I grew up as a Navy brat (that's what they call us military kids).
My Dad was deployed pretty frequently. That left my Mom, who also worked outside the home, taking care of us kids by herself, fixing all the house disasters that always seemed to happen the minute Dad left and doing her best to get meals on the table.
This was one of those meals.
And let me tell ya, it is still a favorite of mine to this day.

This is great to double to feed a larger crowd. Have a taco salad bar!
Cook’s Note: Some other toppings include: salsa, pinto beans, olives or jalapenos.

I love, love, LOVE Doritos in Taco Salad....I think it just gives it a zip you can't get from plain tortilla chips. I haven't had Taco Salad in forever....I must put it on my menu soon!
ReplyDeleteI agree Sigs! We have always eaten it with Doritos - in fact this is what we had for dinner last night...hee hee.
ReplyDeleteLove Taco salads! It is such a great leftover meal to have when you have tacos too! I love to bring taco salad in for lunch at work the day after I have made tacos. Thanks for sharing this!
ReplyDeleteI absolutely love taco salad, and love the way you made it. Catalina dressing is an old all time favorite of mine, that I have a great chicken recipe for, but taco salad? ...yummm!
ReplyDeleteIt's a healthy meal, by itself.
Thanks for sharing, following your blog, I invite you to visit mine, have a giveaway too!
I'm a HUGE fan of Taco salads. I usually avoid them because they are so high fat, but sometimes they are totally worth it!
ReplyDeleteI love Taco salad too..yours have wonderful combo of flavors..I love it, and it looks awesome!
ReplyDeleteYum! I love taco salad... yours looks amazing!
ReplyDeleteOh yummy! My mom makes something close to this that is a taco dip but it also calls for french dressing. I will have to give this a try!
ReplyDeleteThat looks beautiful! I love how taco salads are so versatile and you can put anything you love on there. Good job!
ReplyDeleteYum! This looks tasty and easy to put together! I'll have to keep this in mind for this semester when I've spent 3-4 hours with a cadaver in anatomy lab and I'm exhausted! ;)
ReplyDeleteHaley - way to gross me out - thanks...LOL.
ReplyDeletenever had a taco salad like this! it looks amazing!
ReplyDeleteSorry, I didn't mean too! Please forgive me :) I was just trying to emphasize that after a crazy day like that, I'm gonna need something yummy like that to help have a good rest of the day!
ReplyDeleteThis looks great, I could dive right in. I kind of stumbled on your site and I love it! Great recipes:)
ReplyDeleteLove the simplicity of this yummy meal. And using Doritos wouldn't occur to me, but I bet it's great!
ReplyDeleteAmong all the mexican food i have tried, taco salad is still my favorite. There is something about this crunchy, spicy cheesy combination that i just can't get enough of. Your taco salad looks wonderful!
ReplyDeleteYou had me at taco salad!
ReplyDeleteI haven't had taco in so long. I'll have to resurrect it, with chicken or ground turkey! Thanks for sharing!
ReplyDeleteThat looks like it will be perfect for dinner this week!!!
ReplyDeleteI love taco salads!! This is one of those meals that I could eat nearly every single night!!
ReplyDeleteI haven't made a taco salad since my kids left for college! They used to love taco salads. Thanks for the happy memories. I'll have them over for dinner and make this again for old times sake!
ReplyDeleteKristi
I adore taco salads. I love any of that stuff. And I think kids do because it's messy and allows them to be messy too! Thanks for this great recipe.
ReplyDeleteI have made something like this but we would use fritos and packaged ranch dressing and prepare that to directions and no beans. Always easy and tasty meal. I love it
ReplyDeleteOh my good lord. I love love love Taco salad!!
ReplyDeleteI like this and when I was a girl my Mom used to make something similar. I remember it was very tasty.
ReplyDeleteHow bizare is this? A co-worker of mine gave me this recipe about 15 years ago...and it's almost exactly the same. Only difference is that mine uses cabbage instead of lettuce and tortilla chips instead of the doritos. Try the cabbage sometime, it really gives a crunch to the salad and lets you keep left overs (without the dressing) for a couple of days without wilting!
ReplyDeleteThis is always a crowd pleaser. I haven't had it for a while, so thanks for reminding me about it.
ReplyDelete:)
ButterYum
We love doritos with taco salad recipes come see what I shared at http://shopannies.blogspot.com
ReplyDeleteI love Taco Salad too! We always made ours with Fritos...
ReplyDeleteJamieS@ Scattered Thoughts of a Crafty Mom
This is how we make taco salad too, but with grnd turkey. cassoncorner@blogspot.com
ReplyDeleteLove, lovr, love taco salad. For anyone who is not stoo crazy about french dressing, try thousand island dressing, regular or lo calorie..yummy!
ReplyDeleteWe love taco salad only instead of Doritos, it has to be Fritos. We always use the Catalina dressing too!
ReplyDeleteI like how taco salad can be made to fit what you have to add to the basic salad.
We make something similar to this pretty often. I add 1 can of Bush's Chili Magic beans to my cooked meat and we have it over Fritos sometimes, sometimes tortilla chips - with whatever toppings people like. Haven't ever tried with Catalina dressing before - I'll have to try that.
ReplyDeleteAwesome - just found your site and have bookmarked a bunch of recipes! I was a navy brat too, and we also made the same recipe - but with thousand island dressing - and it was tossed together. Looks dreadful but oh so yummy!
ReplyDeleteI grew up having pretty much this same dish minus the Catalina and the kidney beans replaced with chili beans. We just called this tacos. It was an easier, somewhat cheaper version of tacos to serve to a family of 5. So much easier than stuffing taco shells. The beans also helped to make the meat go further. I still make this today, except I sometimes add a cheese sauce on top.
