This super easy no-bake Graham Cracker Toffee is absolutely delicious. Only 5 ingredients needed. It's everyone's favorite sweet treat!
A SWEET NO-BAKE TREAT
I am hooked on these Cracker Toffees. I totally understand why folks call them 'crack'. There are lots of easy ways to change them up. You can use salted regular crackers or, like in this recipe for Graham Cracker Toffee, you can use graham crackers (regular, cinnamon or chocolate).

TIPS FOR MAKING THIS SWEET TREAT:
- There is no baking involved in making these. With this recipe, we're using a combination of semi-sweet chocolate chips and white chocolate chips. You could use peanut butter chips, butterscotch chips or even caramel bits. The sky is the limit with your creativity!
- If you want to make this a bit more crunchy and more similar to CHRISTMAS CRACK, you can put the graham cracker and butter/sugar mixture into the oven for a few minutes (I give directions below on how to do this.)
- In addition, for a deeper toffee flavor, use brown sugar instead of white sugar.

INGREDIENTS NEEDED: (FULL RECIPE AT THE BOTTOM OF THE POST)
- salted butter
- sugar
- graham crackers
- semi-sweet chocolate chips
- white chocolate chips
- sprinkles
HOW TO MAKE GRAHAM CRACKER TOFFEE:
Line a quarter sheet pan (9"x 13") with parchment paper then line with graham crackers.

Melt together butter and sugar on medium heat for 8-10 minutes, whisking FREQUENTLY, until mixture bubbles and turns a light caramel color. Take off heat. Pour butter mixture over graham crackers. Spread out evenly. Note: if you want a crunchier toffee, you can put the baking tray into a preheated 400F degree oven for about 6 minutes then continue with the rest of the directions.

Top with chocolate and white chips.

Wait 5 minutes, then spread out the warmed chocolate using a butter knife or an offset spatula.

Top with sprinkles, cool for at least an hour, and break up to serve.

I really enjoyed that this wasn't a super hard toffee. Much easier on my teeth! So good - thank you!

White sugar or brown sugar?
Brandie @ The Country Cook
Hi Trish, I used a white sugar but you could certainly use brown sugar for a richer flavor.

Hi Brandie, this turned out really good. I liked it with the graham crackers instead of crackers. A new favorite in our house!
Renee
What size baking sheet did you use? The "toffee" looks to be nice and thick and I am afraid if my baking sheet is too big it won't be like yours (which looks delish)!
Brandie @ The Country Cook
Hi Renee, I believe it was a quarter-size sheet pan. You don't want it too thick or it won't set up properly. Hope that helps! 🙂

Shouldn't you bake in oven for a few minutes after you put the toffee mixture on the graham crackers and before you put the chocolate chips on?
Brandie @ The Country Cook
You don't actually need to. This will produce a *slightly* softer toffee than the oven baked kind. 🙂

Like mine super crunchy—so I oven baked it with the addition of chopped pecan—luscious!
