.
  • unsalted butter – if all you have is salted butter, just use that. You may want to adjust the added salt in the recipe.
  • garlic cloves – make sure to use fresh garlic. The jarred garlic won’t do this recipe justice.
  • fresh thyme leaves – If you need to swap this out for dried thyme, you can (about 1/4 teaspoon or to taste)
  • lemon juice – you must use fresh squeezed lemon juice here. The fake, artificial tasting, acidic stuff you buy in the bottle gives too much of a strong flavor and it will throw off the other flavors. Fresh squeezed lemon juice adds a very light and bright flavor.
  • chopped fresh parsley – this is totally optional. I always like to add a bit of green. You could sprinkle on a bit of dried parsley instead.

HOW TO MAKE AIR FRYER LEMON HERB POTATOES

In a bowl, add the potatoes, olive oil, butter, garlic, thyme, salt and pepper. Mix together, making sure all the potatoes get coated.

Optional: Line your air fryer basket with some aluminum foil for easier cleanup later. Spread the potatoes into the bottom of the air fryer.

Set the air fryer temperature to 400F degrees. Cook the potatoes for about 12-15 minutes or until fork tender. You’ll want to shake the basket about halfway through cooking. Once the potatoes have finished cooking, add in the lemon juice and chopped fresh parsley and toss or stir to coat.

Adjust salt and pepper to taste. Serve immediately, enjoy!

Ingredients

  • 1 ½ pounds gold baby potatoes washed and halved
  • 2 Tablespoons olive oil
  • 1 Tablespoon unsalted butter, melted
  • 3 fresh garlic cloves, minced
  • 1 teaspoon fresh thyme leaves, roughly chopped
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • juice of half a lemon
  • 2 teaspoons chopped fresh parsley (or some dried parsley)
