Cornbread Taco Bake

Earlier this week I tried my hand at making my own homemade taco seasoning. I had played around with a few recipes and finally found a mix of flavors that my family really loved. The whole reason I did that was because I was working on this recipe. I wanted to try my hand at making a gluten-free meal and I had the idea for this cornbread bake in mind. Then I found out that some pre-made taco seasoning has gluten in it. That was a shocker!
This whole recipe centered around the *NEW* Martha White Gluten Free Mixes. Yay for easy and tasty mixes! This is such a help for those folks who are on a gluten-free diet or who suffer from Celiac Disease but who still want easy, quick, tasty mixes. 
I was super excited when I saw the gluten-free mix featured in the baskets at the National Cornbread Cookoff Festival in South Pittsburg, TN hosted by Martha White and Lodge Cast Iron. I was so honored and thrilled to be a judge again this year. These were the best-of-the-best recipes coming back to try to win the top honor. It was a hard choice but someone has to eat all that delicious food. This recipe HERE was the winner!
Anyhow, I shared news of the new gluten-free mixes on my Country Cook Facebook page and the feedback was amazing. It seems so many folks were so excited to finally see gluten-free mixes from a brand they trust and know will taste good!
So I knew I had to create a recipe using these new mixes. I learned how hard it is to follow a gluten-free diet but I also learned that food can taste amazing (and be made easily) with a little help from great new products like these. This is why I love Martha White. You can just make some muffins or you can use that mix to transform it into something truly special. So I'm super thrilled to share it with y'all. Ingredients:
1 (7 oz.) package Martha White Gluten-Free Cornbread Mix
1/2 cup milk
1 Eggland's Best egg
1 pound ground beef
3 tbsp. (or 1 packet) taco seasoning (RECIPE HERE)
1/3 cup water
1 (11 oz.) can Mexicorn, drained
1 (10 oz.) can Rotel, drained
2 cups sour cream
2 cups shredded Mexican cheese blend, divided use
1/2 cup chopped green onions

optional toppings:
shredded lettuce, sliced olives, diced tomatoes, taco sauce
Directions:
Preheat oven to 350f degrees. Combine cornbread mix with milk and egg. Stir well.
Spray a 9x9 (or 2 1/2 quart) baking dish with nonstick cooking spray.
Pour batter into prepared baking dish and bake for about 15 minutes.
Meanwhile, make sure you got your Mexicorn and Rotel drained. 
Cook ground beef until no longer pink, drain excess grease. Then add in taco seasoning and 1/3 cup water.
Then add in Mexicorn and Rotel. Stir well and simmer for a couple of minutes.
Once cornbread is cooked, take out of oven, then cover with ground beef mixture. 
Next, combine sour cream, ONE cup of shredded cheese and green onion in a bowl.
Gently spread the sour cream mixture on top of the ground beef mixture. Note: it doesn't really matter what order you put this in. You can put the sour cream mixture on top of the cornbread and then layer the ground beef on top of that. It all depends on your preference. 
Sprinkle the top with the remaining cup of shredded cheese.
Bake for about 25 minutes until heated through and cheese is melted.
Allow to cool for a few minutes. Then slice and serve. Top with shredded lettuce, sliced olives, diced tomatoes and a drizzle of taco sauce. 
Enjoy!

  3. When I am making muffins, my favorite is banana nut! When I grab one at different venues, I like the Chocolate Chip ones! They don't taste artificial like the banana nut ones do.

  33. My all time favorite muffin is still the blueberry muffin. I make them with the berries I pick in July. I love a crunch of sugar on top. I have developed a appreciation of corn muffins lately. I have been playing around with add ins like bacon or jalepenos. I love them lightly toasted and buttered. Yum! Off to bake some muffins.
