Strawberry Shortcake Cake (+Video)

Strawberry Shortcake Cake is a vanilla cake, topped with a sweet creamy frosting and finished off with a delicious fresh strawberry glaze!

AN EASY STRAWBERRY SHORTCAKE INSPIRED CAKE

Strawberry season is here! Who else gets excited to go strawberry picking?! This recipe for Strawberry Shortcake Cake is one of my most-requested recipe from family and friends. It’s a super fun take on the Southern Strawberry Shortcake recipe.

FREQUENTLY ASKED QUESTIONS:

Do I have to use a white cake mix?

No. You can use a yellow or French vanilla cake mix for this or even a Funfetti or Rainbow Chip cake mix! Chocolate might be a wonderful contrast of flavors too!

Where do I find the strawberry glaze?

You can usually find strawberry glaze in the fruit section of your grocery store. Most grocers keep it right next to the strawberries. You can also make your own strawberry pie glaze if you have a favorite recipe for it.

Can I make the cake from scratch?

Of course! This recipe is customizable to your tastes and preferences. One of my favorite white cake recipes is here.

How do I store leftover cake?

This cake does need to be kept refrigerated. Cover tightly and it should keep for up to 3 days in the refrigerator. This cake can be frozen but I only recommend freezing without the strawberry topping on.

INGREDIENTS NEEDED: (FULL RECIPE AT THE BOTTOM OF THE POST)

  • white (or yellow) cake mix
  • egg whites, oil and water
  • cream cheese – see my post on How to Soften Cream Cheese Quickly
  • powdered sugar
  • whipped topping (COOL WHIP)
  • strawberry glaze
  • fresh strawberries

HOW TO MAKE STRAWBERRY SHORTCAKE CAKE:

Make cake according to package directions for a 9×13-inch baking dish.

Allow the cake to cool. Then make the next layer. In a mixing bowl, combine softened cream cheese with powdered sugar until smooth. Sir in thawed whipped topping. Mix until combined.

Smooth over cooled cake.

 In a bowl combine the strawberry glaze with the strawberries.

Isn’t this just a pretty and bright cake? And it tastes so good too! Slice and serve. This cake needs to be kept refrigerated.

Ingredients

  • 15.25 ounce box white cake mix
  • additional ingredients to make cake; eggs, oil and water
  • 8 ounce package cream cheese, softened to room temperature
  • ½ cup powdered sugar
  • 8 ounce container whipped topping (COOL WHIP), thawed
  • 13.5 ounce container premade strawberry glaze
  • 3 cups fresh strawberries, hulled and cut into bite size pieces

Instructions

  • Prepare white cake according to package directions for a 9" x 13" baking dish. Allow the cake to cool.
  • Then make the next layer. In a mixing bowl, combine softened cream cheese with powdered sugar until smooth.
  • Stir in thawed whipped topping and combine well.
  • Smooth over the cooled cake.
  • In a bowl combine the strawberry glaze with the sliced strawberries.
  • Spread this mixture on top of the cake.
  • Slice and serve.

    Made this cake for my husband’s birthday today. My kids said it was the best cake I’ve ever made. My only adjustment: fresh strawberries mixed with honey and I didn’t use any glaze. Still sweet and yummy! Thank you.

  4. Can you poke holes into the cake and pour the glaze over it and then top it with the frosting and fresh strawberries? Or is the glaze too thick to be poured over the cake?

    This recipe looks wonderful and I would love to make it for a ladies group, however I have a question about the additional ingredients for the cake mix. Are they used instead of the ingredients called for on the box or as additional ingredients, and what are the amounts?

    Made this deliciousness the other night for a family get together. Altered it in a different way by making 2-9" circle cakes, layered with the whipped topping mixture and strawberries. The results? Let's just say…there were no leftovers. It was a HUGE hit.

    Although unusual, I think I will be making this for a thanksgiving dessert to bring to a relative's house! I think it'll taste light and refreshing after gorging on all the heavy and fillings foods during dinner! I don't care if it's not season appropriate! (:

      I just cut a piece this morning. My husband and I shared it. It is delicious! Will definitely make this again. Our local strawberries will be coming in in just a couple of weeks, and will give me the opportunity to use fresh ones for this recipe.

    I've been making a recipe very similiar to this one for almost 50 years. I would make it in layers in round or square pans and sometimes I wouldn't frost the sides and make it look more like a torte. I would freeze it and slice it with a warm knife. It was my mother-in-law's recipe and my husband and my children's birthday favorite! It was also great to keep one in the freezer for unexpected company.

    I have made this cake twice. The first time the family loved it sooo much. But we like less cake and more filling, so I cut the 9X13 cake into two layers and put the cream cheese mixture and the strawberries in the middle and again on the top layer. So good my family says it's the best cake they ever tasted. Love your recipe.

    It is also very good with blueberries and blueberry glaze. I've always used sliced angel food cake as the bottom layer.
