Air Fryer Banana Bread

AN AIR FRYER QUICK BREAD RECIPE
The Air Fryer is a popular kitchen appliance with many uses – even baking! Yes, you can absolutely bake in the air fryer with just as tasty results as you would if you were to bake it in the oven. This Air Fryer Banana Bread has become one of my favorite ways to make banana bread. Instead of one large loaf, you will end up with mini loaves which I think actually works better for me. One for now and two for later! It gets nice and golden on the outside but still stays soft and moist in the outside. If you want to try our your air fryer for baking, then you absolutely have to make this Air Fryer Banana Bread recipe.
FREQUENTLY ASKED QUESTIONS:
This recipe will be using about 1 cup of mashed bananas so usually two large or 3 medium bananas. You want the bananas to have brown spots all over them because this will indicate that they are nice and sweet and perfect for baking!
For this recipe you will be needing mini loaf pans. They roughly measure 5 3/4 x 3 1/4-inches and hold about 2 cups of batter each.
This will make 3 mini loaves. Do not try making in a large loaf pan since it likely won’t fir. If you have a larger oven-style air fryer, you can certainly experiment but I would still recommend the mini loaf pans for more even baking.
For this recipe I used a 5.8 quart air fryer which is a standard size that most people own. I was able to bake 2 loaves at once so it will have to make these in batches.
I’ve tested these mini pans in the oven with this recipe at 350F and they took about 30 minutes to fully cook. Confirm doneness by inserting a toothpick into the banana bread. If it comes out clean, remove from the oven. If the batter is still wet in the center, increase cooking time. Times will vary depending on pan size.
If you are not a pecan lover you can swap out with chopped walnuts or chocolate chips or omit completely.
These can be stored in an airtight container where they will last at room temperature for up to 3-4 days. Banana bread can also be frozen, Freeze sliced or whole loaves wrapped in plastic wrap, then foil, and they will keep in the freezer for up to 4 months. Defrost in the refrigerator or on the countertop.

- all-purpose flour
- baking soda
- kosher salt
- granulated sugar
- overripe bananas (lots of brown spots)
- unsalted butter
- vanilla extract
- egg
- pecans
HOW TO MAKE AIR FRYER BANANA BREAD:
Grease three mini loaf baking pans and set aside. I like to spray with Baker’s Joy which is a nonstick baking spray that has flour in it. In a medium mixing bowl, mix together the flour, baking soda and salt. Set aside.
In a separate large mixing bowl, mash the bananas and mix with the granulated sugar until creamy.
Pour the melted butter into the banana mixture and mix well. Add the egg and vanilla extract to the banana mix and mix until just combined.
Add in half of the flour mixture to the banana mixture and stir until just combined. Pour in the remaining flour mixture and stir until the batter is combined well.
Gently stir in the chopped pecans into the batter.
Preheat the air fryer to 330F degrees. While the air fryer preheats, scoop the batter into your prepared mini loaf pans, filling about halfway full. (This will make 3 loaves, if using a slightly larger pan you will want to fill the pans about ⅔ full and end up with 2 loaves). Place the pans into the basket of your air fryer and bake on the air fry setting at 330 for 20-25 minutes.* (A toothpick inserted into the center of the banana bread loaf should come out clean when it’s fully done cooking).
When the banana bread has finished cooking, remove from the air fryer and let it cool fully in the pans before removing.
Slice and serve!

Notes
- Make sure you use overripe bananas, they have the most sweet flavor.
- This will make 3 mini loaves, you will have to cook in 2 batches.
