With just a handful of easy to find ingredients, you can have these beautiful and delicious Almond Green Beans on your table in no time!

GREEN BEANS ALMONDINE

These Almond Green Beans also known as Green Bean Almandine or Green Bean Almondine (depending on where you live, the word “Almondine” is spelled a little different) are a super easy and tasty side dish. When I say that they are easy, I really mean it and they taste so light and fresh. Definitely a wonderful accompaniment to heavy or rich foods. They look a bit fancy and impressive but they are ridiculously simple to prepare. With hints of almond and lemon, they really make a delicious combination that will totally impress your guests. So if you are looking for that special (but simple!) side dish, you need to make my Almond Green Bean recipe!

FREQUENTLY ASKED QUESTIONS:

Do I have to snap off the ends of my green beans?

For this recipe you do not. The whole bean is typically used. If you would rather snap off the ends you can absolutely do that but I think the presentation of the dish is better if you leave them whole.

What kind of almonds are best for this recipe.

Sliced almonds are best. You can purchase them already sliced, usually in the baking section of your grocery store. Do not use whole almonds for this. You could also use slivered almonds if you prefer but it will provide more of a crunch and tend to settle to the bottom of the dish as they are a bit heavier than sliced.

Why toast almonds?

Toasting almonds helps in a couple of ways. It will make them slightly more crunchy and the toasting really brings out that nutty flavor. It adds a wonderful depth of flavor to the dish.

Why do I need to blanch my green beans?

This helps stop the cooking process so your beans will still stay slightly crisp but tender and they will not continue cooking. It also keeps them a bright green color.

How do I store leftovers?

You can store your Almond Green Beans in an airtight container in the refrigerator for up to 2 days. Reheat in the microwave until heated through. I do not recommend freezing.

INGREDIENTS NEEDED: (FULL RECIPE AT THE BOTTOM OF THE POST)

  • green beans
  • sliced almonds
  • butter
  • lemon juice
  • salt
  • pepper

HOW TO MAKE ALMOND GREEN BEANS:

Heat a large skillet on medium-low heat and add the sliced almonds. Toast the almonds for 2-3 minutes or until just beginning to brown. Do not walk away! Once the almonds are toasted, pour them into a small bowl and set aside. Set the skillet aside, as you will use it again shortly.

Bring a large pot of salted water to a boil. Add the green beans and cook for 5 minutes.

After 5 minutes, drain the beans and blanch them in a bowl of cool (not iced) water. Drain them again and set them aside in a bowl.

Return the skillet to the stovetop and melt the butter over medium-high heat. 

Add the beans to the skillet and cook for 3-4 minutes. Add the lemon juice and sliced almonds (reserving some for using as garnish). Cook for an additional minute or until the beans are tender. Do not overcook.

Remove the skillet from the heat. Serve the beans warm and garnish with salt, pepper, and additional sliced almonds.

Notes

  • You do not have to trim your green beans for this recipe.
  • Make sure to use sliced almonds.
  • Do not forget to blanch your beans so they stop cooking.
