A TASTY NO-BAKE BANANA DESSERT

I’m a sucker for banana recipes. Banana bread, Banana Cake, Banana Pudding, you name it – I will find a way to put bananas into a sweet treat. Wait until you try this Banana Ice Box Cake! With just a few ingredients, this dessert is super easy to put together and may already have all the ingredients on hand! If you love banana just as much as I do, you need to try this Banana Icebox Cake recipe!

What is the flavor and texture of an icebox cake?

It’s very similar to a banana cream pie. You get a slight crunch from the graham crackers and creaminess from the layers of the pudding mixture and whipped topping.

How long does this take to set up?

This will need to chill for a minimum of 6 hours to get the texture that we want. If you want to keep the graham crackers crunchier, you can chill it for less time. The graham crackers get softer the longer it sits (which is my personal preference.)

Can I make other flavors?

Absolutely! If you are not a fan of banana this is a great base recipe! Some other great flavors that will work with this include: chocolate, lemon, coconut, vanilla, etc.

What else can I top this icebox cake with?

Some other toppings for this Banana Icebox Cake recipe include crushed Nilla wafers, chocolate sauce, caramel sauce and even some melted peanut butter!

How do I store leftovers?

This can be stored in the refrigerator covered with plastic wrap where it will keep for up to 4 days. It can also be frozen. Cover with plastic wrap and then foil and it will keep for up to 3 months.

INGREDIENTS NEEDED: (FULL RECIPE AT THE BOTTOM OF THE POST)

  • instant banana cream pudding mix
  • cold milk
  • whipped topping (Cool Whip)
  • graham crackers
  • fresh banana slices for garnish

HOW TO MAKE A BANANA ICEBOX CAKE:

In a large bowl, add the banana cream pudding mix and the milk, whisk until combined, and then continue to mix until it starts to thicken, about 1 minute.

Fold in 1 container (8 ounces) of whipped topping. Set aside.

Place 1/4th of the graham crackers into the bottom of a 9×13-inch baking dish. You may need to break some of the graham crackers up to fit.

Add ⅓ of the pudding mixture on top and smooth it out. Repeat 2 more times.

Layer the last of the graham crackers on top, you will have a couple of small pieces left over. Keep them for garnish, if desired.

Spread out the remaining container of whipped topping so none of the graham crackers are exposed. Cover with plastic wrap and place in the refrigerator for at least 6 hours or overnight.

Ingredients

  • 6.8 ounces (2 boxes) instant banana cream pudding mix
  • 3 cups cold milk
  • 16 ounces container whipped topping (Cool Whip) You can purchase one large (16 ounce) tub or two smaller (8 ounce) tubs.
  • 3 sleeves graham crackers
  • fresh banana slices, for garnish

Instructions

  • In a large bowl, add the banana cream pudding mix and the milk, whisk until combined, and then continue to mix until it starts to thicken, about 1 minute.
  • Fold in 1 container (8 ounces) of whipped topping. Set aside.

    I made this and it was delicious. It puts a spin on banana pudding. The only thing I did extra was I put a few bananas slices between the layers.
