Air Fryer Southwestern Egg Rolls are a delicious, easy way to make a satisfying appetizer, snack, or meal. In under 30 minutes, you can make Southwestern Egg Rolls with your favorite ingredients – chicken, beans, corn, cheese, spices and more. What are Southwestern Egg Rolls made of?

As you can see in our recipe, we use chicken, corn, red bell pepper, green onion, black beans, spinach, shredded Mexican blend cheese, spices, and egg roll wrappers.

How do I get crispy egg rolls?

Don’t skip out on spraying the egg rolls with the non stick oil spray. It helps crisp them up.

Do I have to use chicken breast?

I used cooked boneless, skinless chicken breast, but you can use chicken thighs or even rotisserie chicken to make these egg rolls even easier. Also, if you want, you can cook the chicken breasts in the air fryer as well using this recipe here.

What size Air Fryer should I use?

This recipe was tested with a 5-quart basket Air Fryer since this is the most popular and common type of Air Fryer that people own. I have not tested it in any other type of Air Fryer so use your best judgment and knowledge of your own Air Fryer when making these. 

What if I don’t have an air fryer?

You can fry these in oil. I have a recipe for Cheeseburger Egg Rolls that are fried in oil and you can use those same directions. I also have instructions on that post on how to bake them in the oven.

How to store leftovers?

Wrap leftovers well with plastic wrap and then aluminum foil and they should last for 3-4 days in the fridge.  

Can I freeze these?

You can freeze extra egg rolls by wrapping in plastic, then foil, and placing in a freezer safe bag for up to 2-3 months. Let them thaw in the refrigerator overnight before reheating in the Air Fryer to get crispy again.

  • cooked boneless skinless chicken breasts
  • corn
  • red bell pepper
  • green onion

  • shredded Mexican blend cheese
  • chili powder
  • garlic powder
  • salt
  • ground cumin
  • paprika
  • onion powder

HOW TO MAKE AIR FRYER SOUTHWESTERN EGG ROLLS

Spray a 5-quart air fryer basket with olive oil non-stick cooking spray. Set aside. Place chicken, corn, red bell pepper, sliced green onions, black beans, chopped spinach, Mexican blend cheese into a large bowl.

Stir together well. Set aside.

In a small bowl, whisk together the spices: (chili powder, garlic powder, salt, cumin, paprika and onion powder)

Sprinkle this spice mixture over the chicken mixture and stir well to combine. Set aside.

Pour some water in a small bowl (this is going to help seal the egg roll wrappers as you roll them.) Place an egg roll wrapper on a cutting board or other clean surface.  Lay it out like a diamond shape with one of the pointed ends pointing towards you.  Use a ⅓ measuring cup to place some filling across the middle of the egg roll wrapper.

Tuck the bottom corner (the one pointing towards you) over and slightly under the filling.

Fold each of the side points over the middle.

Brush water (using a pastry brush or your fingers) over the remaining top part of the wrapper. Fold the wrapper up tight to seal the egg roll.

Spray the top and sides of each egg roll with nonstick olive oil spray.

Place the egg rolls into the air fryer with the sealed side facing down. Do not overcrowd the basket. You need to leave at least ½ inch to an inch of space around each egg roll. Cook in batches if necessary.

Then spray the upward facing side of the egg rolls with non-stick spray (now all surfaces should be sprayed).  

Bake at 375F for 5 minutes, flip them over and bake for another 5 minutes. (air fryer does not need to be preheated)

Serve with your favorite store bought sauce or make my avocado ranch dipping sauce (in this recipe) or my cilantro lime sauce (in this recipe)

Ingredients

  • nonstick olive oil cooking spray
  • 1 pound cooked boneless, skinless chicken breasts, cut into small chunks
  • cup corn (frozen or fresh)
  • cup finely red bell pepper
  • ¼ cup sliced green onion
  • 1 cup black beans, drained and rinsed
  • 1 cup fresh spinach, coarsely chopped
  • 2 cups shredded Mexican blend cheese
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon ground cumin
  • ¼ teaspoon paprika
  • ¼ teaspoon onion powder
  • 1 package egg roll wrappers

Instructions

  • Spray a 5-quart air fryer basket with nonstick olive oil cooking spray. Set aside.
  • Place 1 pound cooked boneless, skinless chicken breasts, cut into small chunks, 1/3 cup corn, 1/3 cup finely red bell pepper, 1/4 cup sliced green onion, 1 cup black beans, drained and rinsed, 1 cup fresh spinach, coarsely chopped and 2 cups shredded Mexican blend cheese into a large bowl. Notes

  • Olive oil non-stick spray is best for air fryers as they don’t gunk up the basket like other nonstick sprays.
  • Storebought rotisserie chicken can be used for easier and faster preparation.
  • You can make the chicken breasts in the air Freyr as well with this recipe. 
  • This recipe was tested with a 5-quart basket air fryer since this is the most popular and common type of air fryer people own. I have not tested it in any other type of air fryer so use your best judgment and knowledge of your own air fryer when making these. 
  • It’s important to spray the egg rolls well with the non-stick olive oil spray so that they will crisp up in the air fryer. 
  • Store these covered in the fridge and they’ll last 3-4 days. Or you can freeze them for 2-3 months.
  • If you want to make your own dipping sauce, you can make a cilantro lime sauce or an avocado ranch sauce

    These are awesome! I’ve already shared your recipe with others. We’ve even frozen and then reheated the leftovers…still awesome!
    The sauce that I make to go with them is: 1/4 c chopped scallions, 1/4 c chopped cilantro, 3 tbsp mayo, 3 tbsp sour cream, 1 tsp lime zest, 1 1/2 tsp lime juice, 1/4 tsp salt, and 1 chopped garlic clove.
