Ground Beef Stroganoff
This is the best Ground Beef Stroganoff. It’s a flavor-filled creamy hamburger gravy that is delicious served over egg noodles. Budget friendly, family friendly!

Beef stroganoff with ground beef is definitely a comfort food dish. For me, it’s up on the list near fried chicken and okra. I love the humble roots of stroganoff. It isn’t pretentious, it uses simple ingredients and it is a cheap dish that can easily feed your entire family. Just some ground beef, seasonings, an easy gravy mix and boom – dinner is served!


I have made this recipe for years and I am sorry that I waited so long to say thank you for such an amazing keeper of a recipe! It’s an easy version of a childhood favorite, and I almost always have the ingredients on hand! I get asked for this recipe a lot!

I always serve ground beef stroganoff on top of egg noodles. Then I like to have a nice vegetable side dish like some Maple Glazed Carrots, or Italian Green Beans.
Sour cream is a pretty integral in flavor to beef stroganoff. You can substitute with plain Greek yogurt. Or you can leave it out if you just really don’t like the taste. In this recipe I use cream of mushroom soup so it is plenty creamy without the sour cream if you really just can’t stand the flavor.
You want to use one that has some fat. That’s where you get good flavor. So I generally use an 85/15 ground beef. You don’t need anything fancy here. Use what is within your budget. If you want to avoid draining any grease, try using a lean meat like 90/10.
Leftovers can be stored in a covered container in the refrigerator for up to 3 days. I don’t recommend freezing as sometimes the creamier ingredients tend to separate when you go to reheat it.

Ingredients Needed: (See Recipe Card Below For The Full Recipe)
- ground beef – if you use a lean meat, you won’t really have any grease to drain. You could also easily make this with ground chicken or turkey.
- onion – if you don’t like onion, just leave it out.
- garlic – this recipe works well with freshly minced garlic or the jarred garlic (whichever is easiest or whichever you prefer.)
- salted butter – you can use unsalted butter.
- all-purpose flour
- beef broth – if you want to keep the sodium down, try using low or no salt beef broth.
- sour cream – this is a love/hate ingredient but it is essential to any stroganoff recipe so I don’t recommend skipping it. You could substitute with plain Greek yogurt or creme fraiche.
- cream of mushroom (or chicken) soup – I have recipe for Homemade Cream of Mushroom Soup and Homemade Cream of Chicken Soup if you prefer homemade. Use whatever flavor you like.
- egg noodles

How To Make Ground Beef Stroganoff
Bring a pot of water to boil and begin to cook egg noodles according to package directions. In a large skillet over medium high heat, brown ground beef along with the onions and garlic until thoroughly cooked. I like to leave chunks of ground beef and not break it up too small. Drain ground beef to remove excess grease from pan. Put pan back on stove over medium heat (don’t add the ground beef back in yet.) Add butter to pan and let it melt.

Then add flour to pan, whisk and let it absorb butter. Now add beef broth and whisk vigorously to remove any lumps, turning the heat up to high, bringing it to a boil for 2-3 minutes until you see it thicken slightly.

Bring temperature down to medium and whisk in sour cream and cream of mushroom soup. Stir until mixture is thoroughly incorporated. Add salt and pepper. Keep tasting mixture until it is seasoned the way you like. I probably use a good teaspoon and half or more of salt and pepper. If it gets too thick on you, just add a tad more beef broth. Add ground beef back to mixture. Stir and then allow to simmer for about 5 minutes.

Serve over egg noodles.

Easy Ground Beef Stroganoff
Ingredients
- 1 pound ground beef
- ½ cup diced yellow onion,
- 1 teaspoon minced garlic (about 1-2 cloves)
- 3 Tablespoons salted butter
- 3 Tablespoons all purpose flour
- 1 ½ cups beef broth
- 1 cup sour cream
- 10.5 ounce can cream of mushroom soup
- salt and pepper, to taste
- cooked egg noodles (for serving, optional)
Instructions
- In a large skillet over medium high heat, brown 1 pound ground beef along with 1/2 cup diced yellow onion, and 1 teaspoon minced garlic until thoroughly cooked and crumbled.

- Drain ground beef to remove excess grease from pan. Put pan back on stove over medium heat (don't add the ground beef back in yet.) Add 3 Tablespoons salted butter and allow it to melt.

