Tex Mex Ranch Potatoes
Tex Mex Ranch Potatoes have just a small handful of ingredients. Potatoes tossed in a taco/ranch sauce, baked and topped with gooey, melted cheese & bacon!
A CHEESY POTATO SIDE DISH
It’s been a while since I’ve shared a side dish on the blog. I am really excited to share this one with you. My family tore this up! I took some baby potatoes and seasoned them with taco seasoning and ranch dressing then covered them in cheese and bacon. Um, yeah. So good! Tender, creamy potatoes with a gooey, cheese topping and crunchy bacon. What’s not to love!

TIPS FOR MAKING TEX-MEX RANCH POTATOES:
- You can use any of your favorite little potatoes: red, gold or white.
- You don’t want the pieces of potato to be too large. You want them all to be about the same size so they cook evenly.
- If you prefer, you can use store bought packaged bacon pieces to save some time.

INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)
- little potatoes
- taco seasoning
- ranch dressing
- shredded cheddar cheese
- cooked bacon
- green onions

Cook’s Note: I used my Homemade Ranch Dressing but your favorite bottled ranch dressing will do here. 🙂
HOW TO MAKE TEX-MEX RANCH POTATOES:
Preheat oven to 350f degrees. In a large bowl, combine ranch dressing, taco seasoning and half the shredded cheddar cheese. Set aside.

Cut potatoes in half (or quarter them if they are a bit larger.)

Add potatoes to bowl with ranch/taco seasoning an stir well until all the potatoes are coated.

Spread potatoes into a 2-quart baking dish (or an 8×8 square baking dish.)

Cover with aluminum foil

Bake for 45 minutes.

Remove foil and stir potatoes well. Return to the oven (uncovered) for another 15 minutes. Remove potatoes and sprinkle with the rest of the shredded cheddar cheese and bacon. The heat from the potatoes should melt the cheese. Or you can stick it under the broiler for a few seconds to melt quickly.

Garnish with sliced green onions and then dig in!
