Air Fryer Chicken Enchiladas

With this deliciously easy Air Fryer Chicken Enchiladas recipe, you make the chicken and the enchiladas in the air fryer. No separate pan needed!

AN ENTIRE MEAL MADE IN THE AIR FRYER!

What I really love about this recipe is that the whole meal is made in the air fryer. You not only cook the enchiladas in the air fryer but you cook the chicken as well! My family loves enchiladas and this is the perfect amount for my smaller family. If you have larger family, you can easily double this recipe! FREQUENTLY ASKED QUESTIONS:

Do I have to use taco seasoning?

No. You can use your favorite seasoning. If you want to try your hand at making your own homemade taco seasoning, I have a recipe here. Fajita seasoning works well here too.

Can I use corn tortillas?

Yes. Most corn tortillas are slightly smaller than the size of the flour ones I used here so you may be able to get a couple extra made.

Why do you suggest using olive oil and olive oil nonstick cooking spray?

When air frying, it’s important to pay attention to what oils you are using. Many oils can really gunk up your air fryer basket and make it sticky – even after washing. I have found that olive oil and olive oil sprays keep this from happening.

Can I use green enchilada sauce?

Absolutely! That works well here too.

What size air fryer are you using?

For all of my air fryer recipes I share on my site, I am using a 5 quart air fryer. If you have one that is larger, smaller, wider, etc. – you will need to adjust the recipe accordingly to your air fryer. Unfortunately it is impossible for me to test and know how every air fryer out there works so you will need to use your best judgement.

What if I don’t like black beans?

You can just leave them out. Or substitute with another bean you like. Pinto beans are another one I really love.

INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)

  • boneless, skinless chicken breasts
  • olive oil
  • taco seasoning 
  • flour tortillas
  • black beans (optional)
  • red enchilada sauce 
  • colby jack cheese
  • optional toppings: sliced tomatoes, sour cream, avocado, guacamole, cilantro

HOW TO MAKE AIR FRYER CHICKEN ENCHILADAS:

Slice each chicken breast to make 4 chicken breasts (like butterflying a chicken). This will help them cook more evenly. To do this: Place one hand on top of the chicken to hold it in place (being careful of your knife), slice the chicken breast horizontally, cutting all the way through the other side.  If they are thicker than ¼ inch, then flatten them down with a rolling pin or with a flat meat tenderizer. Drizzle the chicken breasts with olive oil and then season all sides with the taco seasoning. Rub the seasoning in to make sure they are fully coated.

Spray a 5-quart air fryer basket with olive oil cooking spray (even though the chicken breasts have oil on them, this is just an extra layer to make sure they don’t stick.) The air fryer does not need to be preheated for this recipe. Place the seasoned chicken in the air fryer and cook at 370F degrees for 6 minutes. Flip the chicken once that time has passed and bake for an additional 6 minutes.

Air fryer times can vary. Chicken breasts should reach an internal temperature of 165f degrees when done.

Remove the chicken from the air fryer and allow it to sit on a cutting board for a few minutes while you prepare the air fryer basket. Line the bottom and halfway up all of the sides of the air fryer basket with nonstick aluminum foil (or you can spray the aluminum foil with nonstick spray.) Set aside. Slice all the chicken breasts into strips.

Spread about 2 tablespoons of the enchilada sauce on each tortilla.

Layer on top of each tortilla some of the sliced chicken down the center.

On top of the chicken, add some black beans.

Finally, top with some shredded cheese.

Roll up all the filled tortillas and lay them side by side against each other in the prepared air fryer basket.

Pour the remaining enchilada sauce evenly over the tortillas and evenly sprinkle on the remaining shredded cheese. Note: Use as little or as much of the enchilada sauce as you would like.

Air Fry at 350F degrees for about 10 minutes (air fryer times may vary so keep an eye on the enchiladas so that they do not burn.) The air fryer does not need to be preheated first.
