Ritz Cracker Chicken Casserole (+Video)
Ritz Cracker Chicken Casserole has only 6 ingredients! It is a family favorite! Creamy deliciousness with a crunchy Ritz cracker topping! So good!
CREAMY CHICKEN CASSEROLE
This casserole is a go-to classic favorite. It’s one of those recipes that can be whipped up quickly and you don’t have to buy a long list of ingredients to make it. It can even be made ahead of time and frozen to eat for later.
WHAT DO I SERVE WITH THIS CASSEROLE?
I love to serve this with some fresh veggies like steamed broccoli, corn or Green Beans. You can also add those veggies directly into the casserole if you want. Also, a yummy green salad with lots of veggies would be perfect!
CAN I FREEZE RITZ CHICKEN CASSEROLE?
I can never have enough chicken recipes. But sometimes you don’t need a big ole casserole. So, you can split this recipe and put it into two smaller pans. Make one now and freeze on for later. Like with all freezer meals, it’s super important that you wrap it up well so you’re not dealing with freezer burn later on.
WHAT OTHER SEASONINGS CAN I USE?
You can certainly have fun with this casserole and add different seasonings and flavors. You could add onion powder and garlic powder to the cream mixture. Those are the most common seasonings most people have on hand. You could certainly use pretty much any seasoning that you would use on chicken.
INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)
- cream of chicken with herbs soup – you can use the regular cream of chicken without herbs or you can use cream of mushroom as well (or you can make your own from scratch and you can adjust the level of sodium and/or herbs that are used).
- sour cream – you can substitute with plain Greek yogurt – a lot of people have asked about substituting mayonnaise and I have not tried that so I can’t say how that would turn out.
- green onion – this is optional if you don’t like green onion, you could also substitute with regular onion or a shallot but it will be a stronger onion flavor than green onion.
- store-bought rotisserie chicken – I find this easiest but you could use leftover cooked chicken or you could use canned chicken or you could boil or roast some chicken.
- Ritz crackers – you can use regular saltine crackers or club crackers, if you want to reduce sodium you could use unsalted crackers.
- salted butter – if you want to reduce sodium content, you could use unsalted butter.
HOW TO MAKE RITZ CRACKER CHICKEN CASSEROLE:
Preheat oven to 350f degrees. Spray a 2.5 quart baking dish (or a 9×9 square baking dish) with non-stick cooking spray. In a large bowl, mix together the soup, sour cream and green onion.
Then stir in chicken.
Spread mixture into the prepared dish. In that same bowl, combine crushed crackers with melted butter.
Sprinkle the cracker mixture over the casserole. Bake for about 25-30 minutes until the cracker topping is golden brown and the casserole is bubbly.
Serve with your favorite vegetable or salad!

Will this be ok to leave out the sour cream? I do not like the tanginess that you have when a dish calls for this. Bottom line, I just do not like sour cream. Think I could sub something?
Thank you or one of your readers.
Gran
Hey Gran! My husband hates sour cream but eats this. I think it’s because he doesn’t know what’s in it. Ha! I’ve honestly only ever made it this way. Is there a substitute you would normally use for sour cream?
I substituted the canned cheddar cheese for the sour cream. It was AMAZINGGG. I didn’t use a whole cup though. I used about 3/4 of the can.
Love it! Thanks so much Amanda!
I know a couple of people have asked this, but I haven’t seen an answer. What herbs do you add of you can’t find cream of chicken with herbs?
I could not find the cream of chicken soup with herbs so I added 1/2 tsp of Italian seasoning. It was very tasty.
This recipe is soooo good!!! I think the
Sour cream really makes it!! The only
thing I do differently is boil fresh chicken
and cut it into chunks. That way I have
Chicken broth for chicken noodle soup
for the next day. 😉
I made this ahead of time. I’m going to refrigerate this and cook later this evening. Should I cook it for the same amount of time? Or longer?
