The Best Fruit Salad

This fruit salad tastes just like summer! With a variety of juicy, fresh fruits and an amazing honey lime dressing, it will be the star of your summer picnic or BBQ!

A BEAUTIFUL MIXED FRUIT SALAD

There really is nothing like a fresh fruit salad. Plus, they are absolutely gorgeous to look at! We’ve got all the good stuff in this fruit salad: mandarin orange, kiwi, watermelon, blueberries and pomegranate then we drizzled that luscious fruit with a mixture of honey and lime juice. It is so refreshing and a light dish for summer. It is not only tasty but it is super simple to put together and you can add whatever fresh fruit you like. I give some other great fruit substitutions below for this fruit salad recipe!

TIPS FOR MAKING THE BEST FRUIT SALAD:

  • You can use any mixture of fruit that you like for this salad such as bananas, raspberries, blackberries, cantaloupe, strawberries, grapes and more.
  • You can use canned fruit wherever possible. Canned mandarin oranges work perfectly well in this recipe.
  • Some stores offer already cut up fruit like watermelon, cantaloupe and pomegranate seeds. I will do this often when I am trying to whip this up quickly.
  • The lime juice in this recipe actually helps to keep the fruit looking its best for a little longer. Citric acid that is found in fruits like lemon and limes help keep fruit lighter and brighter for a bit longer. Keep it cool when possible.
  • You are definitely going to want to double this recipe if you plan on bringing it to a gathering.
  • I was conservative with the honey lime dressing. Please feel free to make more if you like more dressing!

INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)

  • mandarin oranges, oranges or tangerine
  • seedless watermelon
  • kiwi
  • pomegranate
  • blueberries
  • mint leaves (optional)
  • honey
  • lime juice

HOW TO MAKE FRUIT SALAD:

  1. Set aside a large bowl.
  2. Wash mandarin oranges, cut both ends, cut the skin from top to bottom then unroll. Remove strings, separate edges then add in the bowl.
  3. Cut watermelon in cubes, small or big ones as you prefer, add in the bowl.
  4. Remove the skin from the kiwi. Then cut kiwis in half, slice, then add to the bowl.
  5. Cut pomegranate in half, the seed part must face the palm of your hand. Use a spoon and smash the skin of the pomegranate. Seeds will fall into your hand. Make sure to do it over the fruit salad bowl so you don’t lose any. Do the same with the other half.
  6. Add blueberries and mint leaves in the bowl and mix.
  7. Leave in the bowl or transfer fruit salad to a large plate to serve.
  8. In a separate small bowl, whisk together the honey and lime juice. Pour this dressing over fruit and gently toss before serving.

HOW TO STORE:

  • This is best served fresh but you can prepare it ahead of time by storing the fruits in the refrigerator before you prepare your salad. Keeping fruits in the refrigerator before using will keep them at their best.
  • After preparation, drizzle and stir in some additional lemon zest and juice and cover tightly. This along with the lime juice will help keep the fruit fresh for up to about 1 day and add additional flavor.

Ingredients

  • 2 lbs mandarin oranges, oranges or tangerines

  • 2-3 kiwi, peeled
  • 1 medium pomegranate
  • 4 oz fresh blueberries
  • 1 cup mint leaves (optional) loosely packed
