Crock Pot Garlic Parmesan Potatoes

If you follow me at all, you've probably heard me say a hundred million times that potatoes are my favorite veggie. I. JUST. CAN'T. STOP. They are so good and so versatile and so easy to make. I've been really proud to partner with The Little Potato Company this past year. I've learned so much about their special type of creamer potatoes and how much nutrition they pack. They are packed with vitamins, minerals, antioxidants, fiber and are gluten free! And I've also learned quite a bit about potato farming. Plus, we heard some *great* news that The Little Potato Company is opening an office and packing plant in Wisconsin. Now, I don't live in Wisconsin but it's always exciting to see a company like this expanding and putting our country's farmers to work. Wisconsin produces some yummy taters y'all! 
One thing I've come to appreciate about The Little Potato Co. is that they are always striving to be better. They want to provide the best tasting creamer potato and they listen to customer feedback about taste and what they want. So when it came to their Microwave Ready potatoes, they really wanted to make a product that is convenient for families but that will taste awesome. All of the Microwave Ready flavors are favorites of mine. I can pick up a few containers and I have a fast side dish for whatever I'm making. It's a no-brainer.
When it comes to meal planning, it is always the side dishes that stump me. I mean, I can think of the main thing we will eat for dinner but then I have to decide what to have with it. And that's when I get frustrated. Well, these Microwave Ready potatoes make it easy. My family gets a nutritious side dish and I sweat less. So, ya know, it's a win-win. The Microwave Ready creamer potatoes are a smaller varietal. They are small enough to cook in five minutes in the microwave. But it also makes them the perfect bite size. 
So, the other night, I was making chicken for dinner and I had the makings for a salad but I wanted something else. I decided on some creamer potatoes. I only had the microwave ones on hand (and that would've been fine all by itself) but I decided to jazz it up just a bit. I added a bit more garlic to the mix and decided to throw some Parmesan cheese in there too. Oh my word, it turned out so good! Just a note here: you can make these in the microwave, then add the seasonings and Parmesan cheese. You don't have to make this in a crock pot. Also, this recipe works perfect with the Little Potato 'Little Yellow' creamer potato varietal

Ingredients:
2 tbsp. olive oil
2 tbsp. salted butter
2 tsp. minced garlic
1/4 cup shredded parmesan cheese
1 tsp. chopped dried parsley (optional)
Directions:
Spray a 5 quart slow cooker with nonstick cooking spray.
Open your packages of little potatoes and set aside the garlic parsley seasoning packets (by the way - those packets contain all natural ingredients that are gluten-free, allergen-free and lower in sodium and sugar levels)
Slice potatoes in half. This part is optional since they are already pretty small to begin with. But I think slicing them in half allows for maximum flavor coverage! After you slice them. Put them into your slow cooker. 
Pour in olive oil and butter. Then sprinkle both packets of garlic parsley seasoning on top of the potatoes.
Finally, add in minced garlic, parmesan cheese and parsley. Give it all a gentle stir. 
Cover and cook on low for about 4-5 hours (until fork tender.) 
Then serve!
Cook's Notes: If you can only find the Little Potatoes and not the Garlic Parsley Microwave Ready Little Potatoes, here's how you make your own seasoning packet. Use this seasoning recipe, then add the additional minced garlic and parmesan cheese and continue with the recipe above.


Make your own seasoning:

1/2 teaspoon dried garlic
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon dried dill
1/2 teaspoon dried parsley
salt & pepper, to taste

  1. I had seen Little Potatoes in my grocery store and thought they were another gimmick to get people to buy something they don't need. Then I saw your recipe with the sausage & Little Potatoes and thought, okay, I'll try this. Now I buy Little Potatoes every time I go to the store and I've made that recipe 3 times, each time changing up the sausage flavor and other veggies. So delicious!! It's a bonus that I live in Wisconsin and am very excited for the new development for Little Potato with that many new jobs created and all that local quality!   3. Awww Jen - that is so awesome! I think that recipe is one of my personal favorites too! It's a whole meal in one! This recipe can be made in the microwave too since it is the microwave pack of potatoes. But if you love that sausage & potato bake, you could do this in the oven along with some sausage.   8. I love taters just about any way I can get them--usually loaded with lots of other stuff. But when it's cold outside and I've gotten chilled, there's nothing better than a hot baked potato that I can hold in my hands and warm up on the inside and the outside at the same time.

  9. We like our taters seasoned roasted and then smashed. The kids like smashing the potatoes then putting on a bit of cheese and putting them under the broiler to melt the cheese.

  16. Twice baked potatoes are our family's favorite. I rub the outside of the clean potato with bacon grease and coarse salt and bake until done. Then I cut in half, scoop the insides out and mix with sour cream, butter, cheddar cheese and salt and pepper and top with more cheese, bacon, and fresh chives. Delicious! We frequently make these with salsa chicken (chicken breast baked with jarred salsa and topped with mozzarella).

I love them anyway I can get them, especially baked However most of the time I have to fix a recipe where I can soak out the starch first as I'm diabetic, but these slowcooker potatoes sound so scrumptious I have to try them.   32. My favorite way to eat potatoes is oven fried. I love the little fingerling ones, quartered lengthwise and shaken in a bag with a little olive oil they bake up nice and crisp on the outside and soft on the inside. Thank you for the giveaway.

  43. I have bought and cooked the Little Potatoes just 2 times. I LOVED THEM!!! They roast up so quick in the oven with a little olive oil and kosher salt! YUMMO! My favorite way to eat them is probably roasted with a bit of a crunch on them and the salt! I throw some butter on them when they are on my plate because butter makes everything better right?!?!!!

  56. Thanks so much for this recipe, I saw it the other day and have it in the crockpot now. It smells great. Thanks so much for including the spice mixture recipe as I could find the little potatoes but not with the spices included. Many times I bypass recipes that call for a specific product that has enclosed spices because I cannot find it where I live. This was great since you included the spice mix recipe. Thanks again!