Hi Michelle! You’ll probably need to cook it a little longer. Just because you are cooking it from a colder temperature. 🙂
Absolutely delicious! I love to cook, but I’m single so sometimes I get tired of eating leftovers for a couple of days. I don’t see that happening with this!
Great recipe! Loved it with the cheddar cheese added.
My Mom has made this casserole for years and I can’t find the recipe so searched and found yours, I think this is either exact or very similar to hers with the exception that she adds a can of peas and carrots. I have made it through the years and to make it super easy have used canned chicken. I would never have thought to do that but a friend owns a restaurant that makes the world’s best chicken salad and she told me so uses canned chicken!! So I decided to try it in this dish, it works great and well, taste like chicken! I recently found bacon flavored Ritz so will be using that as topping after all, everything’s better with bacon and have never added cheese so bacon and cheese topping, is really going to put this one over the top!! Thanks for the recipe!
Oh that sounds amazing! Let us know how it turns out for you.
This sounds so good can’t wait to try it. I’m always looking for recipes with chicken it’s just about the only meat I even eat anymore.
Do you think it would be fine to cook this ahead of time with the crackers on top, refrigerate, and then cook later that night?
I have made this ahead of time but waited until cooking to add crackers. When taking this uncooked to friends I include a small bag with the topping and instructions on how to top with crumbs and bake. I don’t know for sure but have always thought the topping would turn to a big soggy mess if left too long before cooking so always wait until right before cooking but then again with the butter coating the crackers it might be just fine. I just haven’t ever been willing to take a chance on missing the crunch!. Hope this helps.
Loved this casserole. Easy to do. I cooked my own chicken. This is a keeper.
I found this on Pinterest. I substituted the sour cream with plain greek yogurt. So good!!
I only have cream of chicken soup on hand. Am I able to replace the herb soup w that or what herbs do i put in?
I make something similar, just add another can of the soup and a small bag of mixed veggies. Definitely trying it with the sour cream! Yum!!
Oh this sounds delicious!! I am making this tonight!!!
I made this and added 2 cans of mixed vegetables (vegall) it turned out great.
I made this today. It was GREAT! I added a little celery seed and garlic powder to it. I will make this again next week for our church dinner. Thank you for this recipe
I am going to prepare this as a freezer meal for my son’s teacher who is having surgery. Any idea on how long I should tell her to bake it from frozen ? Thanks!
Would I double this for a 13×9 pan? Thank you in advance!
Hi Kara, I would double it, yes 🙂
Can you use a boneless, skinless chicken breasts?
Absolutely!
I loved this recipe. I added celery slivered almonds, and cheese to the mixture. Thanks for sharing!
I have made this twice in the last 2 weeks. It is one of the best chicken casseroles I have ever eaten. Thanks for posting it
It is a family favorite for sure. Glad it was such a hit with your family 🙂
I am making this now and wanted to know do I need to use a can of milk or water with the cream of chicken.
No milk or water needed
I was reading your blog and you were explaining how and what it takes to keep this blog going and the time you have put into this. I just want to say thankyou. I am not a patient person so blogging would def. not be for me. Thank God we have people like you to do the work for us. Yes, it does take alot of time and def. the effort to make a fantastic site. Thankyou for all your hard work and thank God I came upon this site.
The kids didn’t care for it… But all of the adults in the house loved it! Planning to make this dish again for a gathering. ????
Thanks so much Melody! We’ll keep working on the kiddos 😉
I have been making this for years as it is my youngest son’s favorite meal. I do have to substitute Tofutti Sour Supreme (tofu based sour cream substitute) for the sour cream as my husband is lactose intolerant. I can push him a little with the soup but not with that amount of sour cream. I have to say, we can’t tell the difference and it is delish!
Just put this in the oven for dinner tonight. ….I used garden vegetable Ritz and added parmesan cheese and a dash or 2 of poppy seeds. To the cracker mixture.
