Rustic Apple Cobbler

So, I know some of y'all reading the title of this and thinking, "Really? An Apple Cobbler? In the summer? Isn't that really more of a fall dessert?".  But I promise I have a couple of very good reasons why I am sharing what is considered a typical fall dessert in the summertime. And also, I've come to learn I can enjoy any kind of cobbler year around. This dessert was totally worth turning on the oven in the heat!
For those of you who follow along with me regularly, you might remember that I recently went to Nashville for a Southern Baking Retreat hosted by the good folks at Martha White and White Lily.  While we were there, they gave us a challenge to come up with a recipe using a pouch of Martha White muffin mix in the recipe somehow. And we had an hour and a half to develop a recipe and get it baked.  I'm sure you can imagine the strickened look on my face at this point. I'm sure it was hilarious!  But once I got my wits about me and took some time to think, I decided on a good old-fashioned cobbler.  You just can't go wrong with cobbler, right? 
The photo above and below were of the cobbler that was made at the retreat. I went with the name Rustic Apple Cobbler. It seemed like a fitting name, what do you think?
It ended up being such a fun experience and more importantly I was teamed up with Linda Carman as my sous chef. She was so much fun and I couldn't believe this spokeswoman and amazing cook and baker was chopping my apples! And as a side note, she's a fantastic cheerleader and made me feel confident in my ability to come up with something yummy. And she kept eating the final result which I took as a very good sign that I did something right! Thank you for that Linda!
Anyhow, after I mentioned this apple cobbler on that post, I got quite a few emails about the recipe for the cobbler. I was probably getting several emails over the course of a few weeks. I was overwhelmed and so grateful for that response and I assured everyone that I was going to work hard on recreating it at home so I can get the ingredient measurements just right. While I was at the retreat, I didn't really measure anything and of course, when you have to share a recipe with folks, you kinda need measurements.  So, thank you to everyone who requested this recipe. I just know you are gonna love it! 
Ingredients:
For the filling:
5 cups green apples, peeled and cut into 1"chunks
1/2 cup dried cranberries (optional)
3/4 cup sugar
2 tbsp. flour
1 tsp. ground cinnamon
2 tbsp. butter (cut into small cubes)

For the topping:
1/3 cup butter, melted
1/4 cup chopped pecans (optional)
Note: I'm using large Granny Smith apples here so each large apple yielded about 1 cup chopped.  But if yours are smaller, you'll need to have more to get up to 5 cups needed for this recipe.

Directions:
Preheat oven to 375F degrees. Spray a 9x9 (2 quart) square baking dish with nonstick cooking spray. Combine all your filling ingredients in a large bowl. Give it a good stir. Note: The cranberries are optional in this but they really add a great contrast flavor and they just make it look so pretty. My hubby (who does not like cranberries) ate this up quickly (if that gives you any indication how well they work in this).  
 Pour mixture into prepared baking dish 
Now, for the topping. In a medium bowl, combine the Martha White Apple Cinnamon Muffin Mix with the melted butter.  Stir well. Mixture will be very thick
Drop cobbler topping by the teaspoonfuls over apple mixture. Do your best to dot it evenly all over. But don't worry, it will spread out while baking.
Sprinkle top with chopped pecans. Again, this is optional but it adds a nice little crunch that we really enjoyed. 
 375F degrees for about 40 minutes (until bubbly and topping is golden brown).
Scoop into bowls and serve. If you like, top with some whipped topping or vanilla ice cream.
Want to make it even more decadent? Drizzle with some Smucker's Caramel Sauce!

  3. It's hard to choose what muffin mix I'd try first...for creating a recipe, probably one of the cheesecake flavors; for simple eating I'd probably go with corn muffins or orange cranberry, my personal favorites!

    $5000 would go towards fixing damage that floods have caused in my home. :/

  8. I love making recipes from mixes. I've tried them all............ ALL! My favorite WAS Blackberry, but sadly they don't have it anymore. But my second is Cranberry-Orange. I would use the $5,000 towards the funds for my someday kitchen renovation.

