Creating easy, budget-friendly recipes
I love a good challenge. Especially a food challenge. It really gets my creative juices flowing. I especially love to create recipes that are not only budget-friendly but also need to be easy to make. So when Save-A-Lot approached me about creating an “out of the box” recipe using items that I purchased at my local Save-A-Lot store, I was chomping at the bit. This is what I do all the time and it’s my specialty. This easy Taco Mac and Cheese recipe was just waiting to be made. 😉

Delicious and Affordable
I was able to make this entire meal (including the side dish of the microwaveable steam broccoli pictured below) for less than $8.00 at Save-A-Lot. I got the ground beef at $1.00 off the usual price since it was on special. An entire family of four eating a full meal at less than $8.00 is a real steal these days. And this meal is not only filling but it is absolutely delicious and one your whole family will love! Any leftovers can easily be reheated for lunch the next day!
Out of the box….and into my mouth!
So, in carrying out the theme of “Out of the box” I picked up a box of shells and cheddar along with some taco seasoning and ground beef. We’re just going to take that boxed mac and cheese and notch it up to the next level. I can tell you that my whole family really loved this one. It is definitely going into regular rotation at my house!
1 lb. ground beef
1 packet taco seasoning
2/3 cup water
1 (12 oz) box macaroni and cheese
In a large pot, boil water and prepare boxed macaroni and cheese according to package directions.
In a separate skillet, brown and crumble ground beef. Drain excess grease. Place meat back in skillet and add taco seasoning and water. Keep heat on medium-low and allow mixture to thicken.
When ready, combine taco meat with prepared macaroni and cheese. Stir well.
Y’all, this stuff is so good just like this. Just serve it with a salad and dinner is done!
I’m serving it here with some microwaveable steamed broccoli that I sprinkled with some of the shredded cheese and seasoned with salt and pepper.
If you want to make this meal really majestic – top it with with some sour cream, lettuce, tomatoes and crushed tortillas!

- shredded lettuce
- diced tomatoes
- sour cream
- shredded cheddar jack cheese
