Ground Beef Stroganoff
This is the best Ground Beef Stroganoff. It’s a flavor-filled creamy hamburger gravy that is delicious served over egg noodles. Budget friendly, family friendly!
Also Known as Hamburger Stroganoff
Beef stroganoff with ground beef is definitely a comfort food dish. For me, it’s up on the list near fried chicken and okra. I love the humble roots of stroganoff. It isn’t pretentious, it uses simple ingredients and it is a cheap dish that can easily feed your entire family. Just some ground beef, seasonings, an easy gravy mix and boom – dinner is served!

I have made this recipe for years and I am sorry that I waited so long to say thank you for such an amazing keeper of a recipe! It’s an easy version of a childhood favorite, and I almost always have the ingredients on hand! I get asked for this recipe a lot!

Frequently Asked Questions:
I always serve ground beef stroganoff on top of egg noodles. Then I like to have a nice vegetable side dish like some Maple Glazed Carrots, or Italian Green Beans.
Sour cream is a pretty integral in flavor to beef stroganoff. You can substitute with plain Greek yogurt. Or you can leave it out if you just really don’t like the taste. In this recipe I use cream of mushroom soup so it is plenty creamy without the sour cream if you really just can’t stand the flavor.
You want to use one that has some fat. That’s where you get good flavor. So I generally use an 85/15 ground beef. You don’t need anything fancy here. Use what is within your budget. If you want to avoid draining any grease, try using a lean meat like 90/10.
Leftovers can be stored in a covered container in the refrigerator for up to 3 days. I don’t recommend freezing as sometimes the creamier ingredients tend to separate when you go to reheat it.

Ingredients Needed: (See Recipe Card Below For The Full Recipe)
- ground beef – if you use a lean meat, you won’t really have any grease to drain. You could also easily make this with ground chicken or turkey.
- onion – if you don’t like onion, just leave it out.
- garlic – this recipe works well with freshly minced garlic or the jarred garlic (whichever is easiest or whichever you prefer.)
- salted butter – you can use unsalted butter.
- all-purpose flour
- beef broth – if you want to keep the sodium down, try using low or no salt beef broth.
- sour cream – this is a love/hate ingredient but it is essential to any stroganoff recipe so I don’t recommend skipping it. You could substitute with plain Greek yogurt or creme fraiche.
- cream of mushroom (or chicken) soup – I have recipe for Homemade Cream of Mushroom Soup and Homemade Cream of Chicken Soup if you prefer homemade. Use whatever flavor you like.
- egg noodles

How To Make Ground Beef Stroganoff
Bring a pot of water to boil and begin to cook egg noodles according to package directions. In a large skillet over medium high heat, brown ground beef along with the onions and garlic until thoroughly cooked. I like to leave chunks of ground beef and not break it up too small. Drain ground beef to remove excess grease from pan. Put pan back on stove over medium heat (don’t add the ground beef back in yet.) Add butter to pan and let it melt.

Then add flour to pan, whisk and let it absorb butter. Now add beef broth and whisk vigorously to remove any lumps, turning the heat up to high, bringing it to a boil for 2-3 minutes until you see it thicken slightly.

Bring temperature down to medium and whisk in sour cream and cream of mushroom soup. Stir until mixture is thoroughly incorporated. Add salt and pepper. Keep tasting mixture until it is seasoned the way you like. I probably use a good teaspoon and half or more of salt and pepper. If it gets too thick on you, just add a tad more beef broth. Add ground beef back to mixture. Stir and then allow to simmer for about 5 minutes.

Serve over egg noodles.

Notes
- This can be served over rice or over toast or however you enjoy it!

