EASY SKILLET REFRIED BEAN DIP
Well, I promise I totally meant to post this recipe for Easy Skillet Refried Bean Dip before all of the Super Bowl parties. Time just got away from me. But hey, I'm early for Cinco de Mayo - so there's that. 😉 For real though, I love a good bean dip though. I don't really need an excuse to make it. Party of one right here!

This recipe is ridiculously easy. Beans, cheese and taco seasoning. Boom. That really is it. The fun is in the toppings. You could throw a little sour cream on top. I enjoy a little bit of everything. Some tomatoes, onions, cilantro, avocado and jalapeños. You don't just need to use tortilla chips for this. You could use your favorite veggies too. I think it would be delicious spread on some Naan bread!
WHAT YOU'LL NEED:
canned refried beans
shredded cheddar cheese
taco seasoning
optional toppings:
diced onion
diced tomato
sliced jalapeños (fresh or pickled)
chopped cilantro
diced avocado
HOW TO MAKE THIS REFRIED BEAN DIP (STEP-BY-STEP):
Butter an 8-inch oven-proof skillet (or baking dish) or spray with a little nonstick cooking spray. Preheat oven to 350f degrees. In a bowl, mix together refried beans, half a cup of shredded cheddar cheese, and taco seasoning.
Spread bean mixture into prepared skillet or baking dish dish and top with remaining shredded cheese.
Bake for 15 minutes until warmed through and cheese is melted.Remove from oven, and top with diced onion, tomato, jalapeno, and cilantro.
Serve with tortilla chips.

- 2 tablespoon taco seasoning
- optional toppings:
- diced onion
- diced tomato