- Then add 3 Tablespoons all purpose flour to the pan, whisk and let it absorb butter.

- Add 1 1/2 cups beef broth and whisk vigorously to remove any lumps, turning the heat up to high, bringing it to a boil for 2-3 minutes until you see it thicken slightly.

- Bring temperature down to medium and whisk in 1 cup sour cream and 10.5 ounce can cream of mushroom soup. Stir until mixture is thoroughly incorporated.

- Add salt and pepper, to taste. Keep tasting mixture until it is seasoned the way you like. If it gets too thick, just add a tad more beef broth.
- Add ground beef back to mixture until reheated.

- Serve over cooked egg noodles and enjoy!

- This can be served over rice or over toast or however you enjoy it!
- We like to serve this with a salad or steamed veggies and sometimes some buttered bread.
- This can be made with ground sausage, ground chicken or ground turkey. If making with ground chicken or turkey, you may want to use chicken broth instead of beef broth.

First rating I have left for a recipe (61 yrs old)! An experienced cook that loves to cook. This recipe is absolutely perfect! I used the “cream Of chicken soup with herbs” I don’t care for mushrooms. I have made this recipe at least 8-10 times and so delicious every time! We do add some crushed red pepper to the hamburger while it’s browning and top it with fresh grated parmesan cheese. Very easy recipe! Thank you for sharing. It’s hard to find stroganoff recipes with option of meat and not using mushrooms!

I doubled the recipe and also added 2 teaspoons of worcestershire sauce, which really added to the flavor. I used gluten-free fettuccine noodles that I had on hand. my pleasure….I probably should have mentioned where I get my ingredients. A lot of people don’t know where to get a lot of the items for gluten-free cooking. I’ve been doing this for a few years now though. I get my cream of chicken and cream of mushroom soups at Wal-Mart. They have their own brand. They also started making cream of tomato, which I use in my meatloaf. I ordered the gluten-free worcestershire sauce on Amazon. you wouldn’t think something simple as that would have gluten it!

We were looking for a quick, tasty meal last night and found this recipe. Made almost exactly as shown in the recipe–I added a can of mushrooms to supplement the soup–and it was absolutely delicious. And on the table start to serve in about 30 mins., prep included.

Tasty, easy recipe. I used this with a few modifications, according to what I had available. I had only 3/4 pound of hamburger but I had half a pint of white mushrooms, so I sliced the mushrooms, browned them in butter in the hot pan before I made the sauce, then added them back in with the meat later. I also had no egg noodles, but had a package of bow tie Farfalle noodles which worked great. The surface area of the bow ties collected the sauce easily. Voted as a “will make again!” recipe now in a place of honor on the side of the refrigerator.
This is one of my go to recipes for a quick, hearty, rich delicious dinner! Normally i put it over egg noodles but i only had Penne so i used that tonight. Its seriously so good!!

I doubled the recipe and added 1 envelope of Lipton’s beefy onion soup mix which gave it more of a beefy flavor. Amazing recipe.
Excellent recipe – we loved it! After adding the flour for the roux, I cooked it until it started browning as that adds some delicious flavor and might help those who thought that this recipe needed something more for favor. Other than that I followed the recipe as-written and everyone loved it. It’s so similar to what my mother would make growing up that eating it was just like being at home when I was a kid for a good family meal.
Campbells beefy mushroom is a stock item in my pantry. Hard to find in the stores since covid hit. I now buy by the case thru amazon, same price, delivered too. They also make a chicken mushroom that is great as well. ( pre cook your lightly seasoned chicken, wisk in pan drippings to the soup with some chicken broth)Worcestershire, garlic, onion, parsley, a splash of soy sauce, alittle kitchen bouquet really balance out this stroganoff sauce.. Secret ingredient is just a very small amount of bay leave powder. If the sauce is too thin add in alittle instant mashed potatoe flakes. Too thick add some beef broth.
Both these soups are great gravy stretchers. I feed 6-7 adults and a 4 yr old, plus fall ins each night and love it. Thank God i’m retired.

You could use plain Greek yogurt. You could technically skip it but you won’t have that same rich creaminess but it will work. 🙂

Substituted sausage for ground beef, plain greek yogurt for sour cream, and cream of celery for cream of mushroom and it was delicious. But then I am not a picky eater and that’s what I had on hand.