Must I use sour cream?
When I made it, I used 3/4 cup plain greek yogurt and 1/4 cup sour cream to cut down on the sour cream taste that my friend dislikes. We both think it turned out wonderfully.
Made this for dinner tonight, had the meat but wasn't sure what I was going to make. Found the recipe on Pinterest. I have made what I thought was the quick version before, meat, noodles, cream of mushroom soup and that's it. Don't think I will be making it "my way" anymore. This recipe only took a few more minutes (sauté onions and mushrooms) and was much more tasty. Thanks!
Made this twice…love it with the ground beef. Instead of crumbling the ground beef, I made meatballs and added 2 teaspoons of brown gravy seasoning…Delicious!!
I just made this tonight for dinner. It is amazing. I was not sure if I would like it or not,but I am trying new recipes out. My family loved it.
So…..I didn't have all the ingredients for this, so I improvised! I used cream cheese in place of the sour cream and added a little heavy cream with chicken broth instead of beef (that's all I had at home). I left out the mushrooms but added about 1 Tablespoon of cooking sherry. It was yummy! Served it over mashed potatoes, and sent hubby to the store for egg noodles so I can serve it over those for tomorrow's lunch.
This is one of my favorite last minute go to meals, but we've always called it, " Poor Man's Stroganoff".
I didn't have the cream of mushroom soup and it turned out PERFECTLY! Thank you for sharing. I added a bit of horseradish and upped the sour cream. Returned to this for leftovers (I hate leftovers). Love your site!
I'm excited to make this for dinner tomorrow!! Thank you for sharing 🙂
I am 44 years old and I've been eating this for as long as I can remember. It's been a family favorite and a hit with my own children as well.
I got in touch with Back to the Roots thanks to your post! Thanks for sharing.
I'll be making this tonight! It's a go-to recipe! I might add in some of my Country Bob's Sauce!
I just made this tonight for dinner. I LOVE beef stroganoff but wanted a recipe that was more made from scratch. I just substituted organic cream of mushroom soup (i can't have MSG) and added some Worcestershire sauce at the end. My husband and I LOVED it!
Just had this for dinner and it was marvelous. I prefer it over traditional stroganoff because I don't enjoy the big chunks of meat, the ground beef is just perfect. Lots of flavor in this and it's going to be great reheated for lunch tomorrow. Thanks for two great recipes in one weekend, Brandie! The Southern Pecan Praline cake from yesterday is great reheated, as well. You cook the way I like to eat. 🙂
Believe it or not, I had never had beef stroganoff (I know!). Anxious to try it after reading this recipe, I made it and REALLY enjoyed it! I served it with a salad and french bread which was an awesome combination! I did use fat free sour cream and the (almost) fat free cream of mushroom and it turned out great! Thanks so much for broadening my horizons with this recipe! 😉
I just made this, and even though I had to use chicken broth instead of beef, it turned out really yummy. I added a little parsley when I was sauteeing the onions and mushrooms, too.
Made it. Ate it. Loved it.
Thanks!
This recipe was so good! I felt bad when I made it because we had hamburger helper stroganoff sitting in the cupboard and now I feel even worse because I might never get around to making it after having this. Thanks so much!
I loved this dish! I made some crescent rolls to go with and Hubby and I finished everything off.. YUM!
Made this last night and it was Delish !!!! Quick, easy and family loved it 😉
Made this on Thursday and it was so good! A fast meal for a weeknight.
This was delicious!! Easy, fast and soo good! Hubby loved it!!
I made this last week, everyone loved it! Thank you so much.
I made this last night for dinner….halfway through realizing I had no flour. So I just cooked in an extra 10 minutes and it was thick enough! = There were no leftovers! My daughter (who doesn't eat meat normally) ate a bowl of it, and my 6 year old asked if he could have it again tonight! Thank you for making happy tummies everywhere!
Thank you so much!! Glad you enjoyed this one!! Thank you for taking the time to let me know! 🙂
Made it tonight ,used some nice steak tips. THE BOOM ! Add a little crush pepper on top , gives a nice little kick to it
My bad,I ment the bomb!
This is delicious!!! Thanks for sharing.
I used to serve this with some wine australia for dinner since my hubby loves this.
Ground Beef Stroganoff is indeed a comfort food for me as well. I'll take note of the recipe and will make this later. Thanks for sharing.
Hi Dina! So glad you enjoyed it!!! I'm not really sure how to get the nutritional information for this. Maybe there is some sort of website or application that can be used?
This was soo good! Thanks for the recipe. Stumbled on it on pinterest while looking to make something with ground beef. Is there any way I could get the nutritional info for this recipe?
Hi Casey! Thank you SO much!! I always appreciate feedback and I'm so happy this was a winner for you. You made my day! Thank you!
We had this for dinner tonight…. my husband claims he doesn't like stroganoff, but said he would try it because he has only had it with the chunks of beef (stew meat)…. he really like it!! I served mine over rice instead of the noodles for something different and we really enjoyed it:) I haven't made one thing from your site that we haven't liked. Thank you so much for the great recipes!!
I Make a stroganoff very much like this but I use cream of mushroom with roasted garlic soup and my family loves it.
I made this last weekend and my husband and I nibbled on it several days. I did substitute light sour cream and reduced fat soups but it is an amazingly easy comfort food! Definitely staying in the from of my recipe binder!
;>}
Yummy! This sounds just like my mother-in-law's recipe – can't wait to try it 🙂
Oh Yummy! I cannot wait to try this. I've only ever made Stroganoff with cut up beef. Ground beef will be SO much easier! I just bought several pounds too so I think I'll add this to my menu this week! Thanks so much for sharing it!
I will NEVER purchase the box stuff again!!!!!
Yum I love beef stroganoff!
How did you read my mind, Brandie? Just like that – I want some! Please.
I know what you mean in regards to beef stoganoff being comforting – I love it! Although I have never made it with minced beef before, I usually use strips of beef – but this looks far easier! X
By the way I made your spasagna again! It's a hit in our house!
Yum I love beef stroganoff! The hubs would love this!
Mmmmmm, one of my childhood favorites, too! And I can make it for my family and keep all the mushrooms for myself…yum!
Wow does this recipe looks terrific. I am going to try your version. This is just such a great all around family friendly food.
I'm a big fan of beeg stroganoff. I have a recipe similar to yours! I love how easy and yummy it is. I'm like you too Bran, Im not a mushroom eater, so I make my stroganoff without them as well : )
I use cream of chicken soup and water chestnuts since I don’t like mushrooms. I use either sliced or whole water chestnuts quartered as the give a nice crunch to the dish, texture is important to me,..
I've never made beef stroganoff with ground beef, however this looks delicious; I can't wait to make it. I love how you grew your own mushrooms too, my husband would love that!
This is a great recipe, my husband and & I eat this a lot- delicious. Five stars!!
This recipe takes me right back to my childhood during the weeknights. My mom could pull this together in no time and we would gobble it all up. 🙂
*beef not beeg! ha ha
Awesome !! it was a hit.
