Chex Mix Marshmallow Treats

Chex Mix Marshmallow Treats are easy to make and even easier to eat. All the flavors of a Chex mix but in a sweet and gooey no bake treat!

A SWEET AND CRUNCHY TREAT

Combine all the classic flavors of Chex Mix with marshmallows to get a crunchy, chewy, sweet and gooey snack that is perfect for your next get together or just for a special treat. These treat bars are similar to Rice Krispies Treats, but instead of Rice Krispies cereal, I used my favorite Chex Mix varieties. They’re the perfect sweet and salty combo!

FREQUENTLY ASKED QUESTIONS:

I don’t have a jelly roll pan, can I use a smaller baking pan?

Yes. I wouldn’t go smaller than a 9×13-inch dish. Just know that your marshmallow treat bars will be thicker than the ones I made and may take a bit longer to set up.

Are these more savory than sweet bars?

You obviously get a touch of savory with the Chex cereal and the pretzels but this is meant to be a dessert bar. Very similar to a Rice Krispie treat or a no bake cookie (like Cornflake Cookies).

Do you eat these chilled or at room temperature?

These treats will keep well at room temperature, but I find it easier to cut them when they’ve been stored in the refrigerator. They also seem to hold their shape better once chilled too. So either way, you can enjoy them at room temperature or chilled, they’ll be delicious.

Do I have to use those specific nuts?

Nope! If you don’t want a mix of nuts you can use one specific kind of your favorite nuts. Also if you don’t prefer the honey roasted nuts you can use regular nuts as well. You can even leave them out. Whatever your taste buds are in the mood for feel free to use.

Can I change the type of Chex cereal?

Yes. If you only like rice Chex then use all of that. I was going with variety here but it all works.

How to store these treats?

Leftover Chex Mix Marshmallow Treats should be stored in an airtight container in the refrigerator for up to a week. Additionally, you can freeze these, if desired. Freezing will keep them for up to 3 months.

INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)

  • salted butter
  • mini marshmallows
  • vanilla extract
  • mini pretzel twists, roughly chopped (plus more for garnish)
  • honey roasted mixed nuts, roughly chopped
  • rice chex
  • corn chex
  • wheat chex

HOW TO MAKE CHEX MIX MARSHMALLOW TREATS

Prepare a 10×15-inch baking dish (also known as a jelly roll pan) or a similar-sized dish by lining it with foil or parchment paper. Give it a light spray of nonstick cooking spray, and then set it aside. In a Dutch oven or large stockpot, put the butter and melt it over medium heat.

Measure out 4 cups of marshmallows and set them aside. Add the remaining marshmallows into the pot with the melted butter. Stir the marshmallows constantly until they are completely melted. This should take about 5 minutes. Remove the pot from the heat and stir in the vanilla extract.

Add the chopped pretzels and chopped nuts to the mixture, stirring to combine.

Next, stir in the rice chex, corn chex, and wheat chex until they are well coated with the mixture. Finally, gently fold in the reserved 4 cups of marshmallows.

Transfer the mixture into the prepared baking dish. Press it down gently to fill the pan, but be careful not to press too hard; you want to keep the treats light and airy. If you’d like, press a pretzel on top of each portion of the treats for added decoration.

Allow the dish to cool at room temperature for 2 hours. Afterward, place it in the refrigerator for at least 1 hour to allow it to set properly. Once set, slice the treats and serve.

  • 1 ½ cups wheat chex

Instructions

  • These treats are great at room temperature or cold from the fridge. I find it easier to cut and that they hold their shape better when refrigerated.
  • Feel free to swap the honey roasted nuts out for a plain version. You can even swap the nut mixture out for whatever nuts you prefer. 
  • These should be stored in an airtight container in the refrigerator for up to a week or in the freezer for up to 3 months.
