Millionaire Pie is a no-bake pie that features cherry, pineapple and coconut flavors making it a sweet treat that everyone will love! Plus it only takes about 5 minutes of prep!
Place the drained pineapple, condensed milk, coconut flakes, maraschino cherries, pecans, lemon juice, and maraschino cherry juice into a large bowl. Stir well to combine.
Fold in HALF of the whipped topping.
Add the filling to the graham cracker crust, it will look like a lot; use it all. Smooth out the top.
Cover and refrigerate for at least 4 hours or overnight. Then when ready, slice and serve with the remaining whipped topping, if desired.

It will look very loose when you first put it together, but the lemon juice helps to thicken it up, so it is essential lemon juice is used and that it is freshly squeezed and that you give this a few hours to sit in the fridge to thicken up.
It is also very important to drain the pineapple well, or it will be too loose. You can ring it out with a clean kitchen towel or cheesecloth to make sure there is minimal juice left. Alternatively, you can press it into a fine mesh strainer with a spatula to remove the excess juice.
This would also be amazing served frozen.
Keep in the fridge for up to 1 week, freeze for up to 3 months.
