Taco Potatoes

Taco Potatoes are made with diced, golden brown air fried potatoes loaded with seasoned ground beef, shredded cheese, and all your favorite taco toppings! A whole meal in one!

A DELICIOUS 30 MINUTE MEAL

A pile of Taco Potatoes is a pile of pure comfort food! When I tell you everyone loves these, I am not kidding. This really is a whole meal unto itself! It’s easy to make and filling! Who doesn’t love taco and potatoes?! Perfectly fried potatoes piled high with taco flavored ground beef and your favorite taco toppings. It’s a great idea to make on Taco Tuesday when you don’t want the usual tacos. I love how simple it is to make and the fact that it comes together in a half hour!

FREQUENTLY ASKED QUESTIONS: 

What other seasonings can I use for the potatoes?

Keep in mind, these seasonings I used can be used more or less to taste. Other seasoning options you can try are cajun seasoning, Mrs Dash garlic and herb blend, chili powder, paprika or cumin.

Can I make the potatoes in the oven instead?

Yes. To do so:
1. Preheat oven to 400F degrees. Line a baking sheet with parchment paper.
2. Coat the diced potatoes and season them per directions. Place on baking sheet and bake for about 20 minutes. Remove from the oven and stir.
3. Then bake for about another 15 minutes until potatoes are golden brown and/or until fork tender. 

Can I use different potatoes?

Yes, other potatoes would work just as nicely. Red potatoes or even sweet potatoes would be a great choice as well.

Can I make baked potatoes instead?

Sure! I would use my Air Fryer Baked Potato recipe and make the taco meat the same way as I did here. Then add the toppings with the meat once the potatoes are ready.

What to do with leftover Taco Potatoes?

Leftovers should be stored in an airtight container for 3-4 days. Keep them longer in the freezer for up to 3 months. I’d suggest storing without all the toppings if possible. Otherwise, the extra moisture from all the toppings may make the potatoes start to break down faster.

INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)

  • russet potatoes – peeled and diced
  • oil
  • salt, pepper, garlic powder and onion powder – you can use any seasoning you like for the potatoes. Please see my Frequently Asked Questions above for suggestions.
  • ground beef– could be swapped out for ground turkey or ground chicken.
  • packet of taco seasoning– you can use the packet stuff, or you can make your own Homemade Taco Seasoning.
  • water – as called for on the back of the taco seasoning packets.
  • Mexican shredded cheese– plain cheddar cheese can be used or whatever you prefer.
  • optional toppings– I like to serve these with pico de gallo, guacamole, and sour cream.

HOW TO MAKE TACO POTATOES

Coat diced potatoes in oil. Season with salt, pepper, garlic powder, onion powder and mix to make sure all the potatoes are coated. Cook potatoes in air fryer at 400F for 18-20 minutes (shaking basket 2-3 times during cooking). Next, brown and crumble ground beef. Drain excess grease. Add taco seasoning packet and water and cook to packet directions. Remove from heat.

To serve: layer cooked potatoes, topped with seasoned ground beef, then top with shredded cheese and optional taco toppings: pico de gallo, guacamole, sour cream, etc.

Ingredients

  • 2 pounds russet potatoes, peeled and small diced
  • 3-4 Tablespoons oil
  • 1 ½ teaspoons salt
  • ½ teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 pound ground beef
  • 1 packet taco seasoning
  • water (amount called for on the back of the taco seasoning packet)
  • 8 ounce bag Mexican shredded cheese
  • Optional toppings: pico de gallo, guacamole, sour cream guacamole, sour cream

Instructions

  • Coat 2 pounds russet potatoes, peeled and small diced in 3-4 Tablespoons oil.
  • Season potatoes with 1 ½ teaspoons salt, ½ teaspoon pepper, 1 teaspoon garlic powder and 1 teaspoon onion powder and mix to make sure all the potatoes are coated.
  • Cook potatoes in air fryer at 400F for 18-20 minutes (shaking basket 2-3 times during cooking).

  1. besides baking the potatoes or making them in air fryer, which I do not own yet can I fry them. TY Barbara

  2. I made something similar years ago, but without taco seasoning, by necessity when had gestational diabetes. It was delicious & kept my sugars in ‘tolerance’. Think I will try your recipe soon!

    1. Oh wow! I had no idea there was sugar in some taco seasonings? If necessary, I have linked a homemade taco seasoning recipe above if you need to make any adjustments to fit your diet. There’s no sugar in my recipe so you should be good there if it is still a concern. 🙂
