A TASTY MEXICAN-INSPIRED AIR FRYER RECIPE

These Air Fryer Chicken Chimichangas are one of my favorite quick and easy meals that you can have on your dinner table in under 20 minutes. With a mixture of chicken, cream cheese, seasoning and cheese, they are not lacking in flavor! Top them all off with any of your favorite taco toppings and serve with a side of rice and you have yourself a hearty meal! What size flour tortillas do I need?

We use 8-10 inch tortillas for these (generally this is considered ‘burrito size’.)

Can I use another meat for this recipe?

Absolutely! Some of my favorite meats that we use that we have on our website include: Crock Pot Taco Meat, Mexican Shredded Beef and Crock Pot Salsa Chicken.

How do I make these more brown/crispy on top?

While we do lightly spray with cooking spray on the tops, if you want to get them a little more browned you can slather them in some butter before cooking as well. This will also give a nice flavor to the outside of the chimichangas as well.

What size air fryer should I use?

For this I used a 5.8 quart air fryer. You will probably have to make these in batches with any air fryer you use. You do not want to crowd the basket. A lot of folks forget that air needs to circulate in air fryers to properly cook and crisp up your food. Air fryer basket liners are not recommended unless they have lots of holes in them to help circulate the air.

What goes with chimichangas?

I like to serve these with either cilantro rice or Mexican rice and some refried beans or a simple side salad.

How do I store leftover chimichangas?

These can be stored in an airtight container in the refrigerator where they will keep for up to 3 days. They can also be frozen. Place in a freezer container or bag and they will keep in the freezer for up to 3 months. To defrost, place in the refrigerator overnight until thawed. You can reheat for a few minutes in the air fryer.

INGREDIENTS NEEDED: (FULL RECIPE AT THE BOTTOM OF THE POST)

  • shredded cooked rotisserie chicken
  • cream cheese
  • diced green chiles
  • taco seasoning
  • Mexican shredded cheese
  • flour tortillas
  • toppings for serving: pico de gallo, sour cream, and lime wedges

HOW TO MAKE AIR FRYER CHICKEN CHIMICHANGAS:

Spray your air fryer tray with nonstick cooking spray (olive oil spray is recommended as it will not gunk up your air fryer basket like other cooking sprays.) In a medium sized bowl, mix together the shredded rotisserie chicken, cream cheese, diced green chiles and taco seasoning until combined.

Spread ¼ of the chicken mixture onto the middle of a flour tortilla. Sprinkle half a cup of shredded cheese next to the chicken mixture.

Roll one side of the tortilla over the filling, fold the edges in, and roll the remaining tortilla edge underneath to form a burrito. Repeat with the remaining filling to create 4 chimichangas. Working in batches, place two chimichangas into the air fryer. Generously spray the tops of the chimichangas with cooking spray (or slather with melted butter).

Cook in the air fryer on the air fry setting for 8-9 minutes at 400F, flipping halfway and spraying with nonstick cooking spray.

  • Spray the air fryer basket with nonstick cooking spray (olive oil spray is recommended as it will not gunk up your air fryer basket.)
