A DELICIOUS MINT CHOCOLATE DESSERT

I have said this before but mint and chocolate are two of my favorite flavors to combine. There is something magical about that flavor combination! I absolutely love a good fudgy brownie so adding some mint to the filling of these Mint Cream Cheese Brownies is the perfect brownie recipe! They are soft and chewy with the surprise center inside and then they are all topped off with a luscious chocolate frosting! Looking for a delicious mint chocolate recipe? FREQUENTLY ASKED QUESTIONS:

Can I use a boxed brownie mix?

Yes, absolutely. If you want to cut some corners you can use any of your favorite boxed brownie flavors, we like fudge.

Do I have to add chocolate chips to the filling?

No, if you want to cut down on the chocolate aspect the chocolate chips can be left out. Although super tasty, this is a personal preference.

If I do use chocolate chips, what kind should I use?

This is absolutely up to you, we like to use semi-sweet in baking as it mellows out the sweetness. But you can use milk chocolate or dark as well.

Do these require a frosting?

No, we love adding the frosting because well we are chocolate lovers around here. So this is added just for our love of it, you can also use a canned frosting if you like. Or if you’d rather, you can completely omit the frosting.

How do I store leftovers?

These can be stored in an airtight container in the refrigerator where they will keep for up to 4-5 days. These can also be frozen, to do that place them cut in a freezer container and they will keep for up to 2 months. To defrost remove to the refrigerator overnight.

INGREDIENTS NEEDED: (FULL RECIPE AT THE BOTTOM OF THE POST)

  • semi-sweet baking chocolate 
  • unsalted butter
  • granulated sugar 
  • vanilla 
  • eggs 
  • all-purpose flour 
  • salt 
  • cream cheese
  • peppermint extract 
  • green food coloring, optional 
  • chocolate chips 
  • corn syrup 
  • water 
  •  powdered sugar 
Ingredients needed: semi-sweet baking chocolate, unsalted butter, granulated sugar, vanilla, eggs, all-purpose flour, salt, cream cheese, peppermint extract, green food coloring,  chocolate chips, corn syrup, water and powdered sugar.

HOW TO MAKE MINT CREAM CHEESE BROWNIES:

Preheat the oven to 350 degrees F. Grease or place parchment paper in an 8×8-inch baking dish. In a small saucepan, melt butter and chocolate until smooth. Set aside to cool.

With an electric mixer, beat together all filling ingredients, except chocolate chips, until smooth.

Stir in chocolate chips. Set aside.

Beat together chocolate mixture, sugar, vanilla, and eggs. Beat in flour and salt, on low speed, until fully combined.

Pour half of the chocolate batter into the baking dish and spread evenly.

Pour on the cream cheese mixture.

Top with chocolate batter. Bake for 40-45  minutes, until the toothpick comes out clean in the center. Cool completely before frosting.

In a small saucepan, heat butter, corn syrup, and water. Bring to a boil and then  remove from heat. Stir in chocolate until melted. Stir in enough icing sugar until spreadable.

Spread onto brownie and put in the refrigerator to set.

Notes

  • You can use a box mix if you’d like.
  • This recipe can easily be doubled.
  • Chocolate chips are completely optional in the filling.
