Strawberry Fields Salad

I could pretty much eat some type of salad every. single. day. I love seasonal salads. I love creating salads with whatever I have on hand. And I especially love making salads that are a whole meal in one. This salad checks off all of those boxes. If summertime had an official salad - it would be this one! Crunchy lettuce, feta cheese, glazed pecans, grilled chicken, onions, bacon and fresh strawberries all combine to make the most amazing meal.
And I am topping it all of with one of the Marzetti® Simply Dressed® Salad Dressings. The Balsamic Vinaigrette works perfect in this salad. It's light and bright tasting and you will want to put it on all of your crisp, green salads. I like to dip sliced cucumbers and carrots in it as a quick snack. The ingredients in the Marzetti® Simply Dressed® Salad Dressings are just that: simple. They are made with extra virgin olive oil, sea salt and canola oil, which provides omega-3 ALA. They don't contain preservatives, trans fat, high fructose corn syrup, added MSG or artificial flavors.
This particular salad was inspired by the one that I enjoy from a chain fast-food restaurant. It's a seasonal menu item there but now we can enjoy it all summer! Ingredients:
1 (5 oz.) bag Spring Mix greens
1 pint fresh strawberries, thinly sliced
1/2 red onion, thinly sliced
1/4 cup dried berries (cranberries or cherries)
1/2 cup Feta cheese crumbles
1/2 cup praline pecans 
4-6 slices bacon, cooked and crumbled
1-2 grilled chicken breasts, sliced
Note: To make this even easier, you can use the grilled and sliced chicken breasts that are in the refrigerated and frozen section of the grocery store. Also, I found these praline pecans over in the snack aisle. Finally, you can use microwaveable bacon as well.

Directions:
Place spring mix greens into a large bowl or large platter. Remove tops of strawberries and slice thinly. Thinly slice red onions. 
Tip: When using raw onions, soak the sliced onions in ice water for a few minutes before serving. This will help with the onion tasting too pungent and overpowering the rest of the dish. 
Add sliced onions to salad and sprinkle with dried berries, Feta cheese crumbles, praline pecans, sliced strawberries, bacon and sliced chicken. Then drizzle Marzetti® Simply Dressed® Balsamic Salad Dressing on top (as little or as much as you like.)
And dig in!

  3. I REALLY don't like making salads...and usually only eat them when we eat out. But love being able to make a copycat...this sounds wonderfully delish.

  9. I don't make salad much, I find it a chore to make. When I do make it, I use the ready-made bags of salad so it is quick.

If I have time, I love to make a base of several greens, layers of veggies and fruits: red pepper, onions, avacado, strawberries, blueberries, mandarin oranges - then topping with nuts and seeds and a lovely homemade dressing. It all depends what I have on hand at the time. I am like you - I could eat salad every day! I am going to try your strawberry salad this week! Thanks for the giveaway opportunity!

I often buy the bagged salad mixes because they're easy, but when I want a really good salad I use romaine hearts--washed and spun through the salad spinner, and add halved grape tomatoes, cucumber slices, shredded carrots, and whatever else I find in the frig. Homemade croutons are a nice finishing touch.

  25. Oh I love to use vegetables from our garden! I love using cherry tomatoes, pea pods, peppers, and cucumbers! Your strawberry salad looks so yummy! We have a few strawberry plants too...I am going to have to try that!

  28. I just love making salads with any veggies we have on hand. Sometimes it is just simply lettuce, tomato, cucumber, and dressing. Other times we go all out with the toppings, grilled meat and so on. I love this recipe and can't wait to try it!
