Mexican Chicken Salad and Peaches & Cream Torte

I love Wednesdays because I get to have a friend come over and play.  Today, our friend is Tonya, from 4littlefergusonsI normally try have a nice, long introduction to our guest blogger but I really have to keep it short today because Tonya is sharing not just one recipe - but two!  First up is this Mexican Chicken Salad with Chili Lime Dressing.
And second up is this Peaches and Cream Layered Dessert.
And they both are absolutely amazing and perfect for summer. I'm thinking you might have some new  items on your 4th of July menu right here. I think you are gonna love these recipes from Tonya. Hi everyone, this is Tonya, from 4littlefergusons!  I am a midwest mom of 4, 3 of those munchkins arriving in the last 3 years. The words spoken most often at my house? “Hello”, “Goodbye” and “I’m Pregnant.” I guess if I was being truthful, you’d also hear the words: ”I said No!” and don't forget, “I need FIRST time obedience” All this, set to the backdrop of , “It’s MIIIIINE“.  Hey, I have a 2 and 3 year old, what do you expect?  

 I am so glad to get to hang out with you all here on Brandie's blog today. Or should I say"Y'all"? Brandie's a southern girl, you know.  I first met Brandie on Tasty Kitchen, I do believe, and I knew we were destined to be friends after I tried her recipe for Cheesecake bars. Oh, and y'all have got to try her Cucumber Dip. It sounds so simple and basic, then you take a bite and.... KAPOW! Bells ringing, birds singing, maybe even a hallelujah chorus or two. No kidding...we double it every time now and it still disappears faster than we want it to! Anyhow, I have 2 very yummy Summer-time recipes to share with you today:  This FANTASTIC Mexican salad with a killer homemade Chili Lime dressing and colorful pico de gallo that will make you say “Mmmmm” with each and EVERY bite.  Now, it looks like a lot of ingredients, but don’t be alarmed, it comes together easily. Trust me, it is WORTH it!

Mexican Chicken Salad with Chili Lime Dressing

2 Tablespoons Fresh Lime Juice (about 2 Small Limes)
1 teaspoon Grated Lime Zest
1 teaspoon Chopped Garlic
½ teaspoons Chili Powder
½ teaspoons Salt
¼ teaspoons Ground Pepper
¼ teaspoons Cumin
⅓ cups Olive Oil
1 whole Red Pepper, Diced
1 whole Yellow Pepper, Diced
½ whole Red Onion, Diced
⅓ cups Fresh Cilantro, Snipped
1 can Corn, Drained (15 Ounce Can)
1 can Black Beans, Drained And Rinsed (15 Ounce Can)
1 whole Large Tomato, Diced
8 cups Mixed Greens Of Your Choice
4 whole Grilled Seasoned Chicken Breasts, Cubed
1 whole Hass Avocado, Mashed
1 Tablespoon Lime Juice
Mexican Cheese To Taste
Your Favorite Ranch Dressing
Crunchy Tortilla Strips (found them by the croutons)

Combine all of the dressing ingredients and mix well. Combine all of the pico de gallo ingredients and mix well. To assemble salad: place mixed greens on each plate, add a generous helping of pico, some grilled chicken cubes and cheese. Add a dollop of mashed avocado (mix the avocado with the lime juice and some salt, to taste) to the top of each salad. Drizzle with mostly ranch dressing and a small amount of the lime dressing. Top with tortilla strips.
Oh my goodness, do you know how some desserts just scream SUMMER!  Well, this is one of them! The texture will surprise you I think, I was expecting a bit more of a heavy cheesecake-like base, but man, you put this in your mouth and it just melts away.

Peaches and Cream Torte

2 cupsGraham Cracker Crumbs
⅓ cupPacked Brown Sugar
½ cupButter, Melted

1 Can (29 oz.)Sliced Peaches
1-¼ cupSugar, Divided
2 TablespoonsCornstarch
1 block (8 oz.)Cream Cheese, softened
2 cups Heavy Whipping Cream

Make 1 day in advance.
To prepare the crust, in a small bowl, combine graham cracker crumbs and brown sugar. Stir in butter. Set aside 1/4 cup topping. Press remaining crumb mixture onto the bottom and 1 inch up the sides of a greased 9-inch springform pan.
Place pan on a baking sheet. Bake at 350ºF for 10 minutes. Cool on a wire rack.
For the filling, drain peaches, reserving syrup in a 2-cup measuring cup. Add enough water to measure 1 1/2 cups. In a large saucepan, combine 1/4 cup sugar and cornstarch; stir in syrup mixture until smooth. Add peaches. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Cool to room temperature, stirring occasionally.
Meanwhile, in a large bowl, beat the cream cheese and remaining sugar until smooth. In a small bowl, beat cream until stiff peaks form; fold into the cream cheese mixture.
Spread half the cream cheese mixture over the crust. Top with half the peach mixture, repeat layers. Sprinkle with reserved crumb mixture. Cover and refrigerate for 8 hours or overnight. Remove sides of the pan just before slicing.
Serves 12.
Make this soon, it comes together quickly, looks pretty and tastes just like summer should: Light, fresh, cold, airy, fluffy and oh-so delicious!
