Ground Beef Stroganoff (No Cream Soups)
This recipe for homemade beef stroganoff recipe is made without any cream soups and made from scratch but still easy! Creamy and delicious!
HOLLY’S BEEF STROGANOFF RECIPE
This super easy and wonderful recipe for Beef Stroganoff from my friend Holly at Life in the Lofthouse has been making an appearance at our dinner table for a long time. Actually, it was a favorite meal her Mom would make them growing up. There is something just so darn comforting about this creamy beef mixture served over egg noodles.
TIPS FOR MAKING THIS EASY WEEKNIGHT DINNER:
- Mushrooms are optional in this.
- Feel free to add some red chili flakes or cayenne pepper for a spicy kick.
- Heavy cream can be substituted for the sour cream.

INGREDIENTS NEEDED: (FULL RECIPE AT THE BOTTOM OF THE POST)
- egg noodles
- yellow onion
- butter
- lean ground beef
- all-purpose flour
- beef broth
- sour cream
- salt and pepper, to taste
- sliced mushrooms (optional)
HOW TO MAKE GROUND BEEF STROGANOFF (WITH NO CREAM SOUPS):
In a large non-stick skillet melt butter over medium-high heat. Add diced onion (and sliced mushrooms, if using) and cook until mushrooms are soft and onion is translucent.
Remove from skillet and set aside on a plate. Add ground beef to skillet. Cook and crumble until brown. Drain any grease.
Sprinkle flour over beef.
Then pour in beef broth. Stir and continue to cook until mixture thickens.
Add the onions (and mushrooms) back in to skillet then gently stir in sour cream. Season with salt and pepper to taste. Let simmer over low heat for another 5 minutes until heated through.
Serve over cooked egg noodles and enjoy!
You can garnish with fresh chopped parsley, if desired.

- 6 ounces fresh sliced mushrooms (optional)
- 2 tablespoons salted butter
- 2 pounds lean ground beef
- 3 tablespoons all-purpose flour
- 2 cups beef broth
- 1 cup sour cream
- salt and freshly ground pepper, to taste

Very good, my whole family ate it up. The only thing I would consider changing is to decrease the amount of sour cream so there is more of a beef flavor. Will definitely make again!

I made it as directed with the addition of a little paprika, a beef boullion cube, and Worcestershire sauce. I did use mushrooms too Mine turned out pretty runny so next time I will probably add an extra tablespoon of flour. It was easy and tasty though! Thank you for the recipe!
This is really good…I substituted regular flour for brown rice flour to make gluten free…really turned out good.

I have made this twice and got compliments both times. I used gf pasta and gf flour. I used ground turkey (good beef is hard for me to find locally where I live) and added a little chorizo for flavor. It was great!

Tasty and easy recipe! Only change I made was adding a little Worcestershire sauce and garlic powder to the mushroom/onion mixture before adding it back to the meat mixture. Yum! Served over rice since we didn’t have noodles. Husband was a huge fan.

Great recipe for ground beef stroganoff.! I like mushrooms in my stroganoff, and I can’t wait to try this recipe with fresh wild picked morels come this June. I used a condensed organic mushroom soup that I added Better Than Bouillon beef stock to, which made it perfectly creamy. For extra flavor I added Worcestershire sauce. This recipe will be perfect for camping!
I received some compliments on this dish last night. I used the mushrooms and I substituted ground turkey and chicken broth (this is what I had available) instead of the beef. And to add a bit of flavor I put in a little chorizo, a handful of chopped spinach, and one garlic clove minced. It was tasty.

Have been looking for this recipe for over 30 years. This was a favorite GO TO recipe when our parents went out – the five of us would make a double batch of this and it would all be gone ! I have not been able to find this recipe that used to be on the egg noodle package when I was a kid. This is awesome!
