Ground Beef Stroganoff
This is the best Ground Beef Stroganoff. It’s a flavor-filled creamy hamburger gravy that is delicious served over egg noodles. Budget friendly, family friendly!

Beef stroganoff with ground beef is definitely a comfort food dish. For me, it’s up on the list near fried chicken and okra. I love the humble roots of stroganoff. It isn’t pretentious, it uses simple ingredients and it is a cheap dish that can easily feed your entire family. Just some ground beef, seasonings, an easy gravy mix and boom – dinner is served!

I always serve ground beef stroganoff on top of egg noodles. Then I like to have a nice vegetable side dish like some Maple Glazed Carrots, or Italian Green Beans.
You can substitute with plain Greek yogurt. Or you can leave it out if you really don’t like the taste. In this recipe I use cream of mushroom soup so it is plenty creamy without the sour cream.
You want to use one that has some fat. That’s where you get good flavor. So I generally use an 85/15 ground beef. You don’t need anything fancy here. Use what is within your budget.
Garlic! Garlic and onion will add so much flavor to any stroganoff recipe. Plus, taste it as you go to make sure you have added plenty of salt and pepper. I find I usually find it needs a bit more pepper. Also, if you enjoy mushrooms, try adding some cooked (or caned) sliced mushrooms to this dish.
Leftovers can be stored in a covered container in the refrigerator for up to 3 days. I don’t recommend freezing as sometimes the creamier ingredients tend to separate when you go to reheat it.
INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)
- ground beef
- onion
- garlic
- salted butter
- all-purpose flour
- beef broth
- sour cream
- cream of mushroom (or chicken) soup
- salt and pepper
- egg noodles
HOW TO MAKE GROUND BEEF STROGANOFF:
Bring a pot of water to boil and begin to cook egg noodles according to package directions. In a large skillet over medium high heat, brown ground beef along with the onions and garlic until thoroughly cooked. I like to leave chunks of ground beef and not break it up too small.
Drain ground beef to remove excess grease from pan. Put pan back on stove over medium heat (don’t add the ground beef back in yet.) Add butter to pan and let it melt.
Then add flour to pan, stir and let it absorb butter.
Now add beef broth and whisk vigorously to remove any lumps, turning the heat up to high, bringing it to a boil for 2-3 minutes until you see it thicken slightly.
Bring temperature down to medium and whisk in sour cream and cream of mushroom soup. Stir until mixture is thoroughly incorporated. Add salt & pepper. Keep tasting mixture until it is seasoned the way you like. I probably use a good teaspoon and half or more of salt and pepper. If it gets too thick on you, just add a tad more beef broth.
Add ground beef back to mixture. Stir and then allow to simmer for about 5 minutes.
Serve over egg noodles.

- 1 pound ground beef
- ½ cup diced yellow onion,
- 1 teaspoon minced garlic (about 1-2 cloves)
- 3 Tablespoons salted butter
- 3 Tablespoons all purpose flour
- 1 ½ cups beef broth
- 1 cup sour cream
- 10.5 ounce can cream of mushroom soup
- salt and pepper, to taste
- cooked egg noodles (for serving, optional)
Instructions
- In a large skillet over medium high heat, brown 1 pound ground beef along with 1/2 cup diced yellow onion, and 1 teaspoon minced garlic until thoroughly cooked and crumbled.
- Drain ground beef to remove excess grease from pan. Put pan back on stove over medium heat (don't add the ground beef back in yet.) Add 3 Tablespoons salted butter and allow it to melt.
- Then add 3 Tablespoons all purpose flour to the pan, whisk and let it absorb butter.
- Add 1 1/2 cups beef broth and whisk vigorously to remove any lumps, turning the heat up to high, bringing it to a boil for 2-3 minutes until you see it thicken slightly.
- Bring temperature down to medium and whisk in 1 cup sour cream and 10.5 ounce can cream of mushroom soup. Stir until mixture is thoroughly incorporated.
- Add salt and pepper, to taste. Keep tasting mixture until it is seasoned the way you like. If it gets too thick, just add a tad more beef broth.
- Add ground beef back to mixture until reheated.
- Serve over cooked egg noodles and enjoy!

- This can be served over rice or over toast or however you enjoy it!
- We like to serve this with a salad or steamed veggies and sometimes some buttered bread.
- This can be made with ground sausage, ground chicken or ground turkey. If making with ground chicken or turkey, you may want to use chicken broth instead of beef broth.

