SUPER SIMPLE OMELET RECIPE
Today I am sharing one of my favorite quick and easy breakfasts. We all love this because it can easily be tailored to our individual tastes and can be made simply or with all the fixins! I am excited to share it because it is absolutely something you can make every day without a lot of fuss. Personally, for me, if I start the day with a protein-filled breakfast, then it makes me WAY less hungry for the rest of the day. So this is healthy but also super yummy!

As a basic recipe, it is low carb. It should be noted that the carb count given in the recipe card below is strictly for the eggs, water, salt and pepper. Anything you add into the recipe will potentially add to the carb count. These are strictly ideas for you. Please use your own trusted nutritional calculator to figure out the carb count for every add-in you decide to use in your omelet.
It’s important to use a microwave-safe mug. Avoid using mugs with metallic accents or ones that are not marked as microwave-safe. A standard 8-ounce mug should work well.
It is safe to cook eggs in the microwave as long as you use a microwave-safe mug and cook them for the appropriate amount of time. However, be careful when removing the mug from the microwave as it will be hot.
Shredded cheese, chopped vegetables, diced ham or bacon, cooked sausage, or herbs and spices. This is a great recipe to make when you have leftover ham. Keep in mind since this is an individual serving, everybody can make their own with whatever add ins they want to include. This is a fun way to include the kiddos in a fun, family kitchen activity and a great way to get them started in learning to help in the kitchen.
Yes, you could. But, I will say this is best when you first make it. Store leftovers how you would with any other omelet, in an airtight container in the fridge for a few days.
INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)
- eggs – I usually just use large eggs for this.
- water – this helps to make the eggs light and fluffy.
- salt and pepper – add whatever seasonings you prefer. If you need to keep this low sodium then just don’t add the salt or use a seasoning like Mrs. Dash.
- any additional add-ins you enjoy: ham, bacon, shredded cheese, green peppers, onions, etc.
HOW TO MAKE MICROWAVE OMELET IN A MUG
Spray a microwave-safe mug with nonstick cooking spray. Crack 2 eggs into the mug. Add one tablespoon of water. Stir well with a fork.
Season eggs with salt and pepper.
Add in desired fillings.
Microwave for 1-2 minutes (until eggs are cooked through and fluffy.)

Optional filling ideas:
- green pepper, finely diced
- yellow onion, finely diced
- ham, finely diced
- cooked bacon, crumbled
- shredded cheddar cheese
Instructions
- Spray a microwave-safe mug with nonstick cooking spray.
- Crack 2 large eggs into the microwave-safe mug.
- Add 1 Tablespoon water. Stir well with a fork.
- Season eggs with salt and pepper, to taste.
- Add in desired fillings (green pepper, finely diced, yellow onion, finely diced, ham, finely diced, cooked bacon, crumbled and/or shredded cheddar cheese)
- Microwave for 1-2 minutes (until eggs are cooked through and fluffy)

I am 5 weeks post op (sleeve) with a maximum daily allowance of 25g of fat.
This omelette has 24g of fat, and as such is completely unsuitable for a bariatric diet.
Ian, this recipe was not specified for a bariatric diet. Nowhere do I say this is specifically for a bariatric diet. It says low carb because it is. I mention this at least 3 times in the recipe that if you are just using the base recipe of eggs and water, it is very low carb. You can add whatever you want to the eggs to make it suit your needs. I added onion and green peppers, etc which affects carb count. You can add nothing.

Ok to use milk. I have been making these for years. If you have a newer high powered microwave (1100 watt) decrease your setting to 70 or 80 % to prevent the eggs from exploding.
Love this! I get to work at 6am so i hardly ever have time for breakfast at home – this is going to help out so much. Breakfast at the office everyday…yay!
