Have y’all ever bought those “Just Crack an Egg” cups at the grocery store? This is a take on that idea but with fresh ingredients. Having some scrambled eggs for breakfast is always a good idea (yay protein!) But on those mornings where I don’t want to dirty up the pans and stovetop, I reach for a cup or bowl to make a Microwave Scrambled Eggs Cup! Kids love it too because this is something they can definitely help make! With just a handful of ingredients and a few minutes in the microwave, you can have a delicious and protein-packed meal in no time!

Can I make these more like a frittata?

Sure, if you’re feeling a little more like a frittata for breakfast rather than scrambled eggs, try adding a Tablespoon of heavy cream and some diced tomatoes or spinach.

Can I make this more like an omelet?

How can I save some time and speed up this breakfast?

This is a fabulous breakfast for when you have leftovers. Leftover ham, bacon or sausage? Toss that in there. Grab a bag of Simply Potatoes from the refrigerated section of the grocery store. No need to heat those bad boys up, first just dice them and use them since they’re already cooked. You could even have all your veggies pre chopped and in ziploc bags that you keep in your refrigerator and they are ready to go for the week!

What kind of container is best to use?

You can use a mug or a smaller bowl. As long as it is microwave safe.

Can I make this with 2 eggs?

A little more hungry and wanting 2 eggs? No problem, just use a 16-ounce container and make sure it’s safe to put in the microwave.

How do I know if the egg is cooked?

Look at the color of the egg. If it is a light yellow in color, it’s cooked. If you see any darker yellow areas, that is still uncooked and needs more time.

Can I make this ahead of time?

Yes-ish. Go ahead and prep your ingredients, but keep them in their own containers in the fridge and don’t cook together or cook the egg until you’re ready to eat and serve. I think you can prep them up to a few days in advance.

INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)

  • small diced cooked ham– this is the perfect recipe to use if you have leftover ham. You could also add some leftover bacon if you have it.
  • shredded mild cheddar cheese
  • finely diced onion
  • finely diced green bell pepper
  • cooked small diced potatoes
  • large egg

HOW TO MAKE MICROWAVE SCRAMBLED EGGS CUP

Spray a microwave safe bowl or cup (8-ounces) with nonstick cooking spray. Add ham, cheese, onion, bell pepper, potatoes, and egg to the prepped bowl. Mix everything together so it’s all coated in the egg. Put bowl in microwave and cook for 1 minute. Use towel or safe hot plate to remove bowl from microwave to stir.

Put the bowl back in the microwave to cook for another 30-45 seconds, or until everything has been cooked all the way through. The bowl will be VERY hot. Be careful when touching it. Let it cool slightly before serving.