This was great. I added a 1/2 green bell pepper with the oinions and garlic black pepper seasons, Worcestershire and curry.. I didn’t have beef broth so I put beef bouillon in the noodle water and use that as the broth and 1/2 cup sour cream. Then licked my plate afterwards…
Whoa. I’ve made stroganoff several times before but this is just fabulous. Since I tried to make it slightly healthier I used Greek yogurt in place of the sour cream and low fat cream of mushroom. I tried it after making it and it was delicious!! But then I read the comments and added a bit of Worcestershire and dill and cayenne and OMG the angels sang! LOL. This will be a keeper for sure!!

Great recipe, tried it , loved it! Being on a limited budget ( social security) as well as living in country surroundings, I’ve also tried this recipe substituting raccoon belly for the beef.. no I prefer the beef, raccoon is good although since it is a fatty or meat, I eliminate the addition of butter called for in the recipe. thanks so much it was great

Very yummy recipe!! Made it for my husband and I tonight, and I’ll definitely be making it again. Next time, I’ll make sure to add mushroom to it (I forgot this time) but other than that, I wouldn’t change a thing. I did, however, add Worcestershire sauce as some reviews recommended, but all in all a fantastic dinner over homemade mashed potatoes 🙂
Made the beef stroganoff, I did use ground turkey meat, since I had no beef at home. Turned out delicious! My husband enjoyed it very much. We are having the leftovers tonight. Sooo Good! I am a new member of your recipe listings!

This is a wonderful recipe! I must say though that living in the South I’ve tried various versions, so taking what I liked about them I added dill weed and cayenne pepper to taste. I’d suggest if you try this start with 1/8 tsp at a time with dill weed until you’re happy then the same with cayenne pepper if you like it spicy. Very Yummy!!
My mother and I make this recipe all the time, almost down to a ‘T’, but we don’t make a rue (if that’s the wrong way of spelling it I’m sorry) we just add the beef broth straight in with the cream of mushroom soup and we don’t add as much. We also add mushrooms and dried onion flakes. Tastes just as delicious!
Tried this recipe it is good except way too much salt I will try again and leave off salt, there is plenty of salt in the soup and broth!

This recipe is delicious. The sauce is very easy to make but I only used one can of cream of mushroom soup.

What size bag of noodles do you use ?
This was delicious! I threw all the ingredients in the crockpot and turned it on high for 4 hours to make my life a little easier. Added some cornstarch because it was still a little thin for my taste after the flour. Would highly recommend.
Even the egg noodles? Did you cook the beef first or throw it in raw?
Made the recipe as published with two exceptions. First, I added 8 oz of sliced baby portobello mushrooms and, second, I used cream of celery soup instead of cream of mushroom soup.

I’m a HUGE fan of ground beef recipes, and I’ve been making ground beef stroganoff for well over 50 years now. The only thing(s) I do “differently” is that I use cream of onion soup now (don’t like cream of mushroom), and I use baby Portabella mushrooms. I like ‘shrooms, just not the creamed soup. Even my very fussy 66 year old brother-in-law will eat stroganoff this way, and he’s mighty hard to please (but a super guy, nonetheless, and I do love him very much!)
Not only is it budget friendly; it was delicious! The only changes I made were I added mushrooms and worcheshire sauce. I think the worcheshire sauce gives a little depth of flavor. Just my opinion. Thanks for a great recipe! Will definitely be making again.
This was amazing! I made this last night for my mom, dad, and my fiance (when he came to visit). Oh my gosh! I swear it’s even better leftover (since I ate it for lunch today and it was still delicious). I served it with egg noodles, green peas, and rolls. Probably the best meal I’ve had all week! I haven’t found a recipe from this site that wasn’t out of this world good.

I like to add a few dashes of Worcestershire (to taste) to the sauce. It gives it a nice little kick. Otherwise, this recipe sounds spot on to me. Just like the one I ate as a kid.
Hi , I Have made This Before ,although Never Without the Actual “Beef Stroganoff Powdered Mix” So We are Trying Your Recipe Tonight ! We Have Alot of Basic Food In our Kitchen But Although We are an Older couple with Teen and Adult Sons. That are Very Very hard to please everyone. But I Am Hoping That Tonight They will all Enjoy this as We actually do Have every thing for this Recipe ! And It’s a little different then The one we typically make! And we are able to Double it either to Freeze or If Our Sons Love it then it will be gone by Tomorrow at Lunchtime !
