You can dress them up and transform them into something really special.

But what about boxed Pancake Mix?
I figured if I can do so much with a boxed cake mix, why not pancake mix?

So that’s just what I’m going to do with this recipe today.
It turns ordinary pancake mix into something special AND it is so simple to throw together,
especially if you have guests show up unexpectedly or you just want to whip something up
really quickly for brunch.
Chances are, you already have all the ingredients on hand you need to make this right now.

2 ½ cups Pancake Mix (mix that requires only adding water*)
1/3 cup sugar
½ cup mini semi-sweet chocolate chips
½ cup water
½ cup sour cream
½ teaspoon vanilla extract
(topping)
¼ cup sugar
½ teaspoon ground cinnamon
¼ cup walnuts or pecans (optional)
(optional glaze)
½ cup powdered sugar
1 tbsp. milk
Directions:
Preheat oven to 375F degrees.
Spray an 8 inch square pan or dish with non-stick spray
Combine pancake mix, sugar and chocolate chips in medium bowl. Then add water, sour cream and vanilla. Mix until combined. Batter will be very thick.
Using an ice cream scoop, shape dough into 9. 2-inch dough balls. Place in 3 rows of 3 each in your prepared pan.
Combine ¼ cup sugar, cinnamon and nuts (if using) in a small bowl. Sprinkle mixture over dough.
Bake 24-26 minutes until golden brown.
Whisk together powdered sugar and milk in small bowl. Drizzle glaze over warm cake.
Allow cake to cool for just a few minutes. Serve warm.

Cook's Note: I used the pancake mix that is the “Just Add Water” type of mix.
If you only have pancake mix that requires you to add milk, eggs & oil, then you will need to replace the ½ cup water in this recipe with 2 large eggs and 2 tablespoons of milk.
Then proceed with the rest of the directions.

Also, the glaze isn’t really necessary on this coffee cake at all.
We just liked the little added bit of sweetness it added to the cake.
