Apple Streusel Muffins

SIMPLE QUICK MUFFIN RECIPE
There’s nothing better than biting into some freshly made Apple Streusel Muffins with little bites of fresh apple in them! These delicious treats only take about a half hour with just a handful of simple ingredients. Using your favorite cinnamon muffin mix, you can make some truly tasty muffins that taste like they are fully homemade. So grab your favorite muffin mix and let’s jazz it up and turn them into spectacular, semi homemade muffins that you will want to make time and time again!

Really any cinnamon muffin mix should work with this recipe, that’s one of the wonderful things. But, if you’re looking for a specific one, this is the boxed mix I used for my muffins.
Don’t worry, it’s simple enough to make. If you need to make your own streusel, try mixing together the following:
2 Tablespoons salted butter, cut into small cubes
¼ cup all-purpose flour
2 Tablespoons packed light brown sugar
¼ teaspoon ground cinnamon
-Cut the butter into the other dry ingredients until small crumbles begin to form.
I suggest using any tart apple for this recipe. I like to use Granny Smith Apples because I have a tree of them in my backyard this time of year but any tart apple will do. Don’t use red apples because they are just too soft and don’t hold up well to baking.
These apple and cinnamon muffins are best when you let the muffins cool completely before adding the glaze and then letting the glaze set before storing them for good. You can place them in an airtight container or big enough bag for a few days and keep them at room temperature. I don’t recommend refrigerating them or they’ll dry out faster. Try not to squish them in the container or bag, and if possible, store in a single layer. Use parchment paper between layers if you must layer them. They can be frozen. Wrap to protect against freezer burn for up to 3 months.

INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)
- cinnamon muffin mix with streusel topping – I just used the Betty Crocker muffin mix from Walmart. See my link above if you’d like to see what the packaging looks like.
- tart green apples – I used Granny Smith but any tart apple that holds up well in baked goods will work here.
- milk – you can also use half and half or heavy cream.
- eggs – if you have the time, allow the eggs to come to room temperature. This really helps them mix in more easily and helps the batter rise more easily.
- salted butter – it might seems strange to use salted butter but it does help cut a bit of the overall sweetness. Having said that, you can certainly use unsalted if you prefer.
- ground cloves or apple pie spice – I have a homemade apple pie spice recipe if you want to try it with this recipe
- powdered sugar – it is also called confectioners sugar.

HOW TO MAKE APPLE STREUSEL MUFFINS
Preheat the oven to 425F degrees. Line a 12 cup muffin tin with cupcake liners or spray with nonstick cooking spray and set aside. In a bowl, mix together the muffin mix, apples, milk, eggs, butter, and cloves. Divide the batter evenly among muffin cups, about half to three-quarters full in each well.

Sprinkle streusel topping (from the box of muffin mix) over each muffin and place in the preheated oven. Cook for 20-25 minutes until the tops are golden brown and spring back to the touch. Remove the muffins from the oven and place on a cooling rack. Whisk the confectioners’ sugar, milk, and vanilla extract in a small mixing bowl until smooth.

Drizzle over the warm muffins and serve immediately.

I notice this recipe uses NO eggs. Is this true, and possible why Jerry’s muffins were crumbly?
Made this last night and we loved it. But I think I did something wrong because it is very crumbly and did not hold together.
