These Oreo Brookie Bars are an irresistible combination of three classic desserts – brownies, chocolate chip cookies and Oreo cookies! With a chocolate chip cookie crust, a luxurious layer of rich, fudgy brownie, and stuffed with Oreos, this dessert is sure to please everyone. The best part? It’s ridiculously easy to make. Trust me, your friends and family won’t be able to resist these delectable bars!

FREQUENTLY ASKED QUESTIONS:

Can I use different flavored Oreos?

This recipe is versatile and can be made with any flavor of Oreos or cookies of your choice. For a fun twist, I recommend trying Thin Mints, Fudge Stripe cookies, or Milanos. You could even go with the Oreo Double Stuft cookies.

Do I have to use the toppings?

These dessert bars are good even without the toppings so you could certainly leave them off.

What brownie mix should I use?

My favorite brownie mix is Duncan Hines. But, you can use whatever brand you have on hand or prefer. You can even use your favorite homemade brownie recipe. Make sure to adjust your oil, eggs, and water if necessary- according to your box directions.

Can I change up the chocolate chip cookie base?

Certainly! This is a great base recipe. You can swap the chocolate chip cookies out for any other cookie dough that you want and that you think will go with the other flavors.

How to store these Brookie Bars?

Store in a sealed container at room temperature for up to 5 days. For the best taste, enjoy these treats at room temperature.

Can I freeze these Oreo Brookie Bars?

Sure can! Here’s how: individually wrap bars in plastic wrap and then foil. Place them in a freezer-safe container or bag and store in the freezer for up to 3 months.
To thaw, leave them on the counter or in the fridge overnight. For the best experience, enjoy them at room temperature.

INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)

  • chocolate chip cookie dough – you can make it from scratch if you like but I am using storebought.
  • Oreo cookies – I just used the standard Oreos but Oreo Double stuft work great here as well.
  • fudge brownie mix – you want to get the brownie mix that says “Family Size for a 9×13”
  • eggs, oil and water – you will be using the amounts given on the back of the brownie mix box. It can vary by brand but go by the amounts provided on the box.
  • melting chocolate wafers – this is just to drizzle on top but you could just use chocolate syrup or skip it.

HOW TO MAKE OREO BROOKIE BARS

Preheat the oven to 350°F. Line a 9×13-inch baking dish with parchment paper with some hanging over the edges of the pan (this will help with removing the brownies later). 

Press the cookie dough into the bottom of the baking dish into an even layer. Note: this will be easier to do if you don’t try to press it in as soon as you remove the dough from the refrigerator. Let it sit out for a few minutes. In a single layer, place the Oreo cookies evenly on top of the cookie dough and gently press it into the cookie dough. Set aside.

In a large bowl, prepare the brownie batter according to package directions (with the eggs, water and vegetable oil).

Pour the prepared brownie batter evenly on top of the Oreo cookies and gently spread it out to make sure it’s covering all the cookies. Next, gently tap the pan on the counter a couple of times to help the brownie batter get in between the Oreo cookies.

Bake for 30 minutes, then loosely cover the baking dish with aluminum foil and bake for an additional 15-20 minutes (until a toothpick inserted comes out clean). Let cool completely.

Using the parchment paper, lift the brookie bars out of the baking dish. Cut into 15 squares. At this point, chop up 10 additional Oreo cookies to use as the topping (note, this is optional) 

Melt the chocolate wafers per the directions on the back of the package; you will need about 1 cup of melted chocolate. Drizzle the melted chocolate onto the top of each brookie bar then immediately sprinkle the top with the crushed Oreo cookies.

Allow the brookie bars to sit for about 20-30 minutes until the melted chocolate has set, then serve.

Ingredients

  • 30 ounce tube store-bought chocolate chip cookie dough
  • 24 Oreo cookies (plus about 10 more for the topping)
  • 1 box fudge brownie mix (get the box that is 'Family Size for 9×13")
  • 2 large eggs
  • 3 Tablespoons water
  • cup vegetable oil
  • melting chocolate wafers for garnish optional

Instructions

  1. OMG – decadent!! Thank you for this recipe! I’m going to be a little piggie and try drizzling on salted caramel syrup or butterscotch vs the chocolate wafer-melt. Wonder how Samoas cookies would be?? With some Rolos placed in the cracks between….or mini PB cups…LOL.
