Ground Beef Stroganoff
This is the best Ground Beef Stroganoff. It’s a flavor-filled creamy hamburger gravy that is delicious served over egg noodles. Budget friendly, family friendly!
Also Known as Hamburger Stroganoff
Beef stroganoff with ground beef is definitely a comfort food dish. For me, it’s up on the list near fried chicken and okra. I love the humble roots of stroganoff. It isn’t pretentious, it uses simple ingredients and it is a cheap dish that can easily feed your entire family. Just some ground beef, seasonings, an easy gravy mix and boom – dinner is served!

I have made this recipe for years and I am sorry that I waited so long to say thank you for such an amazing keeper of a recipe! It’s an easy version of a childhood favorite, and I almost always have the ingredients on hand! I get asked for this recipe a lot!

Frequently Asked Questions:
I always serve ground beef stroganoff on top of egg noodles. Then I like to have a nice vegetable side dish like some Maple Glazed Carrots, or Italian Green Beans.
Sour cream is a pretty integral in flavor to beef stroganoff. You can substitute with plain Greek yogurt. Or you can leave it out if you just really don’t like the taste. In this recipe I use cream of mushroom soup so it is plenty creamy without the sour cream if you really just can’t stand the flavor.
You want to use one that has some fat. That’s where you get good flavor. So I generally use an 85/15 ground beef. You don’t need anything fancy here. Use what is within your budget. If you want to avoid draining any grease, try using a lean meat like 90/10.
Leftovers can be stored in a covered container in the refrigerator for up to 3 days. I don’t recommend freezing as sometimes the creamier ingredients tend to separate when you go to reheat it.

Ingredients Needed: (See Recipe Card Below For The Full Recipe)
- ground beef – if you use a lean meat, you won’t really have any grease to drain. You could also easily make this with ground chicken or turkey.
- onion – if you don’t like onion, just leave it out.
- garlic – this recipe works well with freshly minced garlic or the jarred garlic (whichever is easiest or whichever you prefer.)
- salted butter – you can use unsalted butter.
- all-purpose flour
- beef broth – if you want to keep the sodium down, try using low or no salt beef broth.
- sour cream – this is a love/hate ingredient but it is essential to any stroganoff recipe so I don’t recommend skipping it. You could substitute with plain Greek yogurt or creme fraiche.
- cream of mushroom (or chicken) soup – I have recipe for Homemade Cream of Mushroom Soup and Homemade Cream of Chicken Soup if you prefer homemade. Use whatever flavor you like.
- egg noodles

How To Make Ground Beef Stroganoff
Bring a pot of water to boil and begin to cook egg noodles according to package directions. In a large skillet over medium high heat, brown ground beef along with the onions and garlic until thoroughly cooked. I like to leave chunks of ground beef and not break it up too small. Drain ground beef to remove excess grease from pan. Put pan back on stove over medium heat (don’t add the ground beef back in yet.) Add butter to pan and let it melt.

Then add flour to pan, whisk and let it absorb butter. Now add beef broth and whisk vigorously to remove any lumps, turning the heat up to high, bringing it to a boil for 2-3 minutes until you see it thicken slightly.

Bring temperature down to medium and whisk in sour cream and cream of mushroom soup. Stir until mixture is thoroughly incorporated. Add salt and pepper. Keep tasting mixture until it is seasoned the way you like. I probably use a good teaspoon and half or more of salt and pepper. If it gets too thick on you, just add a tad more beef broth. Add ground beef back to mixture. Stir and then allow to simmer for about 5 minutes.

Serve over egg noodles.

Notes
- This can be served over rice or over toast or however you enjoy it!
- We like to serve this with a salad or steamed veggies and sometimes some buttered bread.
- This can be made with ground sausage, ground chicken or ground turkey. If making with ground chicken or turkey, you may want to use chicken broth instead of beef broth.

