Taco Bake

One food item I always seem to have in my pantry or in my fridge are flour tortillas. They are good for so many things.  Tortillas can be made into so many different types of snacks for kids (and grownups).  You can cut them up and fry them or bake them.  You can make cinnamon chips, quesadillas, tortilla pizzas....The possibilities are endless...and easy on the wallet too.  Sometimes when I only have a few left, I like to make this taco bake.  It is so filling and gooey and cheesy.  My husband, who is not really a fan of Mexican style dishes, really loves this one.  It came about after my favorite Taco Bake kit made by Old El Paso went away.  So I had to come up with my own version.  And if y'all will allow me to toot my own horn for a minute, I think this one tastes even better than Old El Paso's kit version. It's a great dish for beginner cooks and perfect for all you super busy cooks.  And the leftovers heat up well the next day too.  That is...if you have any leftovers.
Ingredients:
1 pound ground beef
1 packet taco seasoning
* water as called for on back of seasoning packet
3 large flour tortillas (8-inch size)
1/2 cup Salsa Con Queso
1 1/2-2 cups shredded Mexican cheese blend

Directions:
Brown and crumble ground beef. Drain excess grease.
Add in taco seasoning and water (following directions on back of seasoning packet).
Once the taco meat is ready, turn off heat and add in 1/2 cup salsa con queso.
I like a mild salsa con queso.   This is a spicy dish so a hot salsa con queso would just be too spicy for us.  If you have anyone in your family that is very sensitive to spicy dishes, you could always use a regular, spreadable cheese dip.
Give it a good stir, until thoroughly combined.
It don't look all that pretty, but don't worry, we're gonna dress her up a bit.
Preheat oven to 350F degrees.
Spray an 8-inch round baking pan with nonstick cooking spray.
Layer the bottom of  the pan with a flour tortilla.
I like to use a springform pan just to make it a bit easier to get out after it is finished baking.  But this taco bake is pretty easy to slice up and serve even without the springform pan.

Now add about 1/3 of the ground beef taco filling on the the first layer.
Then add 1/3 of the shredded cheese.
Continue until you are done with all the layers: another tortilla, more taco mixture, more cheese.  Bake at 350F degrees for about 15-20 minutes. Until cheese is melted and edges are slightly golden brown.
Allow to cool for a couple of minutes.
Then slice and serve.
I like mine with some sour cream and diced tomatoes on top.
Served here with my Mom's Spanish Rice.
Enjoy!

Now that baseball season has started for my son and most games are played in or around the dinner hour, this recipe will be perfect for me! I can make this in the morning before I leave for work and throw it in the oven when I get home. You may have just saved a family and a marriage! LOL!

I saw this yesterday on FB and knew I had everything except the queso already at home. A quick stop at my local market and I was set. Whipped together really quickly and an easy, flavorful meal was on the table in no time. Thank you so much for this, it was a total hit and will become a staple in my house!

how many servings did this make? I want to try tomorrow (just cooking for one) and use my leftover corn tortillas (6") and halve the ingredients and hopefully make two of these, one for leftovers, what do you think?

The Country Cook said...

Anon. - I would say this serves maybe 4 people (1 serving a piece). It really just depends on how big of a slice everyone wants. It may just feed 2-3 depending on how many servings everyone would want.

Mmm! I just made this with a few substitutions: ground turkey with some dried minced onions, poultry seasoning, and chili powder. I had no taco seasoning, and my heartburn would have been out of control with the original. The outcome was delicious! It was the perfect balance of heat and flavor. It was a little too cheesy for my husband, but the kids (19 months and 4 years old) and I devoured it.

Anonymous said...

Made this tonight and it was wonderful!!!!

Just served this and my entire family (including 1 and 4 year old picky eaters) loved it! Thank you for this great recipe that will now enter the usual rotation. I substituted turkey and added canned corn for an extra veg; perfect with a side salad.

I can't eat flour tortillas due to Celiac Disease. Do you think corn tortillas would work?

Just made, minus the queso (I didn't have it), and it was a huge hit with my kids! They want to have it again tomorrow! Oh I also used homemade taco seasoning. Thanks for the super easy recipe. Next time I want to try it with the queso, sounds sooo good!

I made this for lunch (and my dinner at work). It was so super easy to make!! A very delicious dish. I cut it into 6 slices. One slice was enough, so, of course, I had a second slice. Very filling. Thank you for a delicious taco recipe!!

Kristina said...

Thanks so much for this recipe! I made it with cheese whiz since the kiddos don't like spice but added a tiny bit of salsa. It was amazing! I also wanted to point out that if you are on a budget or want to stretch out your meat, you can either add a can of refried beans or a can of bean and bacon soup. When I cook this I use 1 lb burger and one can of either mentioned above, it is enough to make 2 dishes with it. Oh, and they freeze well also. :) Thanks again!

I made this last night for my boyfriend and I for dinner, Its such a simple recipie. I did change it a little by adding some salsa and onions between the layers, and sour cream and lettuce on top which turned out very good. Thanks for a delicious and quick dinner idea, we enjoyed it a lot!

