Crock Pot Sloppy Joe Hash Brown Casserole

Crock Pot Sloppy Joe Casserole is an easy casserole to make! Layers of cheesy hash browns, ground beef and sloppy joe filling make it a meal!

A WHOLE MEAL MADE IN THE SLOW COOKER!

This Crock Pot Sloppy Joe Casserole is a whole meal in one. It’s a very simple recipe but it is a fun and new way to eat your meat and potatoes. It only takes a short time to throw it all together then you let the slow cooker do all the work! Definitely a family-friendly meal!

I made this when my parents came for an afternoon visit. My husband and my parents loved this one! My husband has requested it almost weekly since that visit. I typically serve it alongside a microwave steamer bag of vegetables. Thank you!

Could you add vegetables to this?

 Feel free to add in any other veggies or seasoning that you enjoy. Green peppers, red peppers or even corn would be great in this! 

Do you have to use shredded hash browns?

You can substitute the shredded hash browns with southern style hash browns, which are the smaller cubed potatoes or you can use the Potatoes O’Brien that have peppers and onion mixed in with the cubed potatoes.

What can I serve with this casserole?

I always serve it with a side salad and sometimes some cornbread. But you could do steamed veggies as well!

Do I need to use an oval slow cooker?

I do recommend only using an oval slow cooker. Because there is less surface area in a round slow cooker, this would take longer to cook and I’m not sure it would cook as evenly.

How do I store leftovers?

Store in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave.

INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)

  • frozen shredded hash brown potatoes – you only need to slightly thaw these. They don’t need to be fully thawed – it’s okay if they’re still a little cool.
  • condensed cheddar cheese soup – if you don’t want this much of a cheese flavor, just grab another can of condensed soup you like. Also, if you have any sensitivity to sodium, I would choose a low or no sodium option.
  • egg – this acts like a binder to help it all hold together.
  • salt and pepper – you could add other seasonings if you like. Garlic powder would be a good addition.
  • ground beef – you could also use ground turkey or chicken.
  • onion – if you don’t like onion, just leave it out.
  • sloppy Joe sauce – if you don’t want to use the canned stuff you can make it homemade. I have a homemade sauce recipe in my other recipe for Sloppy Joe Bubble Up and also in my Crock Pot Sloppy Joes recipe.
  • shredded cheddar cheese – any type of shredded cheese you like will work here. If you want a kick of spice, try using pepper jack!

HOW TO MAKE CROCK POT SLOPPY JOE HASH BROWN CASSEROLE:

Spray a 5-6 quart oval crock pot (slow cooker) with nonstick cooking spray. In a large bowl, combine shredded potatoes with the soup, egg, salt and pepper. Stir well then spread it in the bottom of the crock pot.

In a large skillet, over medium heat, brown and crumble ground beef along with chopped onion. Cook until beef is no longer pink. Drain excess grease. Stir in sloppy joe sauce.

Spoon sloppy joe mixture over hash brown mixture in crock pot. Cover and cook on low for about 4 to 4 1/2 hours. About 10 minutes before it is ready, add about a cup or so of shredded cheddar cheese to the top of the casserole. Then put lid back on crock pot and allow the cheese to melt.

Ingredients

  • 32 ounce package frozen shredded hash brown potatoes, slightly thawed
  • 10.75 ounce can condensed cheddar cheese soup (can use low or no sodium)
  • 1 large egg, lightly beaten
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 pound ground beef
  • ½ small onion, finely diced
  • 15.5 ounce can sloppy joe sauce (like Manwich)
  • 1 cup shredded cheddar cheese (for topping)

Instructions

  • Spray a 5-6 quart oval crock pot (slow cooker) with nonstick cooking spray.
  • In a large bowl, combine 32 ounce package frozen shredded hash brown potatoes, slightly thawed with 10.75 ounce can condensed cheddar cheese soup, 1 large egg, lightly beaten, 1 teaspoon salt and 1/2 teaspoon pepper.

  • Stir well then spread it in the bottom of the crock pot.

  • In a large skillet, over medium heat, brown and crumble 1 pound ground beef along with 1/2 small onion, finely diced. Drain excess grease and put back into the pan.

  • Spoon sloppy joe mixture over hash brown mixture in crock pot.

  • Cover and cook on low for about 4 to 4 1/2 hours.
  • About 10 minutes before the casserole is done cooking, sprinkle 1 cup shredded cheddar cheese on top. Cover and alllow cheese to melt before serving. Optional: sprinkle with dried parsley flakes for color.

Notes

  • Shredded hash browns can be substituted for southern style hash browns, which are the smaller cubed potatoes, or you can use the Potatoes O’Brien that have peppers and onion mixed in with the cubed potatoes.

  1. could this be put in an oven instead? it’s just me and I would have a lot of leftovers. I wouldn’t want to mess up the layering when transferring it to a container. if I could put in the oven, how long?

    1. The egg acts as a binder to hold it together so it’s more like a solid casserole. I guess you could but it wouldn’t be held together the same & I haven’t tested so couldn’t tell you for sure how it would look.

  2. I’m not a fan of the crock pot liner to be honest. They are super convenient but I find a lot of time they’re only good with soups. They end up “steaming” food and it ends up soggy exactly like you said. Without a liner, you get good crispiness (especially on the edges) 🙂

    I have been trying all your casserole dishes and they have been the best meals for a teacher to cook with such short evenings!! I’m going to do your Sloppy Joe Casserole tomorrow night but make it in my casserole dish instead of my crockpot…..like I said…..short evenings!

  10. I have done something like this on my own using 6lbs.thawed ground turkey, 2 cans of Bold Manwhich and potates O’Brian. mixed it all together raw turkey meat and all put it in the crock pot on low of 8 hours and it was great.

  11. I apologize if someone already asked this, but is the egg a must in this recipe? I have this thing about cooking with eggs…I'm always afraid I'm going to find bits of scrambled egg in the dish and it'll be gross. (I sound like I'm five, don't I?) It sounds DELICIOUS and I plan to try it this week, but I'd love to leave out the egg.

  12. Delicious… I used the McDonald's style hashbrowns and broke them into small pieces. Plus, it tastes just as good as a leftover.

  13. I didn't have any type of hash browns in hand, so I totally used a small bag of French fries lol. It's still cooking so we'll see what happens. P.S. I like the name, it's informative and it rhymes!

  16. This could be done in the oven too if you prefer. But yes, definitely not one that could simmer away all day while you are at work unless you have a digital one that can automatically switch over to the "keep warm" setting after it has cooked.

    That's very close to my shepherd's pie recipe. I use mashed potatoes with some canned veggies (peas,carrots,corn)mixed in , then topped with the sloppy' beef which is then topped with cheez slices,covered and baked @350 for 45min. I put it together in a bread loaf pan or a 9×13 dish. If you want to soup it up add a small jar of mild or medium salsa to the beef.

    Looks good! I see you spray your crock pot. If you haven't tried the crock pot liners, this would be a good dish to use them on. They can be found in the foil aisle and I will never be without them.

    1. Hi Kay! I think anything light would work great since the casserole is very filling. I just served it with some steamed veggies (squash and zucchini) or maybe a salad? I try to get some veggies in though with every meal.