Outstanding flavor!! Even without onion and with low sodium broth. Thank you!!
This was great. I added a 1/2 green bell pepper with the oinions and garlic black pepper seasons, Worcestershire and curry.. I didn’t have beef broth so I put beef bouillon in the noodle water and use that as the broth and 1/2 cup sour cream. Then licked my plate afterwards…
Whoa. I’ve made stroganoff several times before but this is just fabulous. Since I tried to make it slightly healthier I used Greek yogurt in place of the sour cream and low fat cream of mushroom. I tried it after making it and it was delicious!! But then I read the comments and added a bit of Worcestershire and dill and cayenne and OMG the angels sang! LOL. This will be a keeper for sure!!
Woo hoo!! Love it! Thanks so much for a fantastic comment. Made my day!
Great recipe, tried it , loved it! Being on a limited budget ( social security) as well as living in country surroundings, I’ve also tried this recipe substituting raccoon belly for the beef.. no I prefer the beef, raccoon is good although since it is a fatty or meat, I eliminate the addition of butter called for in the recipe. thanks so much it was great
GREAT easy weekday meal everyone loves!
Very yummy recipe!! Made it for my husband and I tonight, and I’ll definitely be making it again. Next time, I’ll make sure to add mushroom to it (I forgot this time) but other than that, I wouldn’t change a thing. I did, however, add Worcestershire sauce as some reviews recommended, but all in all a fantastic dinner over homemade mashed potatoes 🙂
Made the beef stroganoff, I did use ground turkey meat, since I had no beef at home. Turned out delicious! My husband enjoyed it very much. We are having the leftovers tonight. Sooo Good! I am a new member of your recipe listings!
Perfect as is!
Made this. I wouldn’t change a thing. It was heavenly! The best recipe I have ever found!! Thank you!!
This was so good. My whole family gobbled it up. No leftovers!! Highly recommend!!
This is a wonderful recipe! I must say though that living in the South I’ve tried various versions, so taking what I liked about them I added dill weed and cayenne pepper to taste. I’d suggest if you try this start with 1/8 tsp at a time with dill weed until you’re happy then the same with cayenne pepper if you like it spicy. Very Yummy!!
My mother and I make this recipe all the time, almost down to a ‘T’, but we don’t make a rue (if that’s the wrong way of spelling it I’m sorry) we just add the beef broth straight in with the cream of mushroom soup and we don’t add as much. We also add mushrooms and dried onion flakes. Tastes just as delicious!
Tried this recipe it is good except way too much salt I will try again and leave off salt, there is plenty of salt in the soup and broth!
This is a great recipe, very easy, and so good
This recipe is delicious. The sauce is very easy to make but I only used one can of cream of mushroom soup.
I am not a fan of mushrooms, what could i substitute for cream of mushroom soup?
What size bag of noodles do you use ?
This was delicious! I threw all the ingredients in the crockpot and turned it on high for 4 hours to make my life a little easier. Added some cornstarch because it was still a little thin for my taste after the flour. Would highly recommend.
Even the egg noodles? Did you cook the beef first or throw it in raw?
Made the recipe as published with two exceptions. First, I added 8 oz of sliced baby portobello mushrooms and, second, I used cream of celery soup instead of cream of mushroom soup.
Turned out awesome!
I’m a HUGE fan of ground beef recipes, and I’ve been making ground beef stroganoff for well over 50 years now. The only thing(s) I do “differently” is that I use cream of onion soup now (don’t like cream of mushroom), and I use baby Portabella mushrooms. I like ‘shrooms, just not the creamed soup. Even my very fussy 66 year old brother-in-law will eat stroganoff this way, and he’s mighty hard to please (but a super guy, nonetheless, and I do love him very much!)
Not only is it budget friendly; it was delicious! The only changes I made were I added mushrooms and worcheshire sauce. I think the worcheshire sauce gives a little depth of flavor. Just my opinion. Thanks for a great recipe! Will definitely be making again.
This was amazing! I made this last night for my mom, dad, and my fiance (when he came to visit). Oh my gosh! I swear it’s even better leftover (since I ate it for lunch today and it was still delicious). I served it with egg noodles, green peas, and rolls. Probably the best meal I’ve had all week! I haven’t found a recipe from this site that wasn’t out of this world good.
This was delicious! I was looking for something to make with standard ingredients and this won. I used cream of mushroom with roasted garlic. Very tasty.
Hi Bethany! Good call on the roasted garlic cream of mushroom!! Thank you!
I like to add a few dashes of Worcestershire (to taste) to the sauce. It gives it a nice little kick. Otherwise, this recipe sounds spot on to me. Just like the one I ate as a kid.

