All day long
I could eat potatoes every day for the rest of my life. Mash 'em, smash 'em, roast 'em, fry them, boil 'em - it doesn't matter. I love me some taters. And you can microwave them! The Little Potato Company makes it easy because they give you the container to microwave them in along with the seasoning. Doesn't get much easier than that!
Cheese and bacon. Bacon and Cheese.
I'm having a little fun with the microwaveable creamer potatoes today. They are the perfect size (no peeling necessary!) and they cook up so creamy and tender that these could be used as a side or party food! If you can't find the microwave little potatoes then just go with any of the Little Potato Company varietals. You may just need to cut them up into smaller chunks.
Ingredients:
2 packages (2 lbs.) Microwave Ready Three Cheese Little Potatoes, halved, divided use
1 tbsp. paprika, divided use
kosher salt & ground black pepper, to taste
2 cloves garlic, minced, divided use
3 c. shredded cheddar, divided use
1 pound bacon, cooked and crumbled, divided use
¼ c. sliced green onions, divided use
sour cream, for serving
Directions:
Line a 6-quart slow cooker with foil and spray with no-stick cooking spray.
This will make clean-up a breeze later!
Add half the potatoes into the bottom of the slow cooker. Season potatoes with the one of the packets of cheese (that came with the Little Potatoes), paprika, salt, pepper and garlic.
Top with half the cheese, garlic, crumbled bacon, and green onions.
Repeat for the second layer: potatoes, cheese seasoning, paprika, salt & pepper, garlic, shredded cheese, bacon & green onions.
Fold foil around potatoes and place lid on the slow cooker.
Cover and cook on low until potatoes are tender, 2 to 3 hours.
Serve with a drizzle of sour cream.

Where do you find those packages of potatoes, I have never seen them before, and the recipe looks so good.
Hi Jill! I am able to get them at Wal-Mart. You'll find them in the produce section with all the other potatoes. Hope that helps!!
Hi, want to make these for Christmas dinner. I found two recipes, only difference is that one says to cook on low for 2-3 hours, the other says cook on high for 5-6 hours. Otherwise recipes are identical. Any advice?
WOW! What an awesome recipe. Throw some cheese and bacon on taters and I'll eat the whole dish full. =) Thanks for sharing another super duper recipe. XO
Woohoo, great recipe! Yummy and easy 🙂 I love potatoes too!
Can't wait to try.
This Little Potato recipe is delicious! I used the regular Little Potatoes instead of the microwave ready ones and it took way longer to cook than the 2-3 hours listed on the recipe. I ended up having to cook on low for 5.5 hours so please adjust accordingly if you choose to use the regular Little Potatoes. I had planned dinner around the timing of this recipe (3 hours) only to find out this dish wasn't anywhere near ready. Everything else was but luckily I had some leftover rice to reheat to serve with the meal. Other than the timing, this recipe is a keeper!
Thanks Henrik! I appreciate you letting me know about the cooking time for the regular Little Potatoes. They are definitely a bit larger than the microwave ones so good to know about the time when using larger potatoes!
Is clean up the only reason why you use the foil?
I had the same question! I cook in my crockpot, alot but, wasn't sure if the foil was just for clean up or any other reason! Hope someone answers soon!! Also, thanks Henrik for cooking with real potatoes!!
Keep posting great stuff Brandie, I love your page!!
I am making these for a potluck...so am doubling it...would I need to double the cook time as well?
