I suppose in the winter time I crave soups more than any other time of year.
What's not to love? They are warm and comforting and just beg to be eaten with a bit of bread.
This is one of those soups that are fun to make and eat.
You can really dress this soup up however you like.
Add in different kinds of beans like black beans or kidney beans.
Then have some fun with the toppings.
If you're serving this up to guests, you can have lots of different bowls with all kinds of toppings to choose from.
Bake up some Mexican cornbread to serve with it and you just can't go wrong.
Ingredients:
1 pound ground beef
1 small onion (or half of a large onion), diced
1 can beef broth
1 can diced tomatoes and green chiles, undrained
1 can pinto beans, undrained
1 can kernel corn, undrained
1 packet taco seasoning
1 packet dry ranch dressing mix
1 cup water
Directions:
In a pan, brown and crumble ground beef along with diced onion.
I season my ground beef with a little salt & pepper.
Drain excess grease.
Put ground beef and onion mixture in slow cooker.
Add in diced tomatoes, corn, pinto beans and beef broth.
Fill tomato can with water (about 1 cup).
Add water to mixture.
Stir in packet of ranch dressing mix
And packet of taco seasoning.
Give it all a good stir and set on low for 6 to 8 hours.
Served here with crushed corn tortilla chips, sour cream, Mexican cheeses and chopped green onion. Yummmm!

I'm thinking we might give this recipe a try! We'll just sub out the ground beef with ground turkey (I dislike the taste of ground beef & ground turkey is healthier). I bet this would make a great quick & easy set-it-and-forget-it meal!

I was given this recipe when I was in Weight Watchers. At that time it was 3 points per cup, not sure what it is on the PointsPlus program but it was one of my favorite meals when I was doing the program. Hearty, filling and VERY good. Thank you for sharing, I love your blog.

I just put this in my crockpot. I doubled the recipe. The only thing I did differently was only use 1 small can of corn and I added 2 cans of fire roasted tomatoes. Will let you know how it turns out. It is already smelling delicious! Thanks so much for the recipe!

We had the soup this morning. My husband works 3rd shift, so sometimes I fix something in the crock pot so it will be ready when he gets home in the morning. It was soooo good! My husband and I both loved it! I doubled the recipe so we can eat it all weekend! Glad I did, it is something that will heat up well and we wont get tired of it anytime soon! lol Thanks again for the recipe! Will have to share it with my friends!
Two more hours left to cook but I couldn't resist a bite...SO GOOD! It's a little spicier than I was imagining but still fantastic!
Elisha, so glad you liked it!! If you find it's still too spicy for ya, then next time I would just use a can of plain ole diced tomatoes rather than the one with chiles in it. :)
I've made this many times except I usually use stew meat instead of ground beef. Its one of my family's favorite meals!
