This Elvis Presley Cake starts with a boxed cake mix and topped with an amazing pineapple glaze and the most delicious homemade frosting!

A PINEAPPLE CAKE WITH A CREAM CHEESE FROSTING

I have such a fun recipe to share with y’all today! Seriously, you are gonna fall in love with this cake. I’ll be honest, I have no clue how it got its name. You always hear that Elvis Presley loved his peanut butter and banana sandwiches but this definitely doesn’t have those flavors. However, it was rumored that he loved pineapple cakes so this recipe definitely fits that bill!

TIPS FOR MAKING ELVIS PRESLEY CAKE

  • To really enhance the pineapple flavors, you can use a pineapple cake mix.
  • It’s very important the cream cheese be at room temperature. If it isn’t, your frosting will come out lumpy. See my post on How to Soften Cream Cheese Quickly if you forgot to soften it in time. I also have a great hack for How To Soften Butter Quickly as well.
  • The pecans are optional in the frosting. Or, feel free to switch it up with walnuts. Pecans are very southern so we think that was only fitting for Elvis.
  • I haven’t tried making this as a layer cake yet. Once the cake gets saturated with the pineapple glaze, it becomes very moist and therefore doesn’t always lend itself for layering. If you try it, please let me know!
  • Be sure to look for crushed pineapple in 100% juice, not syrup. The syrup kind is thick and is super sweet.

INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)

  • yellow cake mix
  • (ingredients needed to make cake; eggs, oil and water)
  • crushed pineapple in juice (not heavy syrup)
  • sugar
  • cream cheese
  • salted butter
  • powdered sugar
  • chopped pecans

HOW TO MAKE ELVIS PRESLEY CAKE

Prepare yellow cake mix according to package directions for a 9×13-inch baking pan.

While cake is baking, stir together the pineapple and sugar in a small saucepan over medium heat. Bring to a boil, stirring constantly, until the sugar is dissolved (about 2-3 minutes.) Remove from heat and wait for cake to finish baking.

Once the cake is finished baking, while still hot, poke holes all over the top with a fork. Pour the warm pineapple mixture over the cake. Spread out the pineapple mixture so it evenly covers the cake. Allow the cake to cool completely.

Once cake is cooled, it’s time to start the frosting! In a large bowl, beat together the cream cheese and butter (using an electric or stand mixer) on medium speed until smooth, about 2 minutes. Gradually add in the confectioner’s sugar, beating until the frosting is smooth and creamy (remember, if using a stand mixer, to occasionally scrape down the sides.)

Finally, stir in the chopped pecans (if using.) Drop the frosting by dollops onto the cake.

Smooth and spread it to coat. Cover and refrigerate the cake until fully chilled before serving. The cake will keep for up to 5 days when stored, covered, in the refrigerator.

Ingredients

  • 1 box yellow cake mix
  • (ingredients needed to make cake; eggs, oil and water)
  • 20 ounce can crushed pineapple in juice (not heavy syrup)
  • 1 cup sugar
  • 8 ounce block cream cheese, softened to room temperature
  • ½ cup salted butter (1 stick), softened to room temperature
  • 3 cups powdered sugar
  • ½ cup chopped pecans (optional)

  • Allow the cake to cool completely. Once cake is cooled, it's time to start the frosting.
  • In a large bowl, beat together 8 ounce block cream cheese, softened to room temperature and 11/2 cup salted butter (1 stick), softened to room temperature using an electric or stand mixer) on medium speed until smooth, about 2 minutes.

  • Gradually add in 3 cups powdered sugar (a little at a time) beating until the frosting is smooth and creamy. Remember, if using a stand mixer, to occasionally scrape down the sides.

  • Finally, stir in 1/2 cup chopped pecans.

  • Drop the frosting by dollops onto the cake. Smooth and spread it to coat.

  • Cover and refrigerate the cake until fully chilled before serving (2 hours). This gives time for the flavors to come together so don't skip this step.

  4. Hi Brandi, I would love to win this cookbook to pass on to my son who moved out this year and is cooking on his own. He told me he was cooking and when I asked what he was cooking he said "Mostly spaghetti". Most of my collection are from the Junior Leagues of different cities and from PTA and churches, I try to find cookbooks that are a collection of Junior League, PTA and various church cookbooks from various cities and town because they reflect the best flavor of a certain area and I think your cookbook would be an ideal fit for my collection.   12. I love recipes that are not national media material. Food network has good things. Taste of Home is good. My preference is a cookbook that you won't find on every store's bookshelf.   15. I would LOVE this cookbook because I get soooooo tired of cooking the same stuff for supper for my family. I am in desperate need of some new inspiration. I am also a collector of cookbooks, so I never turn down the chance to add to my collection.

  16. Two reasons: 1. I have ran out of ideas and preparing a meal has become a chore instead of a challenge/joy.
    2. I am a basically an old fashioned, lazy cook – let me explain, by lazy I mean if I "pin" a recipe, I forget it – if I write it down, I lose it – So I have a collection of cookbooks that are worn and frayed from so much use. I prop them up, double check them, get food on them, wipe the pages down and put them up. So That is Why I Would Love to get this cookbook.     1. It is not a stupid thing to collect. I have probably over 8,000 and I look at them and find new things all the time. I would rather read a cookbook than anything else. I love to try new thing and even try making up recipes from different recipes by adding or taking out ingredients. Keep collecting

  18. As much as I would want to keep the cookbook if I won it, I would give it to my daughter who has six kids. With all the different time schedules of sports, dancing lessons, cheerleading, and car pooling, it would be good for her to have easy and delicious recipes by such a conscientious cook.   24. I have made this cake and my family adores it….it is so moist but rich…..goodness all the way through. I would love to have the cookbook but I wish someone who cooks for others both out of love and charity who don't have the means or are unable to cook on their own (shutins, etc.) could be the lovely winner…..maybe Christy could write something meaningful in the book…..love your site County Cook; have just about wore the printer out getting these to put in my recipe notebook.
