This recipe for No-Bake Butterscotch Haystacks is a fun and easy treat that everyone loves. Only 4 ingredients and perfect for gift giving!
NO-BAKE BUTTERSCOTCH HAYSTACKS RECIPE
If you've never eaten butterscotch haystacks, you are missing out. This is one of those treats that I make every single holiday to give out to family and friends. It's part of my gift-giving edible gifts that we all look forward to making and eating. People get mad if I forget the haystacks!
TIPS FOR MAKING HAYSTACKS:
- Be careful when melting the butterscotch morsels. If melting them in the microwave, melt them slowly, in 15 second intervals in the microwave. Stirring in between each interval. If using the stove top, use a double boiler or set the temp extra low and stir constantly.
- If you find your morsels are beginning to overcook, you can save the batch by adding the peanut butter a little early.
- These store great in an airtight container for up to 3 days but stay even more fresh when stored in the fridge. You can also freeze them in a freezer-safe bag for several weeks.
INGREDIENTS NEEDED: (FULL RECIPE AT THE BOTTOM OF THE POST)
butterscotch chips
creamy peanut butter
chow mein noodles
roasted peanuts (optional)
HOW TO MAKE BUTTERSCOTCH HAYSTACKS
Prepare a baking sheet by lining with wax paper. Set aside. In the microwave or medium saucepan over low heat, melt the butterscotch chips until smooth.Remove from heat and stir in the peanut butter until well combined. Add the chow mein noodles and roasted peanuts.
Stir gently until combined.
Drop rounded tablespoon scoops of the mixture on the prepared baking sheet. Allow to set for several hours or overnight. You can also speed up this process by placing them in the refrigerator.

I tried to make these 1 year from memory & forgot the peanut butter. I had a delicious batch of cruncy butterscotch peanuts
My mom always made these and growing up, I loved them! Only difference is that she uses marshmallows instead of peanuts. The squishy texture mixed with the crunch of the chow me in noodles is SO good!
