Ritz Cracker Chicken Casserole (+Video)
Ritz Cracker Chicken Casserole has only 6 ingredients! It is a family favorite! Creamy deliciousness with a crunchy Ritz cracker topping! So good!
CREAMY CHICKEN CASSEROLE
This casserole is a go-to classic favorite. It’s one of those recipes that can be whipped up quickly and you don’t have to buy a long list of ingredients to make it. It can even be made ahead of time and frozen to eat for later.
WHAT DO I SERVE WITH THIS CASSEROLE?
I love to serve this with some fresh veggies like steamed broccoli, corn or Green Beans. You can also add those veggies directly into the casserole if you want. Also, a yummy green salad with lots of veggies would be perfect!
CAN I FREEZE RITZ CHICKEN CASSEROLE?
I can never have enough chicken recipes. But sometimes you don’t need a big ole casserole. So, you can split this recipe and put it into two smaller pans. Make one now and freeze on for later. Like with all freezer meals, it’s super important that you wrap it up well so you’re not dealing with freezer burn later on.
WHAT OTHER SEASONINGS CAN I USE?
You can certainly have fun with this casserole and add different seasonings and flavors. You could add onion powder and garlic powder to the cream mixture. Those are the most common seasonings most people have on hand. You could certainly use pretty much any seasoning that you would use on chicken.
INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)
- cream of chicken with herbs soup – you can use the regular cream of chicken without herbs or you can use cream of mushroom as well (or you can make your own from scratch and you can adjust the level of sodium and/or herbs that are used).
- sour cream – you can substitute with plain Greek yogurt – a lot of people have asked about substituting mayonnaise and I have not tried that so I can’t say how that would turn out.
- green onion – this is optional if you don’t like green onion, you could also substitute with regular onion or a shallot but it will be a stronger onion flavor than green onion.
- store-bought rotisserie chicken – I find this easiest but you could use leftover cooked chicken or you could use canned chicken or you could boil or roast some chicken.
- Ritz crackers – you can use regular saltine crackers or club crackers, if you want to reduce sodium you could use unsalted crackers.
- salted butter – if you want to reduce sodium content, you could use unsalted butter.
HOW TO MAKE RITZ CRACKER CHICKEN CASSEROLE:
Preheat oven to 350f degrees. Spray a 2.5 quart baking dish (or a 9×9 square baking dish) with non-stick cooking spray. In a large bowl, mix together the soup, sour cream and green onion.
Then stir in chicken.
Spread mixture into the prepared dish. In that same bowl, combine crushed crackers with melted butter.
Sprinkle the cracker mixture over the casserole. Bake for about 25-30 minutes until the cracker topping is golden brown and the casserole is bubbly.
Serve with your favorite vegetable or salad!

What herbs do you suggest using if you don’t have the cream of chicken with herbs?
Gotta make this one for sure! Thanks for the recipes.
Hope you love it Janie!
Do I cook chicken before I put in baking dish? I have frozen chicken breast right now.
This looks great! I think I will add a can of peas & carrots to it! Thanks for the recipe!
Someone asked for a vegetable side dish. I was wondering if adding some frozen peas to this would be good.?
Can you make this ahead and freeze?
I don’t see why not! You’ll have to cook it a bit longer since you’ll be cooking from frozen 🙂
Brandie I just have to tell you I love this recipe. Fast, simple and great tasting. The only change I made was instead of regular Ritz, the only thing I had on hand were the garlic butter Ritz. They were wonderful with just a hint of garlic in the topping. Thank you so much for sharing with us.
Oh wow – I love happy accidents like that! I’ll have to try that next time!! Thank you SO much Kris!
I’m confused. you said one cup (1/2 stick) butter. those are not equivalent.
It is one stick (1/2 cup) butter 🙂
Thank you sooo much. Sounds much better than the version I make. Love all your recipes!
Thanks for your kind words! Hope you love this one 🙂
Love this comfort food casserole. I add peas in with the chicken mix, and a little parmesan cheese mixed in with the Ritz. Yum
Thank you

Hi Marie! Thanks for the feedback! I’ll try to work on that!
Do you think those precut frozen beans might work? Also have you tried preparing this ahead of time to be baked the following day? I want to make this for my dear friend’s funeral tomorrow but only have time to prepare it today.
Hi Rachel! I am so very sorry to hear of your loss! Please accept my condolences! I definitely think that would work and I think you could certainly prepare it in advance and cook the next day!

Laurel Ryan
Ooooooh good suggestion Laurel! My Mom actually orders from Schwann’s. Good idea!
I make this and love it. Sometimes I use Cheese Its instead of Ritz Crackers. It just depends on which one I have on hand.????
Norma -that is genius!! Love that!

I make something similar to this but not with sour cream adding sour cream sounds amazing definitely going to try it this way next time!
Hope you love it! I promise it is not overly tangy! 🙂
I have made this for years we call it poppy seed chicken . we add poppy seeds to the top of the ritz crackers as always you can never have too much cheese!
Oh yes! I’ve heard of that! Very similar – you are right. So good! And yes, no such thing as too much cheese in my book! 🙂
This is a great tasty recipe. I added a little pasta, already cooked. Nummy!
Can I use canned chicken if I drain it?
This sounds awesome! I love your recipes and I don’t even like to cook!
Ha – I love it Jeanne – thank you!!
My store doesn’t carry cream of chicken with herbs soup, just cream of chicken. What herbs and spices can I add to plain cream of chicken soup to create the same flavor?
Mine doesn’t either. I just use the plain one. I add some frozen peas and it tastes great! We like this recipe. And I love that I discovered country cook because it’s easy and the types of food we eat..the sweet potatoe casserole and apricot chicken are great too!
Try to add dry ranch dressing mix.
I added onion powder, garlic powder, parsley, salt, pepper. I just had regular cream of chicken soup as well. Also, I did half the sour cream and the other half of it I did mayonnaise. It makes it a lot creamier.I also added corn. It was perfect.
YUM! I love the additions you made!
