Cheeseburger soup is the ultimate comfort soup. Chock full of seasoned ground beef, potatoes, onions, cheese all in a creamy soup!

A HEARTY, BEEFY, CHEESY, FILLING SOUP

I have been in a soup sort of mood lately. My mind is gradually turning to all things fall. Football games, apple picking, hay rides and warm, comforting soup. This Cheeseburger Soup is definitely what I would call comfort soup. It takes one of my favorite foods and transforms it into a creamy, flavor-packed soup.

What to serve with cheeseburger soup?

We enjoy eating cheeseburger soup with some thick crusty bread to dip into the soup. Also, a small side salad would be perfect with this soup.

What are the best toppings for cheeseburger soup?

Bacon is my favorite but we also enjoy sliced green onions and a dollop of sour cream.

How do I make cheeseburger soup in the crock pot?

  • Brown the ground beef first. Then pop all the ingredients (minus the flour and water mixture) in the crock pot and cook on low for about 4-6 hours. Then 30 minutes before serving, add in flour/milk slurry mixture and turn crock pot to high setting to allow mixture to thicken. Serve once thickened.
  • What can I substitute beef bouillon with?

    If you don’t have beef bouillon, just substitute with beef broth. You will skip the additional water that is added to this recipe.

    Can you freeze cheeseburger soup?

    Yes. However, when it is eventually reheated, it may not have the exact same texture as it did when it was freshly made. Potatoes can become mushy when frozen then reheated. It’s important to ensure this is stored in a freezer-safe bag or container. Only freeze once the soup has cooled completely.

    • potatoes
    • carrots
    • onion
    • garlic
    • water
    • beef bouillon granules
    • salt
    • ground beef
    • milk
    • all-purpose flour

    HOW TO MAKE CHEESEBURGER SOUP:

    Brown and crumble ground beef. Drain excess grease and set aside.

    Combine first 8 ingredients in a large saucepan; bring to a boil over medium-high heat. Reduce heat and simmer until potatoes are tender.

    Stir in beef and 2 cups of milk.

    In a small bowl, whisk together flour and remaining 1/2 cup milk until smooth. Gradually whisk into soup. Bring to a boil; cook 2 minutes or until thick and bubbly, stirring constantly (so mixture does not burn.) Reduce heat; add cheese and stir until completely melted.

    Ingredients

    • 2 cups potatoes, peeled and cubed
    • 2 carrots, peeled and grated
    • 1 small onion, chopped
    • 1 clove garlic, minced
    • 1 ½ cups water
    • 1 tablespoon beef bouillon granules (about 4 cubes)
    • ½ teaspoon salt
    • 1 pound ground beef, browned and drained
    • 2 ½ cups milk (divided use)
    • 3 tablespoons all-purpose flour
    • 8 ounces Velveeta, cubed
    • ½ pound bacon, crisply cooked and crumbled

    Instructions

I love this recipe…. Cheesy Hashbrown And Porkchop Casserole served with green beans and chunky homemade apple sauce.. I never really had a specific meal I loved but I do soooooo adore my mom's home made mac and cheese in the over… was so simple and crunchy on top yuuummmmm that and she used to make home made milk shakes that were sooooo thick – ice cream-mil-chocolate syrup till smooth… was a special treat for sure.

    6. My all-time favorite meal has to be my grandma's chicken and noodles. I used to watch her mix that dough up and roll it out, flour it and then dress for church on Sunday morning. She'd leave them drying on the dining room table while we were at church and when got back home, she'd roll them up and slice them and put them in with the chicken that had been cooked earlier that morning. She made pure egg noodles "her way", and no recipe I've ever found comes close to that taste and believe me, I think I've tried them all! She passed away about 30 years ago without giving me her recipe. When I asked her for it, she said there wasn't one….it was just stuff she threw together.

    7. It's so hard to pick a favorite meal because most food is tied to memories and I have so many! My mother passed away 7 years ago, but was well known for her noodles! People called her all the time to make noodles for them! So my mothers fabulous chicken and noodles with mashed potatoes, green beans and bacon, and big fluffy biscuits with homemade apple butter has to be my all time fav!     8. My favorite home cooked meal is ( believe it or not) Ox tails with gravy over rice. My boyfriend's family is from down south and although I was a bit hesitant at first I absolutely LOVE it. It is the BEST most tender meat I have ever tasted.

    10. I am not sure if I mentioned it or not, but I made this the other day. My family LOVED it and we are not great at eating our leftovers and we ate this the next day for lunch too. DELICIOUS!!!

    13. Really hard to choose! I think that my favorite meal would have to be when we first pick up our freshly pressed olive oil and my wife makes Spaghetti Carbonara with bacon and good Italian sausage.Then I smother it with the 'olio nuovo'! Nothing better!