Hello, I made this last night and it was fabulous! Living in the UK I didn't have access to a jar of chile con queso and there is no Velveeta like product over here but after some research I found an easy recipe for the cheese sauce. Hubby is taking the one slice left into work for his lunch today. Thank you!

I too made a few additions/substitutions but kept the basic recipe and it was delicious! We had leftove chicken so I shredded it and used that with the queso. Was definitely a bit drier since ground beef newly sauted has quite a bit of oil but we just added a little olive oil and more queso when heating it. We added bell pepper, onion and corn as a layer and after it was done baking, topped it with fresh tomato and avocado. Yummy!!!

I just made this.....so good! I added olives and corn. I like the idea of mixing in some beans too! Will make again for sure!

Thank U for his wonderful recipe. I changes it up some as I am a vegetarian. I sauted Crumbles and chopped Res onion in a little extra virgin olive oil.
While that was inthere stove, I microwaived a package of frozen veggies - carrots, cauliflower and broccoli. Once done, I added it to the crumble mixture with one can if Cream if Mushroom soup.
Seasoned it with lots of fresh ground pepper. Then followed your instructions. It came out Fantastic!!!
Thank U soooooooo much for sharing.

One of those nights at the end of the week, when you have to go to the grocery. it turned out really good so I will definitely try this..thanks

This is very good! In fact, my son says it is now his favorite dinner and I just made it now for the second time since he's been bugging me to make it again. I do use half of the salsa con queso (medium spiciness) and half Cheez Whiz so it isn't too spicy. But my son likes spicy more than I do and I don't think it's too spicy this way. Thanks for a delicious, easy dinner recipe!!

Found this on Pinterest and made it for dinner tonight (and not only because I got new spring form pans for Christmas lol). It was good and very filling. The only change I made was to alternate ground beef and chicken in the layers, because I had leftover chipotle marinated chicken that I had to use up. I put sour cream, diced tomatoes and green onions on top. Thanks for a yummy recipe that my whole family enjoyed.

I have been letting my two boys pick out meals I have pinned on Pintrest. My 8 year old picked this one and was very excited. I made a few changes to make it a little healthier.... I used ground turkey instead of beef. I used a cheesy taco seasoning and salsa instead of the Queso dip and whole wheat tortillas. My family LOVED it and I liked the fact that I was able to "hide" some good things in there for them.

ABSOLUTELY DELICIOUS!! This was an easy recipe, and it tastes so amazing. I also used sour cream on the side and made some Mexican rice. Just made this tonight. I remember the boxed kit I used years ago, and now that I live in China, I have to come up with ways to recreate those boxed favorites from home. I was lucky enough to have what I needed in stock at a local import shop. I whipped up a batch for my taco-loving family of 4. At first, my 7 year old could not get past tacos being served like pie, but I would say that her requesting a second piece confirms it is amazing. :) My 6 year old loved it from first bite, and the empty pan left by my husband shows that its a winner all around. I made a second batch and froze it for when I go out of town, AND they are requesting a second pan just in case. :) Thanks for posting- looking forward to trying your Mexican pizza and some of your other goodies you have posted. I am on the lookout for some bisquick mix- that blueberry coffee cake u posted is calling my name. :)

I make something a lot like this I add a can if refried beans to the meat. (Taste good and also helps it go alil further). And I add regular mild salsa.may add a layer. First time i made it fo my 6 yr oldstep son he looks at it anf says hee don't like it. I told him this is dinner and its all time till breakfast so he ate nearly half of it. Now when he's with us he asks for "that stuff he don't like".

Anonymous said...

How about refried beans or black beans? I've see veggie burgers do maybe something like that? Just a couple of thoughts I'm not vegetarian. But I've use refried beans before when money was tight.

Anonymous said...

It was a hit at my house! I added some refried beans to each layer and made my own cheese sauce because I forgot to buy some. I just used 8" tortillas and used my round cake pans. ( made 2, one for hubby and I and one for my daughter to take home for dinner as she was in the middle of a kitchen remodel) . I'm making it again tonight at my husband's request.

That's a huge deal, especially coming from my 16 year old who is picky and hard to please.

This was a hit with my whole family! I doubled it the first time I made it and then tripled it tonight with several more layers so I had enough to feed all of the hungry kiddos and have leftovers for lunch too. Of course, I had to put it into a different container to make sure it didn't spill over the sides as I baked it. I also had to make the servings much smaller because it was much higher. It sure is filling! Thanks for coming up with this recipe!

Anonymous said...

This looks delicious. Definitely some beautiful inspiration. I think I will try it this weekend but with corn tortillas. I have issues with flour ones. I liked someones comment that they added refried beans. This also brings back memories of my mom making "Mexican lasagna" when I was little. She layed the flour tortillas, seasoned ground beef, cheese, salsa and crushed corn tortilla chips.

Hi Im in Australia and can't find Salsa Con Queso in the shops is there something else I can use instead?

Ariana Browning said...

Anon, it is pretty much cheese sauce and salsa mixed together. So you could do Cheez Whiz and Salsa, Velveeta and Salsa, or make your own Nacho Sauce (google easy recipes) and add salsa. That's what I use. Homemade Nacho Sauce and Salsa together. :)
