A FUN HAND HELD BBQ PIZZA

I’ve been having a lot of fun creating these handheld cup recipes. Like my Easy Chicken Parmesan Cups and my Philly Cheesesteak Cups! They are super simple recipes that turn your everyday ordinary meals into handheld dinners or appetizers. These BBQ Chicken Pizza Cups have to be one of my favorites. I love BBQ Chicken Pizza. It’s one of my favorite pizza flavors. If you want a fun and flavorful meal or snack, you have to make this BBQ Chicken Pizza Cup Recipe!

What is the best way to get shredded chicken?

You can bake your chicken or boil your chicken until it reaches an internal temperature of 165 degrees F and then shred. You can also buy pre-shredded chicken at the grocery store. Or buy a store-bought rotisserie chicken and shred.

What kind of BBQ Sauce should I use?

You can use any of your favorite BBQ sauce for this recipe. I tend to like a sweeter honey BBQ sauce.

Do I have to use crescent roll dough sheets?

No, if you cannot find them or don’t want to use them you can use regular crescent rolls. Make sure that they are sealed well at the perforations.

What cheese is best for this recipe?

We like the Colby Jack mixture but you can use your favorite cheese such as cheddar, mozzarella, Monterey Jack, etc.

Do I have to use red onion?

No, you can use any kind of onion that you like. Usually on BBQ Chicken Pizza, red onion is used so I like to use that.

How do I store leftovers?

These can be stored in an airtight container in the refrigerator for up to 3-4 days. They can also be frozen. Place fully cooked and cooled BBQ Chicken Pizza Cups in a freezer safe bag or container and they will keep frozen for up to 6 months. Let defrost in the refrigerator and reheat in the microwave or the lowest setting in your oven.

INGREDIENTS NEEDED: (FULL RECIPE AT THE BOTTOM OF THE POST)

  • unsalted butter
  • red onion
  • shredded chicken
  • bbq sauce
  • cilantro
  • crescent roll dough sheet
  • colby jack cheese
Ingredients needed: unsalted butter, red onion, shredded chicken, bbq sauce, cilantro, crescent roll dough sheet and colby jack cheese.

HOW TO MAKE BBQ CHICKEN PIZZA CUPS:

Preheat the oven to 375°F. In a medium skillet over medium heat, melt the butter. Add the onions and cook until softened, 5-8 minutes. 

Melted butter and red onion in saute pan.

Add the chicken, bbq sauce, and cilantro to the pan.

Mix to combine. Set aside.

Chicken and bbq mix all stirred together in a skillet.

Well grease 8 sections of a muffin tin with baking spray, set aside. Roll out the crescent dough on a clean work surface and cut it into 8 even sections. Gently press each piece of the dough into one of the greased sections of the muffin tin, repeat with all the pieces.

Taking 1/2 cup of the cheese, evenly distribute it to the bottom of each of the cups.

Add the chicken mixture on top of the cheese.

Top with another ½ cup of the cheese.

Taking the corners of the crescent dough, fold them over the top so it forms a little cup. 

Cups folded and sealed in muffin tin.

Top each one with the remaining cheese.

More cheese sprinkled on top of dough.

Bake for 15 minutes or until golden brown. 

Garnish with optional cilantro and serve with extra bbq sauce for dipping.

Ingredients

  • 1 tablespoon unsalted butter
  • 1 cup thinly sliced red onion 1/4th of a red onion
  • 2 cups shredded chicken
  • ¼ cup bbq sauce plus more for dipping
  • ¼ cup fresh chopped cilantro plus more for garnish
  • 1 roll crescent roll dough sheet
  • 1 ½ cups shredded colby jack cheese

Instructions

Notes

  • Regular crescent rolls can be swapped out for the dough sheets.
  • You can easily double this recipe, you will just need two muffin tins.
  • These can be frozen, see the tips above.
  • You can use any onions that you prefer.
  • Use your favorite bbq sauce for this.
  • Your favorite cheese can also be used.
