She learned how to make this rice in her Home Economics class at J.M. Tate High School in Cantonment, Florida.
Should I say it was back in the 60's?

I just love the smell of this when it is cooking.
There is just something about the smell of green peppers, onion and ground beef cooking that
instantly takes me back to my Mom's kitchen.
Smells have a way of doing that, don't they? T
hey can trigger a memory and instantly put you back in that certain place or time.
I suppose that is why so many of us like to recreate the dishes of our childhood.
We like to remember those days of hanging out with our parents and being carefree and young.

This dish is simple but a great addition to mealtime and it is
perfect for leftovers the next day.
Ingredients:
1 pound lean ground beef
1 can (15 oz) tomato sauce
4 cups, prepared white rice
1 green pepper, diced
1 medium yellow onion, diced
Salt & Pepper, to taste
1 cup shredded cheddar cheese (optional)
Directions:
In a large stock pot, add ground beef, green peppers and onion over medium high heat. Add a dash of salt and pepper to mixture. Cook until ground beef is brown and crumbled and veggies are tender. Drain excess grease.
Put ground beef mixture back into stock pot. Add prepared rice and can of tomato sauce.
Stir until thoroughly combined and heated through. Taste and check for seasonings at this point. I usually feel it needs just a bit more salt & pepper. Turn off heat and add cheese (if using) until melted. Stir mixture to combine and serve.
Cook’s Note: My Mom occasionally adds cheese to her rice to make it a bit more gooey and yummy.
If you are using boil-in-the-bag rice, you will need 2 bags of rice for this recipe. 2 cups of dry rice will make 4 cups prepared.

To reheat: put a cup or so of rice into a microwaveable-safe bowl. Sprinkle with about a tbsp. of water or chicken broth. Cover with paper towel and heat for about 1 minute. Stir to make sure it is evenly warmed through. Microwave for additional 20-30 seconds if necessary.

I can smell the peppers, onion and beef cooking from here. There's just not a lot that smells better than that combo. My husband is going to looooove this recipe. He loves Spanish rice in the restaurants and he loves it when it's not so "tomato-ey". Yours appears to be just "tomato-ey" enough for him. I have never attempted it at home but with your recipe now, I am going to surprise him. Thank you!

I still have some recipes from my own home ec class that I had in high school over a decade ago. It would be funny to think of my daughter posting on them in a few years, but when you've got a winner recipe you keep it! This spanish rice looks great.

ReplyDeleteSpeaking of our mother's names... my mom's name is Roxane which is beautiful on it's own but since she's a belly dancer she goes by Roxannah to sound more exotic. Haha! I love it! Spanish rice is one of those things that makes my stomach hurt just thinking of it. You know when you get drunk off a certain alcohol and can't stand the smell or sight of it? Spanish rice does that for me. I stuff myself off the stuff at my favorite Mexican restaurant and the stomach ache lingers in my mind for months. It's still lingering. In another month or so I'll be ready to give this a try!

ReplyDeleteBrandie, This is the EXACT recipe my sweet mama used for what she called "spanish rice" while we were growing up :) We still love it and now we fix it for our kids! I have never seen the recipe anywhere else, or heard anyone else call it "spanish rice". Maybe it's a southern thing. My mom grew up in Texas, a bit before yours, as she was a teen in the 40's. I just LOVE your blog and will be visiting A LOT to try your recipes :) I believe it was a God thing finding you today :)

ReplyDeleteJust found this via pintrest & looks great. I'm from the uk so we tend to have different names for things like mince rather than ground beef. What is tomato sauce? Is it like a pasta sause i.e. seasoned with herbs etc or more like passata (sieved tomatos)?

My mama grew up in Andalusia which is just a stone's throw away from Brewton! She used to make this too ~ the leftovers would go into a thermos for my school lunch the next day (yes I was one of those children that would take their lunch to school and my friends all wanted it).

ReplyDeleteMy grandmother used to make this when I was a child. My mother also made it when I was growing up and everyone always loved it! Our recipe uses tomato paste in the place of the tomato sauce and I sometimes add Rotel tomatoes and hot peppers! Great recipe!