Can i make this in my crock pot?
Hi Tami! I’m sorry, I haven’t tried that yet so I can’t say for certain.
CROCK POT INSTRUCTIONS:
Double the recipe and brown the meat, onions and mushrooms, etc. Put everything but noodles and sour cream in Crock Pot and Mix well. Set to LOW for 4-6 hours. Add sour cream and a bit of Worcestershire, but DO NOT boil. Cook noodles and serve!
Much more economical than using steak, thanks for the recipe. I did add some Worcestershire sauce to taste.
This is a staple in our house, always in menu rotation! There are NEVER leftovers!! Thank you!
Thank you SO very much Traci!! Loved reading your comment! 🙂
Bravo! One of the best family meals I’ve ever made with an on-line recipe. It’s exceptional,… none left over to stowe in the fridge,
I used Chicken stock and turkey.. I’m going to say this is not a good idea. I will try this recipe over with the right stuff soon. My kids liked it though.
My husband and I have been using this recipe since 2013. It is one of his all time favorites (and that means a lot because he is PICKY). I opened the page today and almost thought I was in the wrong place because I didn’t recognize the pictures! Just wanted to stop by and say the updated pictures are beautiful and thanks again for such a classic and easy recipe :).
Made this tonight and I must say it was really really good
It is my home to recipe! All of the kids love it!
I made this tonight and it was great! I found you on Pinterest
2nd recipe I have tried of yours. YUMMY! Added a little wine. Perfect!
I grew up with this recipe. There was
10 people in our family and this was a good way to stretch a penny. Delicious! Thanks !
Love this recipe but surprised you do not add a small amount of Worchestershire sauce if you are calling it stroganoff. I've made this recipe as is but add 1 can of drained yellow wax beans and serve over mashed potatoes. No fancy name, just called it creamed hamburger.
This is the 4th recipe I've made off your site and I have yet to be disappointed! Was very yummy! I added 1/8 tsp paprika and a sprinkle of parsley. Thanks for sharing!
I got home late for dinner tonight && everyone had already eaten. We had some ground beef already defrosted && came upon this recipe on pintrest. It was quick, easy && I know my house will indulge in leftovers tomorrow! Absolutely delicious. (I too am not a mushroom fan so left those out but the cream of mushroom soup was perfect!)
My mom's stroganoff NEVER tasted like this! This was wonderful! Perfect as written, no changes necessary! Thank-you!
I am a lover of ground beef stroganoff . Researched several recipes and yours' was the most appealing. Directions were easy and simple to follow. Felt like I was cooking beside you. The end product was AMAZING!! Looking forward to viewing more of your recipes.
My mom's old Betty Crocker cookbook has a similar recipe. I add about 1/4 cup of sherry. Yummy!
Thank you:) hubby and I enjoyed it
I made this meal today for my family. They love it. I will be making it again!!!!
I'm going to make this for my in-laws tonight!! Sounds delish! Maybe I'll make some biscuits to go with it!!!
Thanks for the idea!!
I have made this for over 30 years…. brown hamburger – onions etc. – add one can of mushroom soup and a can of beefy mushroom soup and a can of boiling water. Add 1 cup of sour cream – (all this is done in one skillet) add salt pepper. Once stirred – add 2T of kitchen bouquet (to darken the stroganoff) While browning hamburger and onions – cook dumpling style egg noodles. For something different you can add mexican corn to the mix!
I have made this many times over the years, and my recipe was very similar (I guess great minds really do think alike?!) I love it, and the more mushrooms, the better! No one else here, though, likes mushrooms, they say, so I chop them really finely and they never know they're eating them. Sometimes I use strips of beef, but this is usually one of my low-cost meals, and I usually have all the ingredients on hand. This is a great quick and easy, low cost dinner. Thanks for making it more mainstream!
Just made this recipe tonight for myself and a friend. My friend has NEVER liked beef stroganoff, but this recipe surprised them. They LOVED it! Thanks for sharing the recipe, it was really great!
I made this tonight and it turned out very, very well — my wife and I loved it. I was surprised how quick and simple it was, too!
Thanks so much for sharing!
Hmm, well for some reason it said posted anonymously. I'm not anonymous (hehe). Thanks again.
This was AMAZING. Used cream of mushroom soup with garlic. Yum, yum, yum.
