This easy Crock Pot Neiman Marcus Chicken Casserole was inspired by the popular Neiman Marcus Dip. One of my favorite things about this easy casserole is that everything cooks in the slow cooker. It’s such a creamy, cheesy comfort food dinner recipe and is an easy recipe to follow with simple ingredients!

What makes this a Neiman Marcus Chicken Casserole?

This recipe is inspired by the well known Neiman Marcus dip, which is famous for its creamy base and crunchy almonds. The almonds are what really give this casserole that signature flavor and texture.

Do I have to use the almonds?

Nope! They’re optional. The casserole will still be delicious without them, but the almonds add a subtle crunch that makes this recipe unique. You can also toast them first for even more flavor.

Can I make this in the oven instead?

Sure, use my Neiman Marcus Chicken Casserole recipe instead. Already done and tested for you!

What else can I add to this casserole?

Feel free to add some veggies like peas, broccoli, spinach, or even mushrooms. Amp up the protein by adding in diced ham.

How do I store leftover casserole?

Store leftovers in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave or oven until warmed through. Leftovers can be frozen, but for best texture freeze it without the cracker topping and add that fresh when reheating. Freeze for up to 2 months in a freezer safe container.

What to serve with this Chicken Casserole?

As a casserole, it can feel like a whole meal in itself, but you can absolutely add some sides to go with it. Some easy ideas are steamed green beans, Green Beans with Bacon, a simple side salad, some roasted vegetables, Fried Corn, and Garlic Bread or Dinner Rolls.

Ingredients Needed: (See Recipe Card Below For The Full Recipe)

  • chicken breasts – You can use chicken breasts or tenders. You could even use chicken thighs (those can take a little longer to cook since its dark meat).
  • onion powder + garlic powder – They both add a lot of flavor.
  • cream of chicken soup – You can use any brand of cream of chicken soup. Homemade Cream of Chicken Soup is always an alternative.
  • shredded cheddar cheese – you can use any cheese of your choice. Instead of cheddar, you can try monterey jack, mozzarella, parmesan or pepper ack for a little heat.
  • sour cream – For the sour cream haters, you can use plain Greek yogurt, mayonnaise, or crème fraiche. In a pinch, heavy cream can work too, just start with a smaller amount, like ½ cup, and adjust as needed for consistency because it is thinner than sour cream.
  • bacon – I purchase the pre-cooked bacon and pop it into the air fryer for 2-3 minutes or until crispy.
  • green onions – You can omit and replace with parsley.
  • Ritz crackers – You can use any brand of buttery crackers. But you can also replace the crackers with French-fried onions or panko bread crumbs. 
  • butter – You can use salted or unsalted butter.
  • slivered or sliced almonds  – You can omit the almonds if you don’t want to add them. Just keep in mind that it’s the star ingredient that makes this dish so popular. It gives this casserole a nice little crunch.

How To Make Crock Pot Neiman Marcus Chicken Casserole:

Place the chicken in a crock pot, add the onion powder and garlic powder, and top with the soup.

Cook on low for 3-4 hours or on high for 2 hours, or until the juices run clear and the internal temperature reaches 165° F. Shred the chicken with 2 forks.

Add the cheddar cheese, sour cream, half of the bacon, and half of the green onions. Mix until combined. Gently crush the crackers in the bag. To a bowl, add the crushed crackers and butter. Stir until the crumbs are evenly coated with butter. Set aside. Transfer ¾ of the remaining bacon into the crockpot. Top the chicken with the crumbs and almonds. Cook for an additional 30 minutes. Serve and top with the remaining green onions and bacon.

Rest of the casserole ingredients added to a Slow Cooker then it all gets mixed together and garnished with nuts.

Ingredients

  • 1 pound chicken tenderloins
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 10.5 ounce can cream of chicken soup
  • 1 ½ cups shredded cheddar cheese
  • 1 cup sour cream
  • 6 slices bacon, cooked and crumbled (divided use, see notes)
  • 6 green onions, thinly sliced (divided use)
  • 1 sleeve Ritz crackers
  • 4 Tablespoons (1/2 stick) butter, melted (can use salted or unsalted)
  • ¼ cup slivered or sliced almonds (optional)

Instructions

  • Place 1 pound chicken tenderloins in a crock pot, season with 1 teaspoon onion powder and 1 teaspoon garlic powder and add in 10.5 ounce can cream of chicken soup.

  • Cover and cook on low for 3-4 hours or on high for 2 hours, or until the chicken juices run clear and the internal temperature reaches 165° F.
    NOTE: Some slow cookers run really hot and can cook quicker and some cook slower (depends on the age of the slow cooker and the brand) so please note these times can vary. Please go by doneness, not just by time.

  • Shred the chicken with 2 forks.

  • To the slow cooker add 1 1/2 cups shredded cheddar cheese, 1 cup sour cream, half of the bacon, and half of the green onions. Mix until combined.

  • Gently crush 1 sleeve Ritz crackers. I just crush them while they're still in the sleeve but you can take them out and crush them in a bowl or a Ziploc bag.
  • To a bowl, add the crushed crackers and 4 Tablespoons (1/2 stick) butter, melted. Stir until the crumbs are evenly coated with butter. Set aside.
  • Transfer ¾ of the remaining bacon into the crockpot.
  • Top with the cracker crumbs and 1/4 cup slivered or sliced almonds.

  • Serve and top with the remaining green onions and remaining bacon.
