This Millionaire Pie is the ideal recipe for those who are looking to indulge in a slightly decadent and delicious treat that doesn’t require a lot of work and doesn’t need an oven to make! I will tell you that this is one dessert that everyone always wants the recipe for. Even the person who swears they hate coconut ends up loving it! The combination of graham cracker crust, coconut, pecans, sweetened condensed milk, cherries and pineapple makes it a perfect dessert that doesn’t feel ‘heavy’. Do yourself a favor, make this pie today and I promise, you will bookmark this recipe to make again and again!

Why is my Millionaire Pie runny?

Nearly all no bake pies are soft set. They don’t get super stiff like a baked cheesecake so bear that in mind.
Now, there are three possible reasons why your pie didn’t set up well. You didn’t use the lemon juice because maybe you thought you didn’t need it or it would make it tart. When you initially assemble it, the mixture may appear quite loose. However, the addition of freshly squeezed lemon juice is crucial as it aids in thickening it to the proper consistency. Also, use fresh squeezed lemon juice. The bottled stuff has a funky taste that may throw off the taste of your pie. Secondly, you just gotta give it time to set up (as with most no bake pies). There is no skipping that part. It needs a minimum of 4 hours but ideally overnight is best. Finally, you did not drain the pineapple well enough. It’s super important you squeeze as much juice out of that pineapple is possible so the extra juice doesn’t prevent the pie from setting up (see next question).

How do I drain the pineapple?

Properly draining the pineapple is crucial to avoid excessive moisture and making the pie too runny. You can do this by using a clean kitchen towel or cheesecloth to gently ring it out. Alternatively, pressing the pineapple into a fine mesh strainer with a spatula will help remove any excess juice.

Can I serve this frozen?

This Millionaire Pie would be phenomenal served as a frozen pie. The Cool Whip really helps bring that delicious texture.

Can I use the bigger graham cracker pie crust?

If you wish to use the graham cracker crust that includes an additional two servings, you certainly can. However, just know that the pie may not be as thick as it would be if you used the smaller pie crust. It’ll still be yummy though.

I don’t like coconut, can I leave it out?

Yes but keep in mind that the coconut also helps to thicken up this pie. It holds that filling up a bit (if that makes sense) so removing the coconut removes a bit of the structure. If you like coconut but don’t necessarily like the texture, try toasting the coconut first. This makes it a bit more crunchy which for some people, who don’t normally enjoy coconut, tend to prefer.

I don’t like maraschino cherries, can I leave them out?

The more substitutions you make to any recipe, the further you get away from the proper taste and texture it is supposed to have. You also remove that pretty pink color that the maraschino cherries give it. Like I said with the coconut above, when you remove the cherries, you are also removing some of the structure of the pie. WIth no-bake pies, there is no heat that sets the pie up so you are relying on filling ingredients to provide that. So yes, you can remove the cherries but you may not get the results you were expecting.

I don’t like nuts, can I leave out the pecans?

I only add these questions here, because inevitably, I get a ton of questions regarding any recipe that uses coconut, cherries or pecans because someone (or their hubby) doesn’t like them. Ideally I would tell you to just not make a recipe if it has a few ingredients you just don’t like. It just becomes so far from the original recipe that I just can’t vouch for it anymore and then someone gets upset with me because it didn’t turn out right. You can leave the nuts out but if you are also leaving out the coconut and/or cherries, I would say no. That would be too many ingredients being removed and it just won’t work. You can however substitute with another kind of nut you may enjoy.

How to store Millionaire Pie?

Leftover pie can be covered and stored in the fridge for up to a week. Or you can freeze it for up to 3 months.

INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)

  • canned pineapple – I get the kind in real juice but you could get the kind that is in syrup. Either way, you need to make sure it is drained REALLY well. See my FAQ (frequently asked questions) above to learn the best way to do that.
  • sweetened condensed milk – do not confuse sweetened condensed milk with evaporated milk or your pie will not be sweet and it will not set up. The cans look very similar and they are very near each other in the same baking aisle so please read the labels carefully.
  • sweetened coconut flakes – please see my FAQ above when it comes to the use of coconut flakes if you are not a coconut fan.
  • maraschino cherries – these not only give it texture but color as well. I have not made this with fresh cherries.
  • chopped pecans – you can substitute with chopped walnuts, chopped macadamia nuts or even chopped almonds if you prefer.
  • lemon juice – freshly squeezed is the best to use for this recipe. Bottled juice gives the pie a fake taste that many people can taste, so stick to fresh lemon juice.
  • maraschino cherry juice – this is just going to be the juice from the jar of the maraschino cherries.
  • whipped topping – I have not made this with ‘real’ whipped cream so I can’t tell you how well that works and sets up. What I love about Cool Whip is it is very stable so you don’t have to worry about it losing stability and getting runny.
  • 9-inch graham cracker crust – you can certainly make your own favorite homemade graham cracker crust.

HOW TO MAKE MILLIONAIRE PIE

Place the drained pineapple, condensed milk, coconut flakes, maraschino cherries, pecans, lemon juice, and maraschino cherry juice into a large bowl. Stir well to combine.

Fold in half of the whipped topping.

Add the filling to the graham cracker crust, it will look like a lot; use it all. Smooth out the top.

Cover and refrigerate for at least 4 hours or overnight. Slice and serve with the remaining whipped topping if desired.

Ingredients

  • 20 ounces canned pineapple (drained VERY well)
  • 14 ounce can sweetened condensed milk
  • ¾ cup sweetened coconut flakes
  • ¾ cup chopped maraschino cherries (dry them off before chopping)
  • ½ cup chopped pecans
  • ¼ cup fresh squeezed lemon juice
  • 2 Tablespoons maraschino cherry juice
  • 8 ounce tub whipped topping, divided use (Cool Whip)
  • 1 9-inch graham cracker crust

Instructions

  • Place the drained pineapple, condensed milk, coconut flakes, maraschino cherries, pecans, lemon juice, and maraschino cherry juice into a large bowl. Stir well to combine.

  • Fold in HALF of the whipped topping.

Notes

  • Please refer to my FAQ’s (Frequently Asked Questions) and ingredient list above for other substitutions or for the answers to the most common questions.
  • It will look very loose when you first put it together, but the lemon juice helps to thicken it up, so it is essential lemon juice is used and that it is freshly squeezed and that you give this a few hours to sit in the fridge to thicken up.
  • It is also very important to drain the pineapple well, or it will be too loose. You can ring it out with a clean kitchen towel or cheesecloth to make sure there is minimal juice left. Alternatively, you can press it into a fine mesh strainer with a spatula to remove the excess juice.
  • This would also be amazing served frozen.
  • Keep in the fridge for up to 1 week, freeze for up to 3 months.

    Hi Brandie,
    Your firm answers to the questions of leaving particular ingredients out have won me over. I must try this recipe and I hope to do it very soon. I had no intentions of leaving anything out, but your straight forward, truthful approach regarding getting further away from the original taste/texture/structure of the pie when substitutions or omissions are made has me convinced that I’ll make this “as-is” or I won’t make it.