  20. I haven't seen them in my supermarket. but, If I won, I would update my apartment. I'm on disability and I need a new sofa. I would also like to get my dog(who acts as a service animal for me) and who is perhaps the sweetest dog ever on the planet some behavioral lessons so he could qualify and pass the test to become a certify therapy animal. You would absolutely fall in love with this dog if you met him. He would go up to each and everyone of you and greet you but, since he's terrified of dogs he would not qualify.

  37. I like the strawberry cheesecake one, I like to use it similar to your cobbler as a crumble type recipe. I did it with 4 c strawberries, over the srawberries I sprinkled a box of strawberry jello small box, then I poured 1 package of muffin mix over that, topped with cutting up a stick of butter sprinkled evenly across the top, and poured cup and half of water around the edge NOT over muffin mix, baked until the muffin mix was brown and crisp. The water and jello add a creamy texture while the muffin mix is crispy. DELICIOUS.

    $5000 would go toward my son's college tuition, he's a sophmore this year.

  44. I've only used the corn meal muffin mix but I plan on using the apple cinnamon muffin mix to make this delicious looking rustic apple-cobbler. I would donate part of the $5,000 to a couple of needy families in our church & use the remainder for a few minor repairs to our house.

My family falls on them like wolves. :) If I won the $5K, I would use part of it to put a down payment on a desperately needed car and the other part would be used for a desperately needed vacation.   74. I love their blueberry cheesecake mix!!! Very moist. I would spend the $5,000 on my teeth. I had chemotherapy for breast cancer and lost quite a few teeth which apparently is a common side effect. Insurance replaced the main ones for chewing, but not the ones in front as this was considered cosmetic - what???????!!!!!!!

  93. I love the cinnamon sugar. I usually toast and chop pecans or walnuts. depending what I have hand and add it to the muffins. when they're still warm my mom and I will have them with coffee.

I think it is a toss up on what I would use the money for if I won the $5,000.00 between finishing my retirement home we are refurbishing that we bought literally gutted, and having my 6 front teeth replaced as they were knocked out. Long story. But it would be so nice to be able to eat at a restaurant again and not be embarassed to go there. Or even eat and not have to worry about how to bite my food so I can chew it, which is quite difficult. I think probably my teeth would definitely out weigh in this matter. My email is.....   130. My family likes the Apple Cinnamon muffin mix. I hardly ever use it to make traditional muffins though. Instead I use it in my BabyCakes CakePop maker and make little "mini muffins". My boys love them. If I won the $5,000 I would like to use it to take a family vacation. In all reality it would probably be used for bills or car repairs. Thanks for this giveaway.

  132. I add this mix to my pancakes and waffles mix. I use all of the flavores; it give them a little special kick without spending alot :o)
    If I won the contest, I would go grocery shopping. I am tired of frozen fruit and mixes. I would buy some real milk and some fresh fruit. I would also buy some meat other than chicken. I would also go to Bed Bath & Beyond and Hobby Lobby. My kitchen is full of pieces from garage sales. I would buy a set of dishes, utensils and pots.

  178. Blueberry definitely!!! My family and I can never get enough of it! I would use the money for support...i am supposed to have surgery on my back, but where I work does not have short term disability. I can't afford to take off for the surgery with no income for a few months. I have put the surgery off for years, but I am at the end of putting it off with no answer in sight! I am only 35, but they say I have the back of a 70 plus year old.:( Any left over would take my kiddos on vacation, we weren't able to do that this year! My kiddos are great and deserve a treat!

  184. I love your website! So many delicious recipes I've gotten here make you a go-to place when I need something for any occasion. I have tried the Marth White Blueberry & Banana Muffin mixes in the past and loved the convenience and flavor of them. Very fast and easy and great results!! I'd love to try the Cinnamon Sugar kind and perhaps one of the chocolate varieties in the future. (How do I get my grocery to stock more varieties?) If I won the money, I'd like to take a vacation with my husband. We recently made it to our 36th Anniversary and had no money to go anywhere to celebrate. (Money is tight since I'm not able to work & have alot of medical bills) Even a nice evening out would be great. (I can dream...) Thanks for all you do for all of us.
