Raise your hand if you love meatball subs?
Now how would you like to take all those flavors you love about a meatball sub and turn
it into a casserole? Well, here ya go folks.
This was the best tasting casserole I have had in a while.
Not only was it super easy to make but the flavors blended so well together.
The smells that were coming outta my kitchen the evening I made this were so good that the neighbor's little boy said he just had to come over and eat supper with us. And he did!
This is a family friendly meal and using the premade meatballs really makes this quick to make.
This delicious casserole recipe comes from the latest Gooseberry Patch cookbook, 101 Cozy Casseroles. I've been in Gooseberry Patch heaven with all the new cookbooks that have been coming out. Be sure to check out the Harvest Table cookbook (and giveaway) when you have a chance.
Each recipe in this cookbook comes with a picture.
So if you're a visual person, you're gonna love this cookbook.
In fact, the pictures were so gorgeous, I had a hard time deciding which recipe to choose to make for y'all. And I'm pleased to say that my casserole looks just like it did in the Gooseberry Patch book so you know yours will too!
Ingredients:
1 loaf Italian bread, cut into 1-inch thick slices
1 (8 oz.) package cream cheese, softened
1/2 cup mayonnaise
1 tsp. Italian Seasoning
1/4 tsp. pepper
1/4 tsp. pepper
2 cups shredded mozzarella cheese, divided
1-lb. pkg. fully cooked frozen meatballs, thawed
1 (28 oz.) jar pasta sauce
1 cup water
I got the 2 lb. bag of frozen meatballs. So I only used half the bag that is pictured here.
I used the leftovers for spaghetti later in the week.
Directions:
Preheat oven to 350F degrees.
Arrange bread slices in a single layer in an ungreased 9x13 baking dish (see notes below).
Just fill in any gaps with smaller bits of bread.
I did have a couple slices of bread leftover since my loaf of Italian bread was pretty wide.
I used those extra slices to make some garlic bread to serve with this.

In a bowl, combine cream cheese, mayonnaise and seasonings.
Spread mixture over bread slices.
Sprinkle with 1/2 cup shredded mozzarella cheese.
Gently mix together spaghetti sauce, water and meatballs.
Spoon over cheese.
Sprinkle with remaining cheese.
Bake uncovered for 30-35 minutes.
Serve with a green salad.
Cook's Notes: Some folks are concerned about the bread coming out too soggy.

My advice for this is to toast the bread slices before placing them in the bottom of your baking dish. This should help them maintain their shape and texture while cooking.

This would be a great book to add to my GB collection. I do a lot of cooking to take to my grandmother who just turned 80 in April. She does little to no cooking for herself so I am always trying to make extra or things that can freeze so she has quick easy meals to reheat.

Not only are casseroles something that I can cook ahead of time, or freeze, but they are one of the best comfort foods when paired with a glass of sweet iced tea. <3

Casseroles could save my life, I work 60 hrs a week, go to school full time, and have 2 children 2 & under that keep be veryy busy all week long. Anything I could pop in the oven and continue to work on house things would be greatly appreciated :)

ReplyDeleteNew mom of two week old twins, have a 7 yr old, 3 yr old, and a 21 month old. I was on bedrest for 4 weeks and my church organized and provided meals for us. The casseroles worked out great. I would use this book to "give back" by helping others in similar situations with the meal train.

This cookbook would definitely get lots of use at our house between a teenage son; a tween daughter who loves Goosebery Patch & likes to cook and hubby who likes to make new things in the kitchen!

ReplyDeleteI really am interested in the 101 I want to share it with my daughter who got a 143 out of 150 possible points on her cookbook project for her foods & nutrition class. She just started helping cook suppers after school for me and she did alot of casseroles for her project. I think it would be great to give to her for her good work on her project.

This recipe sounds delish...we will be trying it soon. I have a 12 yr old & an 11 yr old. I can't seem to satisfy their hunger. A new recipe book would be wonderful!

I make casseroles to take to family/friends when they've lost a loved one....or someone is in the hospital.....or for the arrival of a new baby. This casserole would be perfect! I definitely need this cookbook! furball91@suddenlink.net
ReplyDeleteI absolutely love your blog and I am a big fan of Gooseberry Patch! I am getting ready to put my menu for the next two weeks on my menu board and I think meatball sub casserole is definitely going to go on it! Can't wait to try it! While I already have a large cookbook collection, this one will be just as loved as the others. I love making casseroles and having leftovers! I follow GP on pinterest and I have liked them on FB...but I don't do twitter...don't like it! But anyway, thank you for a great opportunity and a fantastic blog!

ReplyDeleteI love when my husband or son can cook for me as I work 12 hour shifts. I prepare meals on my days off, and they can pop it into the oven.
