TIPS AND TRICKS ON HOW TO MAKE A BLT QUESADILLA:

  • You want to purchase large, burrito-sized tortillas not soft taco sized.
  • To make this easier to make, feel free to use store-bought real bacon pieces (these can usually be found with the salad toppings in your grocery store.)
  • I like to use shredded iceberg lettuce but you can have fun with this recipe and use romaine, butter lettuce or even some arugula or spinach leaves!
  • The type of shredded cheese used is completely customizable. Mozzarella, gouda or even goat cheese would all taste great!
  • Make sure you get a light brown char on each side of your tortillas. Since these are folded over, you want to make sure the cheese is melted.
  • Really want to take these up a notch – try serving this with my recipe for HOMEMADE RANCH DRESSING!

On top of the mayo lay 2-3 pieces of bacon on top. On the side directly above the bacon, spread out 2-3 tablespoons of diced tomato in an even layer. Then across from the tomato side, add a large handful of cheese and spread it evenly. On the last side, sprinkle around a handful of lettuce in an even layer.

HOW TO STORE:

These are best the day that they are made and I don’t recommend storing them after making. If you have some leftover, you can place them in a ziptop bag and place in the refrigerator for 1-2 days at most. Reheat in pan or in the microwave.
